8 slices bacon
6 ounces cream cheese, softened
4 green onions, chopped
¼ cup chopped red bell pepper
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon pepper
4 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a small baking dish.
  • Place the bacon in a large, deep skillet. Cook over medium-high heat until the grease has mostly rendered, but the bacon is still very soft, about 3 minutes. Remove, and pat dry with paper towels; set aside.
  • Stir together the cream cheese, green onions, bell pepper, garlic powder, salt, and pepper in a bowl until combined. Divide this mixture onto each chicken breast. Fold the breasts in half, and wrap with 2 slices of bacon. Secure with toothpicks as needed. Place into the prepared baking dish.
  • Bake in the preheated oven until the chicken is no longer pink in the thickest part, 30 to 35 minutes. Remove the toothpicks before serving.

2 teaspoons smoked paprika
½ teaspoon garlic powder
½ teaspoon black pepper
½ teaspoon salt
¼ teaspoon onion powder
4 (4 ounce) skinless, boneless chicken breast halves
1 (16 ounce) package bacon
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix brown sugar, paprika, garlic powder, pepper, salt, and onion powder together in a small bowl. Rub 1/2 of the spice mix over chicken breasts.
  • Wrap each breast with 2 to 4 slices of bacon, depending on size. Place in a baking dish and sprinkle remaining spice mix over top.

2 chicken breast fillets
1 (4 ounce) ball water-packed fresh mozzarella cheese, drained and sliced
2 cloves garlic, cut in half, divided
4 slices bacon
1 red onion, cut into wedges
1 tablespoon olive oil, or as needed
1 teaspoon chopped fresh rosemary

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Make a pocket in each of the chicken breasts by slicing down one side, making sure to not slice all the way through. Stuff each pocket with mozzarella cheese and a 1/4 the minced garlic. Wrap 2 slices of bacon around each stuffed breast and secure in place with toothpicks. The pocket opening should be completely covered.
  • Combine onion and remaining garlic in a shallow baking dish and drizzle with olive oil. Place stuffed chicken breasts on top and sprinkle with rosemary.

0.5 cups gorgonzola cheese
0.333333333333 cups walnuts
1 tablespoons stuffing
1 tablespoons sage
1 units pepper
7 units chicken breasts
1 units salt
4 slices bacon
1 tablespoons vegetable oil

Steps:

  • Position a rack in the top third of the oven and preheat the oven to 350°F. Mash the Gorgonzola, walnuts, stuffing mix and sage in a small bowl until combined. Season with pepper. Mold the cheese mixture into 4 finger-shaped logs.
  • Using a sharp, thin-bladed knife, cut a deep pocket into the thickest side of each breast, being careful not to cut through to the top, bottom or other side of the breast. (If you do cut through, the hole can be patched by wrapping the bacon strip over it.) Season the chicken lightly with salt and pepper. One at a time, stuff each breast with a cheese log. With the smooth side of the breast facing up, wrap a bacon strip around each breast in a spiral, beginning at a point under the breast to hold the bacon in place while it cooks. If necessary, use a wooden toothpick to secure the bacon.
  • Heat the oil in a large nonstick skillet over medium-high heat. Place the chicken, smooth sides up, in the skillet. Cook until the undersides are browned, about 2 minutes. Turn carefully and brown the other sides. Turn right side up. Holding the breasts back with a large spatula, tilt the skillet to pour off a good amount of the bacon fat (don't worry about getting rid of it all). Loosely cover the skillet with foil. Cook until the chicken feels firm when pressed in the center, about 20 minutes. Discard the foil.
  • Position the broiler rack about 6 inches from the heat source and preheat the broiler. Place the skillet under the broiler and broil until the bacon crisps, about 2 minutes. Serve immediately.

1/3 cup walnuts, toasted and finely chopped
1 tablespoon plain breadcrumbs
1 tablespoon fresh sage, chopped

  • Place oven rack 6 inches from the top of the oven and preheat oven to 350.
  • Mash together gorgonzola, walnuts, breadcrumbs and sage.

4 cups of cold drinking water
1/4 cup kosher salt
1/4 cup brown sugar
4 -6 chicken breasts (boneless and skinless)
toothpick
regular cut bacon (3 slices per breast)
ribs or chicken, rub
barbecue sauce

Steps:

  • Brine:.
  • Pour the water into a pitcher then add the salt.
  • Stir until the salt is dissolved and the water returns to clear. Add the brown sugar and stir until dissolved.
  • Pour the brine over the chicken breasts until covered, cover with lid or plastic wrap and place the bowl in the fridge to keep cold.
  • Soak the 6 chicken breasts in a deep glass container for 2 hours flipping them over at the halfway mark to make sure they were evenly submerged.
  • Preparing the Chicken Breasts:.
  • After rinsing the breasts to make sure there was no extra salt on the outside of the meat, Lay the breast down in the brining bowl and cover them with rub.
  • Lay 3 strips of bacon butted up against each other on a cutting board or flat surface. Lay one of the breasts across the bacon leaving enough bacon on the left side to wrap it over just a little.
  • Roll the breast over a couple of times to completely wrap it in the bacon and use toothpicks to hold the bacon in place.
  • Smoking the Chicken Breasts:.
  • Setup the smoker for about 230 degrees for best results, and add dry and soaked wood chips.
  • Once the smoker is ready, go get the chicken breasts and place them directly on the grate leaving about 1 inch of space between them to allow the smoke to completely surround them.
  • Estimate about 3 hours of cook time but that will depend on the thickness of the chicken breasts that you purchased.
  • About 30 minutes before they are finished, brush a light coating of barbecue sauce all over the top of them.
  • There done when a safe internal temperature of 165 degrees is reached.
