- Place cauliflower and 1/2 teaspoon sea salt in a large saucepan; add water to cover. Bring to a boil. Cook, covered, until very tender, 12-15 minutes. Drain; cool slightly., Transfer to a food processor. Add the cream cheese, Asiago cheese, butter, parsley, pepper and remaining sea salt. Process until blended.

Steps:
- Place cauliflower and 1/2 tsp salt in large saucepan; add water to cover. Bring to a boil. Cook, covered, until the cauliflower is very tender, 12-15 minutes. Drain; cool slightly. Transfer to a food processor. Add the cream cheese, Asiago cheese, butter, parsley, pepper and remaining 1/2 tsp salt. Process until blended. Tip: Make sure to drain as much water out of the cauliflower pieces as possible to prevent the mashed cauliflower from becoming too liquidy. If desired, you can cook and puree a few cloves of garlic along with the cauliflower.

To make Asiago mashed cauliflower, you will need:- 1 medium head of cauliflower
- 1/4 cup grated Asiago cheese
- 1/4 cup unsweetened almond milk
- 2 tablespoons butter or vegan butter substitute
- 2 cloves garlic, minced

Instructions:
