ASIAN BARBECUE SAUCE
An easy Asian Barbecue Sauce recipe.

Steps:
- Stir together all ingredients except sugar in a bowl.
- Cook sugar in a dry heavy saucepan over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar is melted into a deep golden caramel. Tilt pan and carefully pour in hoisin mixture (caramel will harden and steam vigorously). Cook over moderately low heat, stirring, until caramel is dissolved and sauce is thickened, 6 to 8 minutes. Cool to room temperature. Serve with shrimp, swordfish, pork, or chicken.
- Our two favorite brands are Koon Chun and Lee Kum Kee, both from Hong Kong. We found them in New York's Chinatown, but they're also available by mail order from Uwajimaya (800-889-1928).
GRILLED SWORDFISH STEAKS WITH ASIAN BARBECUE SAUCE

- Preheat grill.
- Combine plum sauce, hoisin sauce, chili paste, orange zest, orange juice, 2 tablespoons of the chopped coriander, 1 teaspoon of the minced ginger and the sesame oil. Brush some of this mixture lightly on the swordfish steaks, and set aside.
- Heat the chicken stock with the remaining ginger in a heavy saucepan. Add the greens, cover and steam just until they wilt, about 1 minute. Remove from heat, and stir in the scallions and remaining chopped coriander. Set aside.
- Brush the grill with peanut oil. Grill the swordfish steaks 2 to 3 minutes on each side, brushing with additional sauce mixture.
- Remove the greens from the saucepan, drain them well and place in the center of 4 shallow bowls. Place a swordfish steak on top of each. Add the remaining sauce mixture to the liquid in the saucepan, and quickly bring to a simmer. Drizzle it around the greens and swordfish. Sprinkle with sesame seeds, garnish with coriander sprigs and serve.

- Heat oil in a medium saucepan over medium heat. Add garlic, ginger, jalapeño and onion; sauté about 3 minutes. Add soy sauce and brown sugar and bring to a boil. Cook, covered, over medium-low heat 8 minutes or until onion is tender. Cool mixture slightly.
- Transfer to a blender; add vinegar, tomato paste, and sesame oil, and process until a chunky puree forms.
- Toss shrimp with 1/4 cup of the sauce; cover and refrigerate 15 minutes.
- Place shrimp in a grill basket coated with cooking spray. Grill, covered with grill lid, over medium-high heat (350° - 400°) 4 minutes or until shrimp turn pink. Serve shrimp with remaining sauce.
ASIAN SPICED FLANK STEAK WITH SHIITAKE BARBECUE SAUCE

- Flank Steak: Rub flank steak with spice blend. Let marinate for 1 hour or refrigerate overnight. Preheat grill or broiler. Grill or broil steak on both sides for 6 minutes. Remove and allow to rest for 10 minutes. Stir-Fry: Cover the mushrooms with 1 cup warm water and soak for 20 minutes. Reserve the liquid, discard the stems, and slice the caps into strips. Heat wok with 2 tablespoons oil. Stir-fry garlic ginger, onion and mushrooms for 1 minute, then add the remaining vegetables. Stir-fry for 4 to 5 minutes or until tender. Add soy sauce, mushroom water, and cornstarch. Cook until slightly thickened. Drizzle with dark sesame oil, and season with salt. To Plate: Place Stir Fried Vegetables on platter. Thinly slice steak against the grain and fan over vegetables. Drizzle with Shiitake Barbecue Sauce. Emeril's Asian Spice Blend: 1 tablespoon 5-spice powder 1 tablespoon salt 1 tablespoon sugar 1 1/2 teaspoons ground black pepper 3/4 teaspoon cayenne In a small bowl, blend all the ingredients. Keep in an airtight container until ready to use. Shiitake Barbecue Sauce: 2 tablespoons vegetable oil 3/4 cup sliced shittake mushrooms 1/2 cup hoisin sauce 1 tablespoon sesame oil 2 tablespoons soy sauce 1 orange, zested and juiced Place a saute pan over medium-high heat. Add the oil and heat. When the oil is hot, add the mushrooms and saute until they begin to give up their liquid, about 4 minutes. Add the sesame oil, soy sauce, orange juice and zest and cook for 2 minutes.
CHICKEN DRUMSTICKS WITH ASIAN BARBECUE SAUCE
For that Asian touch, hoisin and ginger are a knockout sensation.

- 1. Preheat oven to 425.
- 2. In large bowl, mix vegetable oil with five spice powder.
- 3. Add chicken, season with salt and pepper and toss.
- 4. Arrange chicken on foil lined baking sheet. Roast for about 35 minutes, turning twice, until cooked.
- 5. Meanwhile, in blender, mix the hoisin sauce, chile sauce, rice vinegar, chicken stock, ginger, garlic and sesame oil and puree until very smooth. Transfer sauce to a pan and simmer until slightly thickened, 5 minutes.
- 6. Transfer chicken to a large bowl and toss with sauce until completely coated.
- 7. Preheat broiler and position a rack 8 inches from heat.
- 8. Return chicken to baking sheet and broil for about 10 minutes, brushing with the sauce and turning occasionally, until chicken is glazed and sticky. Add toasted sesame seeds to a small bowl. Dip chicken in seeds to coat and serve. Food and Wine

- Lightly grease grill rack. Prepare outdoor grill for direct grilling over medium heat.
- Thread shrimp on skewers.
- In small bowl, stir hoisin sauce, ketchup, ginger, five-spice powder, and 1 tablespoon vinegar to make Asian barbecue sauce. Remove 1/4 cup barbecue sauce to ramekin; stir in water and remaining 1 tablespoon vinegar and reserve to use as dipping sauce.
- Brush shrimp with some barbecue sauce from bowl. Place shrimp on hot grill rack and cook 2 minutes. Brush with some sauce; turn and brush with remaining sauce and grill 1 to 2 minutes longer or until shrimp turn opaque throughout. Serve shrimp on skewers over romaine with reserved dipping sauce.

Steps:
- In a saucepan coated lightly with oil over high heat
- Cook the garlic, ginger and onions and sweat until soft, about 5 minutes.
- Add sambal, hoisin and tomatoes.
- Add lime juice and season with kosher salt and freshly ground black pepper.
- Check for flavor and re-season if necessary.
- Simmer until reduced by 10%, then transfer to a blender and blend at high speed until smooth.
- Serve with ribs, chicken, tofu, or whatever you want!
