2 packages (17 ounces each) Hawaiian sweet rolls
4 cups shredded cheddar cheese, divided
2 pounds ground beef
1 cup chopped onion
1 can (14-1/2 ounces) diced tomatoes with garlic and onion, drained
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
3/4 teaspoon salt
3/4 teaspoon pepper
24 bacon strips, cooked and crumbled
GLAZE:
1 cup butter, cubed
1/4 cup packed brown sugar
4 teaspoons Worcestershire sauce
2 tablespoons Dijon mustard
2 tablespoons sesame seeds

Steps:

  • Preheat oven to 350°. Without separating rolls, cut each package of rolls horizontally in half; arrange bottom halves in 2 greased 13x9-in. baking pans. Sprinkle each pan of rolls with 1 cup cheese. Bake until cheese is melted, 3-5 minutes., In a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, breaking beef into crumbles, 6-8 minutes; drain. Stir in tomatoes, mustard, Worcestershire sauce, salt and pepper. Cook and stir until combined, 1-2 minutes., Spoon beef mixture evenly over rolls; sprinkle with remaining cheese. Top with bacon. Replace tops. For glaze, in a microwave-safe bowl, combine butter, brown sugar, Worcestershire sauce and mustard. Microwave, covered, on high until butter is melted, stirring occasionally. Pour over rolls; sprinkle with sesame seeds. Bake, uncovered, until golden brown and heated through, 20-25 minutes. Freeze option: Cover and freeze unbaked sandwiches; prepare and freeze glaze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Pour glaze over buns and sprinkle with sesame seeds. Bake sandwiches as directed, increasing time by 10-15 minutes, until cheese is melted and a thermometer inserted in center reads 165°.

1 package (8 ounces) Velveeta, cubed

1/3 cup ranch dressing
4 slices cooked bacon, chopped
2 cans (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)
16 dill pickle slices (chips)
4 slices American cheese, cut in half
2 teaspoons sesame seed

Steps:

  • Heat oven to 375°F (350°F for dark or nonstick cookie sheet). In small bowl, mix cooked beef, ranch dressing and bacon.
  • Unroll both cans of dough; separate into 8 rectangles. On ungreased large cookie sheet, arrange rectangles in ring so short sides of rectangles form a 5-inch circle in center. Dough will overlap.
  • Spoon beef mixture on the half of each rectangle closest to center of ring; top each with 2 pickle slices and 1 piece of cheese.
  • Bring each dough rectangle up over filling, tucking dough under bottom layer of dough to secure it. Repeat around ring until entire filling is enclosed (some filling might show a little).
  • Gently separate dough perforations on top until filling peeks through. Brush dough lightly with water; sprinkle with sesame seed. Bake 20 to 25 minutes or until dough is golden brown and thoroughly baked. Cool 5 to 10 minutes before cutting into serving slices.

1/2 cup unsalted butter, at room temperature
1/2 teaspoon kosher salt
1 cup water
1 cup all-purpose flour
4 large eggs, at room temperature, plus 1 more egg
1/2 to 1 cup shredded Gruyere
2 tablespoons white sesame seeds
8 ounces cream cheese, at room temperature
One 6-ounce block processed American cheese, such as Velveeta, cubed and at room temperature
1/2 teaspoon paprika
1/2 teaspoon kosher salt
1/4 teaspoon ground white pepper
1/2 to 1 tablespoon heavy cream
1 pound 80/20 ground beef
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter
1 small yellow onion, thinly sliced
4 tablespoons ketchup
3 tablespoons mayonnaise
2 tablespoons sweet relish
Bacon strips, cooked, for serving, optional
1 head little gem lettuce, for serving
6 cornichons, halved, for serving

Steps:

