BAKED LEMON CHICKEN WITH PEPPER image

Lemon chicken is the tops. This recipe was from my Mom.

Number Of Ingredients 10

1/2 c olive oil
2 large red pepper
1/3 c lemon juice
2 large green peppers
2 Tbsp chopped italian parsley
3/4 tsp salt
1 Tbsp dried oregano
1/8 tsp pepper
3 1/2 lb broiler/fryer chicken
lemon slices

Steps:

  • 1. Combine all ingredients except chicken and vegetables.
  • 2. Add chicken and marinate at room temperature for 1 hour, turning once.
  • 3. Drain and bake chicken at 400 degrees for 35 minutes.
  • 4. Cut peppers into 1/2-inch thick rings.
  • 5. Saute 8 minutes.
  • 6. Spoon peppers around chicken.
  • 7. Makes 4 to 6 servings.
  • 8. Any leftovers can be made into chicken soup.
