ASIAGO/PARMESAN TILAPIA IN 20 MINUTES OR LESS!

While starving, I threw this together and had a nice tilapia dish done in less than 20 minutes! :) I served this super fast meal with canned mexi-corn and black beans combined together with a sprinkling of garlic powder and a few dashes of cayenne pepper, and microwaved for two minutes!

12 -16 ounces tilapia fillets (thawed)
1/2-1 lemon (juiced!)
1 -2 tablespoon mayonnaise
1/4 cup shredded parmesan cheese (Kraft or store-brand in green canister is okay, freshly shredded or grated is even better!)
black peppercorns, freshly ground (to taste!)
4 tablespoons shredded asiago cheese

Steps:

  • Preheat oven to 425°F.
  • Spray a 13x9 Pyrex dish with cooking spray.
  • Combine lemon juice, mayonnaise, parmesan cheese, and black pepper in a bowl. (I guesstimated the ingredient amounts in a Pyrex measuring cup, squeezing in the lemon juice first, then adding the remaining ingredients ~ EXCEPT the asiago cheese ~ add that last after the fish bakes!).
  • Place thawed tilapia fillets in baking dish ~ top with mayo/parmesan cheese mixture ~ spread to cover fillets.
  • Bake at 425F for 10-12 minutes, just until fish flakes.
  • Top baked fillets with grated asiago cheese ~ (about one tablespoon per fillet).
  • Bake 5 more minutes until asiago cheese is lightly browned.
  • For a super fast meal, I served this with canned mexi-corn and black beans combined together with a sprinkling of garlic powder and a few dashes of cayenne pepper, and microwaved for two minutes!

4 frozen tilapia fillets
2 teaspoons pepper
2 teaspoons garlic salt
1 tablespoon dried basil
1/2 cup shredded parmesan cheese
1 tablespoon olive oil

Steps:

  • preheat oven 425 degrees f.
  • drizzle 9x9 glass pan with olive oil.
  • place filets in pan and flip to coat in oil.
  • apply garlic salt, pepper, and basil to each filet.
  • carefully pack cheese on top of filets. try to not get on bottom of pan as it will burn.
  • bake for ~5-10 min until fish flakes with fork, and cheese is lightly browned.
  • Serve with rice or noodles of choice and favorite vegetables!

2 lbs tilapia fillets
2 eggs, beaten
1/3 cup low-fat mayonnaise
1 teaspoon lemon juice
1 cup breadcrumbs
2/3-3/4 cup grated fresh parmesan cheese
1 teaspoon oregano
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/2 teaspoon thyme
1 tablespoon parsley

Steps:

  • Spray baking pan(s) with nonstick cooking spray.
  • Preheat oven to 400.
  • Place beaten eggs in a shallow dish. Stir in mayo and lemon juice. Stir until well-combined.
  • In a separate shallow dish, stir together breadcrumbs, parmesan cheese, and the herbs/spices. Mix well.
  • Dip each fillet into the egg/mayo/lemon juice mixture (coat both sides). Let excess drip off, then dip into breadcrumb/cheese mixture to coat both sides.
  • Place coated fillets in prepared baking pan(s). Bake, uncovered at 400 for 20-30 minutes or until fish is white and flaky inside.
