2 cups biscuit/baking mix
2/3 cup 2% milk
1/4 cup canola oil
1 large egg
1 cup (4 ounces) finely shredded sharp cheddar cheese

Steps:

  • In a large bowl, combine the biscuit mix, milk, oil and egg just until moistened. Fold in cheese and bacon. Fill greased muffin cups three-fourths full. , Bake at 375° for 20 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack. Serve warm. Refrigerate leftovers.

1 tablespoon unsalted butter, plus more at room temperature for the muffin pan
4 slices thick-cut bacon, chopped
2 bunches scallions, sliced (about 1 1/2 cups)
1 large egg
1/2 cup low-sodium chicken broth
1/2 cup whole milk
1/4 cup extra-virgin olive oil
1/4 cup granulated sugar
1 teaspoon ground mustard powder or 1 tablespoon Dijon mustard
1 teaspoon kosher salt
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1 1/2 cups freshly grated Cheddar (if you can find a beer Cheddar, use that!)

Steps:

  • Preheat the oven to 350 degrees F. Generously grease a 12-cup muffin pan or a giant 6-cup muffin pan with butter.
  • Cook the bacon in a medium skillet over medium heat, stirring occasionally, until browned and crisp, about 10 minutes. Remove with a slotted spoon to a paper towel-lined plate.
  • Heat the 1 tablespoon butter in a large skillet over medium-high heat. Add the scallions and cook until slightly wilted, 2 to 3 minutes. Remove from heat and set aside.
  • Whisk the egg, broth, milk, olive oil, sugar, mustard and salt in a large bowl. Gently stir in the flour and baking powder until evenly combined.

150g (1 cup plus 3 Tbsp) all-purpose flour
115g (½ cup plus 1 Tbsp) granulated sugar
75g (½ cup) cornmeal
95g (¾ cup plus 2½ Tbsp) dried milk powder
12g (1 Tbsp) baking powder
5g (1 tsp) fine sea salt
2 eggs, whisked
90ml (¼ cup plus 2 Tbsp) canola oil
150ml (½ cup plus 2 Tbsp) water
60g (¾ cup) grated cheddar cheese, plus more for topping
1 jalapeño, seeded and diced (40g / ¼ cup)
5g (¼ bunch) chives, chopped

Steps:

  • Preheat the oven to 350°F.
  • Place the corn on a baking sheet and roast in the oven for 15 minutes, until the kernels have toasty brown spots. Set aside to cool.
  • Line a plate with paper towels.
  • Cook the bacon in a frying pan over medium heat, stirring occasionally, until the fat has been rendered and the edges are golden brown, 6 to 8 minutes. Using a slotted spoon, transfer the bacon to the paper towels to drain. Set aside.
  • Coat a muffin pan with cooking spray and set aside.
  • Put the flour, granulated sugar, cornmeal, milk powder, baking powder, and salt in a large bowl and mix to combine. Make a well in the center and add the eggs, oil, and water; mix until well incorporated.
  • Add the corn, cheese, jalapeño, and chives; mix gently just until incorporated.
  • Spoon a scant 75g (⅓ cup) of batter into each muffin cup. Sprinkle the tops with additional cheese and the bacon.

3 tbsp plus 2 tsp maple syrup
1 cup plus 2 tbsp buttermilk
1/2 cup diced cheddar (1" cubes) plus 1/4 cup grated
6 tbsp grated Parmesan, divided
11 slices cooked bacon, coarsely chopped
1 1/2 tbsp bacon fat, cooled
1/4 cup fresh chives and/or parsley, finely chopped
chopped rosemary, for garnish

Steps:

  • Preheat oven to 400° with rack near top. Line two 12-cup muffin pans with 15 liners, spacing them evenly between the 2 pans.
  • In the bowl of a stand mixer fitted with paddle attachment, cream butter, sugar, and salt for 1-2 minutes, until fluffy. Incorporate eggs slowly, 1 at a time, beating well after each addition. Add all-purpose flour, cornmeal, rye flour, and baking powder and mix until incorporated. Add canola oil, maple syrup, and buttermilk. Scrape mixer bowl well, making sure everything is incorporated. Add diced cheddar, 4 tbsp Parmesan, bacon, and chives. Mix just until dispersed, folding by hand to be sure.
  • Fill muffin cups to the very top.
  • Toss grated cheddar with remaining 2 tbsp Parmesan in a small bowl; sprinkle evenly over muffins. Bake for about 15 minutes, until nicely browned. Garnish with chopped rosemary.

Wrap in a damp paper towel and microwave until just cooked through, 4 to 5 minutes, turning the potato after 2 minutes. RED ONION, CHEDDAR AND BACON MUFFINS

I didn't have buttermilk so substituted half Greek yoghurt and half milk and it worked fine. They went very well with home made tomato soup.

