Steps:
- Add all ingredients to a jar with a tight lid and shake until completely combined. Refrigerate for up to 1 week.
- In a large bowl, toss together chicken, celery, lettuce, bell peppers, onions, and oranges.
- Add enough of the dressing to lightly coat. Chill, covered, for up to 2 hours (or serve immediately).
- When ready to serve, divide evenly between four plates and garnish with cashews and chow mein noodles.

- In a small bowl, whisk the first 7 ingredients until blended. Pour 3/4 cup marinade into a large shallow dish. Add chicken; turn to coat. Cover and refrigerate at least 3 hours. Cover and refrigerate remaining marinade., Preheat broiler. Drain chicken, discarding marinade in dish. Place chicken in a 15x10x1-in. baking pan. - 2 chicken breasts
- 1/2 cup of cashews
- 1/4 cup of sliced red onion
- 1/4 cup of sliced carrots
- 1/4 cup of sliced bell pepper
- 1/4 cup of sliced celery
- 1/4 cup of sliced cucumber
- 1/4 cup of sliced mandarin oranges
- 1/2 cup of chopped green onions
- 1/4 cup of olive oil
- 1/4 cup of rice vinegar
- 1 tablespoon of honey
- 1 teaspoon of soy sauce
- 1 teaspoon of minced ginger

Preparation
- Preheat oven to 375°F.
- Cut the chicken breast into small pieces and season with salt and pepper.
- Bake chicken pieces in the oven for 20 minutes or until fully cooked.
- Set aside and let it cool.
- In a bowl, whisk the olive oil, rice vinegar, honey, soy sauce, and minced ginger to make a dressing.
