I received this fried cabbage and noodles recipe from a friend of Hungarian descent. Some folks turn up their noses when it is presented, but after one taste, they always come back for seconds...and thirds! -Jeanie Castor, Decatur, Illinois

Steps:
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Lay bacon slices on a large baking tray.
- Broil in the preheated oven until crispy, 9 to 12 minutes. Transfer to a large plate lined with absorbent kitchen paper and allow to cool and harden.
- Crumble the cooled bacon into smaller pieces and combine with pesto sauce.
- Use a spiralizer or julienne peeler to cut zucchini into noodles, snipping midway to prevent them from getting too long.
- Heat olive oil in a saute pan over medium heat. Add zucchini and garlic and cook until tender, 3 to 4 minutes. Add pesto-bacon mixture and heat for 2 minutes longer. Toss well so the noodles are evenly coated. Taste and season with salt if needed.
- Top with freshly grated Parmiggiano-Reggiano cheese so it can melt while the dish is still warm. Season with freshly ground black pepper. Top with arugula, but do not mix it in. Serve immediately.

BACON AND EGG NOODLES
My grandma used to make this all the time. It was an easy meal and has only 3 ingredients. Of course grandma, made her own noodles. I use the thin soup noodles because they absorb so much of the flavor but feel free to use any noodles of choice. Thin spaghetti works well too.

Steps:
- 1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the egg noodles; return to a boil. Cook, uncovered, stirring occasionally, until the noodles are cooked through, but still firm to the bite, about 5 minutes. Drain; return to the pot and stir in the butter.
- 2. Meanwhile, place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- 3. Place the onion into the skillet with the bacon grease, and cook and stir over medium heat until the onion begins to soften, about 2 minutes. Stir in the cabbage, and cook and stir until wilted, about 5 minutes. Chop the bacon, add it to the skillet, and cook until the cabbage is tender, about 10 minutes. Stir in the noodles, and continue cooking just until heated through.