100 g streaky bacon, cut into 1 cm pieces
1 red onion, finely diced
250 g wholemeal self-rising flour
2 teaspoons baking powder

80 g unsalted butter, melted and cooled
200 ml buttermilk
1 tablespoon finely chopped chives (optional)
150 g strong cheddar cheese, grated

  • Heat the oven to 200C/400F/gas mark 6 and line a muffin tin with 12 paper cases.
  • Warm the oil over a medium heat and fry the bacon in it until just crisp.
  • Lift the bacon from the pan with a slotted spoon and drain on kitchen paper.
  • In the same fat, saute the onion until just softened, about 5 minutes, then set aside to cool.
  • In a large bowl whisk together the flour, baking powder, bicarbonate of soda and salt.
  • In a jug whisk the eggs, butter and buttermilk.
  • Stir them into the flour mixture with a spatula until just combined then fold in the cooled bacon, onion, chives (if using) and two-thirds of the cheese until just evenly distributed.

6 bacon slices
2 cups self-rising white cornmeal mix (add 1 T baking powder and 1 t salt to regular flour)
1 tablespoon sugar
1 1/2 cups buttermilk
1 large egg
4 tablespoons butter, melted
1 cup (4 oz.) shredded sharp Cheddar cheese
Vegetable cooking spray

Steps:

  • Preheat oven to 425°. Cook bacon in a large skillet over medium-high heat 12 to 14 minutes or until crisp; remove bacon, and drain on paper towels. Crumble bacon. Heat a 12-cup muffin pan in oven 5 minutes. Combine cornmeal mix and sugar in a medium bowl; make a well in center of mixture. Stir together buttermilk and egg; add to cornmeal mixture, stirring just until dry ingredients are moistened. Stir in melted butter, cheese, and bacon. Remove pan from oven, and coat with cooking spray. Spoon batter into hot muffin pan, filling almost completely full. Bake at 425° for 15 to 20 minutes or until golden. Remove from pan to a wire rack, and let cool 10 minutes.

6 tbsp/85 g unsalted butter, cubed, at room temperature
2 tbsp sugar
1 1⁄2 tsp kosher salt
3 eggs
3⁄4 cup/100 g all-purpose flour
3⁄4 cup/120 g cornmeal
6 tbsp/40 g rye flour
11⁄2 tbsp baking powder
1⁄2 cup + 1 tbsp/135 ml canola oil
3 tbsp + 2 tsp/55 ml maple syrup
1 cup + 2 tbsp/175 ml buttermilk
1⁄2 cup/70 g diced Cheddar (cut into 1-in/2.5-cm cubes), plus 1⁄4 cup/30 g grated Cheddar
6 tbsp/40 g grated Parmesan
11 slices cooked bacon, coarsely chopped, plus 11⁄2 tbsp bacon fat, cooled
1⁄4 cup/10 g fresh chives, parsley, or a combo, finely chopped
Chopped rosemary for garnishing

Steps:

  • Position a rack near the top of your oven and preheat to 400°F/ 200°C. Line two 12-cup muffin pans with 15 paper liners, spacing them evenly between the two pans. In a stand mixer fitted with the paddle attachment, cream the butter, sugar, and salt for 1 to 2 minutes until nice and fluffy. Incorporatethe eggs slowly, one at a time, beating well after each addition. Add the all-purpose flour, cornmeal, rye flour, and baking powder and mix until incorporated. Add the canola oil, maple syrup, and buttermilk. Scrape the mixer bowl well, making sure everything is well incorporated. Add the diced Cheddar, 4 tbsp/25 g of the Parmesan, the bacon, and chives. Mix just until dispersed, folding by hand to be sure. Fill the muffin cups to the very top. In a small bowl toss the grated Cheddar with the remaining 2 tbsp Parmesan and sprinkle evenly over the muffins. Bake for about 15 minutes, until nicely browned but not overbaked inside. Garnish with chopped rosemary. These are best eaten within 24 hours.

1/2 cup cornmeal
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup sharp cheddar cheese, shredded
1 large egg, beaten
1 cup milk
3 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 400 degrees.
  • Line a dozen muffin cups with paper liners and set aside.
  • Cook bacon in large skillet or microwave until crisp.
  • Transfer to paper towels to drain; reserve 2 tablespoons bacon fat from pan.
  • Whisk together flour, cornmeal, baking powder, salt, and pepper in a large bowl. Then stir cheese into mixture.
  • In a small bowl, beat together egg and milk; stir into dry mixture.
  • Crumble bacon.
  • Add bacon, reserved bacon drippings and melted butter to batter.
  • Fold until blended.
  • Spoon batter into prepared muffin pan.
  • Bake about 20 minutes.
  • Let cool for 10 minutes before serving.

Steps:

  • Preheat oven to 425*. Line muffin pan with 10 liners
  • In a large skillet over medium heat, cook bacon until crisp. Remove to a paper towel. Reserve 2 T bacon fat.
  • In a medium bowl, whick together flour, baking powder, baking soda, sugar, salt, 1.5 c. cheddar cheese, green onione and cooked bacon
  • In a small bowl, combine buttermilk, egg and bacon fat. Stir into the dry ingredients until just combined.
  • Scoop batter into perpared muffin tins and sprinkle tops wit remaining 1/2 cup cheddar cheese