  • For the puffs: Preheat the oven to 400 degrees F. Line an 18-by-13-inch rimmed baking sheet with parchment paper.
  • In a medium saucepan, bring the butter, salt and 1 cup water to a boil over medium-high heat. Decrease the heat to low. Add the flour and stir constantly until a sticky ball of dough forms, about 4 minutes.
  • Transfer the mixture to the bowl of a stand mixer fitted with the paddle attachment and mix on medium-low speed until there is no longer any steam. Decrease the mixer speed to low and add 3 of the eggs, one at a time, mixing after each addition. The dough will be done once it clings to the paddle in "spokes" as it spins in the bowl. You may need to add another egg to get this consistency. Add the Gruyere and mix to combine.
  • Dab a small amount of the dough under the parchment paper at the four corners and in the center of the prepared baking sheet to keep the parchment paper in place. Using a 3-ounce ice cream scoop, scoop out the dough onto the parchment, 2 inches apart. You will end up with 12 scoops. In a small bowl, whisk the remaining egg with a splash of water and a pinch of salt. Brush each cream puff with the egg wash and sprinkle with the sesame seeds. Bake for 20 minutes, then rotate the baking sheet 180 degrees. Lower the oven temperature to 375 degrees F and bake until deep golden brown, about 20 minutes. Transfer the cream puffs to a wire rack and allow to cool to room temperature.
  • For the cheese mousse: Meanwhile, add the cream cheese to a bowl, and using a hand mixer, beat until soft, about 1 minute. Add the processed cheese, paprika, salt and white pepper and beat until fluffy and smooth. Mix in the heavy cream as needed until the mixture is velvety and smooth but not too loose. Transfer to a piping bag with a large star tip. Set aside.
  • For the burger patties: Transfer the ground beef to a cutting board. Cut into 12 squares, then roll each square into a ball. Place onto a piece of wax paper. Fold the wax paper over, leaving room for the meat to spread out. Using a rolling pin, roll the patties until paper thin. Season with salt and black pepper.
  • Heat a large nonstick skillet over medium-high heat. Add the butter and, once melted, cook the patties for 4 minutes on the first side. Flip and continue to cook for another minute or two. Remove to a plate. Add the onions to the same skillet and cook over medium heat, stirring occasionally, until golden brown and translucent, 15 to 20 minutes. Remove from the heat.
  • To assemble: In a small bowl, mix the ketchup, mayo and sweet relish together. Set aside. Slice the puffs in half. Spread the special sauce on the bottom half of each puff, then top with a patty, onions, bacon if using and lettuce. Before topping each burger with the top "bun," pipe some of the cheese mousse into it first. Top each burger cream puff with a halved cornichon secured with a toothpick.

This is not gourmet but it is easy to throw together quickly, especially if you speed the cooling time but putting the ground beef in the fridge or prepping it the night before, and it is a very forgiving recipe with omissions and substitutions and it is simple and pleasing so I love it for a quick dinner or as an appetizer! Use pizza dough, Italian sausage and mozarella cheese and omit the bacon for another variation. I dip the cheeseburger rolls into bacon ranch dressing (serve with mustard and mayo) and the Italian sausage rolls into homemade marinara sauce. For a party appetizer, slice more thinly! Enjoy! Prep time does not include cooling time.

  • Preheat oven to 400°F Line a jellyroll pan with parchment paper.
  • Place ground beef, bacon, and sweet onion in a large, deep skillet and saute until bacon has rendered its fat and onions are translucent. Break up chunks of ground beef as you are saute-ing,
  • Add red bell pepper and garlic to the ground beef. Cook an additional 2 minutes. Remove from heat and stir in oregano, basil, green onions, and ketchup. Add salt and pepper to taste. Let cool to room temperature.

  • Use the bottom piece of the plastic wrap to help you roll the puff pastry and filling lengthwise into a log. Use the egg white as glue to seal the roll. Gently press both ends closed. 1 1/2 c biscuit/baking mix
2 c shredded cheddar cheese
3 oz bacon pieces
6-7 Tbsp buttermilk

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. In a skillet, cook and crumble ground beef until no longer pink; drain. In a bowl, combine biscuit mix, bacon and cheese; stir in cooked beef. Add buttermilk and toss with a fork until just moistened. Shape into 1to 1-1/2 inch balls. Place 2 inches apart on an un-greased baking sheet.

4-1/2 to 5 cups all-purpose flour
FILLING:
1 pound sliced bacon, diced
2 pounds ground beef
1 small onion, chopped

1 pound process cheese (Velveeta), cubed
3 to 4 tablespoons butter, melted
Ketchup or barbecue sauce, optional

Steps:

  • In a large bowl, dissolve yeast in warm water. Add milk, sugar, shortening, eggs, salt and 3-1/2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels.
