ASIAN PEAR MOJITO RECIPE
Asian Pear Mojito Recipe - made with crunchy Asian pears and honey simple syrup. A simple cocktail perfect to quench your thirst around the holidays. This is my homemade version and has nothing to do with P.F.Chang's Asian Pear Mojito.

Steps:
- Combine honey and water and whisk until honey is dissolved. Let it cool.
- In a tall glass combine pear, lime juice, simple syrup, and mint leaves. Muddle until juice from the pear is released. Add rum and ice. Top with soda water. Garnish with with mint leaves, pear and lime slices/

ASIAN PEAR COCKTAIL
Steps:
- Put the pear, shochu and lemon juice in a blender and puree until smooth. Pass the pear puree through a very fine mesh sieve (or a regular sieve lined with cheesecloth). Press on the solids to get as much juice out as possible.
- Fill 4 glasses with large ice cubes and put a shiso leaf in each glass. Use a blunt object to pound the ice and shiso to release its flavors. Divide the pear mixture between the 4 glasses and serve.
ASIAN PEAR
This elegant Asian Pear sour combines the fiery spirit baijiu with maraschino liqueur and a double dose of pear.

- Add the baijiu, maraschino liqueur, pear liqueur, white pear juice, lime juice, agave syrup and spice elixir to a shaker with ice and shake until well-chilled.
- Strain into a coupe glass.
- Garnish with a fresh sage leaf. *Lumos spice elixir: Infuse 1 part allspice, clove and cinnamon separately in 3 parts baijiu. After 3 weeks, strain and taste each infusion, then combine the infusions. Transfer to a dropper and use by single drops as it is very powerful.

- Fill a shaker halfway with ice cubes; add in the sake, pear liqueur, and apple juice.
- Squeeze the juice from the lemon into the shaker.
- Gently stir the ingredients in a circular motion for 8-10 seconds being careful not to break the ice cubes.
- Strain the drink into a chilled cocktail glass; garnish with a pear slice.

This cocktail is made with pear nectar which I feel lends a more natural tasting cocktail then those made with apple pucker or pear liqueur. I muddle fresh mint from my backyard herbs.

- Muddle the mint, juice from 3 lime wedges and sugar.
- Add 2 Oz of Rum
- Add the pear nectar
- Add 8 ice cubes
- Shake vigorously
- Strain into the glass full of crushed ice
- Top the drink with club soda
- Add sprig of fresh mint, lime wedge and pear slices.
