British Grilled Cheese With Baked Beans image

2 plum tomatoes, cut into thick slices
Kosher salt and freshly ground pepper
2 thick slices white sandwich bread, toasted
1/2 cup prepared baked beans, warmed and drained
1 teaspoon Worcestershire sauce
1 1/2 cups grated sharp white cheddar cheese (about 6 ounces)
2 scallions, chopped

Steps:

  • Preheat the broiler. Place the tomatoes on a baking sheet, season with salt and pepper and broil until the edges brown slightly, 5 to 10 minutes. Transfer the tomatoes to a plate.
  • Place the toasted bread on the baking sheet and spoon the beans evenly on top. Cover with the tomatoes and drizzle with the Worcestershire sauce, then sprinkle with the cheese and scallions. Broil until golden and bubbly, about 3 minutes.

1/4 cup Dijon mustard
4 ounces old cheddar cheese
4 slices sweet onions
3 tablespoons butter, softened

Steps:

  • Spread 1 side of each slice of bread with mustard.
  • Using a cheese slicer, thinly slice cheese; arrange half on half of the bread slices.
  • Top with onion and remaining cheese.
  • Sandwich with remaining bread, mustard sidedown.
  • Spread butter over both sides of sandwich.
  • Place on greased grill over medium-low heat; close lid and grill, turning once, until golden and cheese is melted, about 10 minutes. Cut in half.

2 ounces sliced melting cheese (about 2 slices), such as American, Cheddar, muenster, Havarti, Swiss, fontina, Mozzarella, Monterey jack, pepper jack, provolone
2 slices bread, such as white, rye, brioche, sourdough, potato, whole wheat, pumpernickel
1 tablespoon fat, such as mayonnaise, butter or olive, chili or coconut oil

Steps:

  • Oven method (great for a crowd of six or fewer): Put a rimmed baking sheet on the middle rack of the oven and preheat to 450 degrees F. Make one sandwich per person: Sandwich 2 slices of cheese between 2 slices of bread. Spread or brush the outside of the sandwich with 1 tablespoon of fat. Place on the preheated baking sheet and cook until the cheese starts to melt, about 5 minutes. Flip the sandwich and bake until golden brown, an additional 5 minutes.
  • Panini press method (for crispy crunchy sandwich that needs minimal attention): Sandwich 2 slices of cheese between 2 slices of bread. Preheat a panini press to medium heat. Spread or brush the outside of the sandwich with 1 tablespoon of fat and place in the press. Close the top and cook until lightly browned and the cheese is melted, 5 to 6 minutes.
  • Skillet method (fool-proof and low-tech): Sandwich 2 slices of cheese between 2 slices of bread. Preheat a skillet over medium-low heat. 1 large onion, finely chopped
4 garlic cloves, minced
1 medium carrot, shredded

1 can (15 ounces) black beans, rinsed and drained

8 whole wheat hamburger buns, split
8 lettuce leaves
1/2 cup salsa

  • In a large nonstick skillet, heat oil over medium-high heat; saute onion 2 minutes. Add garlic; cook and stir 1 minute. Stir in carrot and spices; cook and stir until carrot is tender, 2-3 minutes. Remove from heat., In a large bowl, mash pinto and black beans using a potato masher. 3 cups cooked pinto beans (Frijoles De La Olla, recipe follows)
2 tablespoons olive or canola oil
1 garlic clove, minced
1/2 cup chopped onion
4 bolillos or other crusty oval-shaped roll, split in 1/2 lengthwise
1 1/2 cups shredded white cheese *see Cook's Note
Serving suggestion: Pico de Gallo salsa.
3 cups dried pinto beans
4 garlic cloves, peeled and mashed
1/4 large onion
2 bay leaves
Salt and freshly ground black pepper
Mexican crema or sour cream, chopped fresh cilantro leaves, finely chopped white onion, for serving

Steps:

  • Preheat a broiler.
  • Drain the beans in a colander set over a bowl. Save the bean liquid.
  • Heat the oil in a heavy skillet over medium heat. Add the garlic and onion and saute until the onion is soft, about 5 minutes. Add the drained beans. Using a potato masher, mash the beans until they become a spreadable mixture, adding extra bean liquid, if needed.
  • Put the rolls on a baking sheet and broil until lightly golden, about 3 minutes. Spread each half of the rolls with about 1/2 cup of the refried beans. Top with shredded cheese. Return to the oven and broil until the cheese is melted and starting to bubble. Transfer the rolls to a serving tray and serve.
  • Combine the beans, garlic, onion, and bay leaves in a medium pot. Add enough water to reach about 1 1/2 inches over the beans. Bring to a boil over medium-high heat. Reduce the heat, cover, and simmer until the beans are tender, about 2 hours. Add more water if the beans are absorbing too much liquid. The beans should be soupy when done, with plenty of liquid remaining. Season the beans with salt and pepper, to taste.
  • Ladle the beans and cooking liquid into soup bowls and garnish with Mexican crema, cilantro and chopped white onions. Alternatively, the beans can be drained and use as a filling for soft tacos.

1 loaf white bread or 1 loaf whole wheat bread, unsliced
unsalted butter, for spreading softened
1/2 cup mango chutney (store-bought or home made)
1 1/2 lbs old cheddar cheese, premium-quality

Steps:

  • Place empty baking sheet in oven and preheat to 450°F.
  • Slice bread into 3/4" slices.
  • Butter both sides of bread.
  • Spread half of slices with Mango Chutney.
  • Slice cheese 3/8" thick and place on other slices of bread.
  • Place chutney spread slices over slices with cheese.
  • Remove baking sheet from oven.
  • Place sandwiches on hot baking sheet.
  • Return to hot oven.

2 slices seeded rye bread
1 tablespoon sweet onion, finely minced
1 slice muenster cheese
1 slice deli ham
4 slices sharp cheddar cheese (from a 10-ounce bar, such as Cabot or Cracker Barrel)
1 slice American cheese
Dijon mustard, as needed
ketchup, as needed

Steps:

  • Heat a frying pan over medium-low heat.
  • Butter slices of bread.
  • Spread the opposite side of one slice of bread with the ketchup and mustard. Sprinkle with the onions. Then layer on the Muenster cheese, cheddar cheese, ham, and American cheese.
  • Lay the half-assembled sandwich into the pan, and then top with the second slice of of buttered bread.
  • Brown both sides of the sandwich, until cheese has melted.
