BEEF ROULADEN STUFFED W/ SPINACH AND ASIAGO CHEESE image

8 slices of rouladen
100 gr. asiago cheese
Salt and Pepper to taste
3 c. fresh baby spinach
2 T. Vegetable oil
2-1/2 c. of your favorite pasta sauce (I like tomato basil)

Steps:

  • Preheat oven to 350F Lay slices of rouladen on work surface. Season with salt and pepper, sprinkle grated asiago evenly over meat then divide baby spinach evenly over top. Roll individually in tight cylinders and tie with string or secure with toothpicks. Heat oil in skillet over med-hi heat and brown rouladen on all sides. Transfer to a 9" X 12" glass casserole dish and pour pasta sauce over top. Cover with foil and bake 60 - 75 minutes or until the meat is very tender.

3/4 pound lean ground beef (90% lean)
1 shallot, finely chopped
2 large eggs
3/4 cup sour cream
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup shredded part-skim mozzarella cheese
2/3 cup shredded Asiago cheese
1/3 cup oil-packed sun-dried tomatoes, coarsely chopped
1/4 cup coarsely chopped fresh basil
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
TOPPINGS:
2 tablespoons pine nuts, toasted
Thinly sliced fresh basil, optional

Steps:

  • Preheat oven to 400°. On a work surface, unroll crust; roll to a 12-in. circle. Press crust onto bottom and up sides of an ungreased 11-in. tart pan with removable bottom. Refrigerate while preparing filling., In a large skillet, cook beef and shallot over medium heat 5-7 minutes or until beef is no longer pink, breaking up beef into crumbles. Remove from heat., In a small bowl, whisk eggs, sour cream, salt and pepper until blended. Stir in cheeses, sun-dried tomatoes, chopped basil and rosemary. 4 sun-dried tomatoes packed in oil, drained
1/2 cup mayonnaise
1 tablespoon whole grain mustard
8 ounces andouille sausages, cut into pieces
2 1/2 lbs ground beef
2 shallots, minced
salt
pepper
fennel seed, crushed
6 seasame seeds buns
6 slices red onions (thick slices)
olive oil
1 cup grated asiago cheese
1 (7 ounce) jar roasted red peppers, drained

Steps:

  • Finely chop sun-dried tomatoes in food processor. Blend in mayonnaise and mustard. Transfer to small bowl and cover and chill. Can be made up to 1 day ahead.
  • Finely chop andouille sausage in processor. Transfer to large bowl. Add beef, shallots, salt, pepper and fennel seeds. Stir with fork just until blended. Form mixture into 6 patties.
  • Prepare barbecue on medium high heat. Grill hamburger buns until golden brown for 2min. Transfer to plate. Brush onion slices with oil. Sprinkle with salt & pepper. Grill until golden about 7min. per side. Grill until desired doneness. Sprinkle cheese over top of burgers.
  • Spread hamburger buns with sun-dried tomato mayonnaise. Top with red bell peppers. Top with onion slices. Then place hamburgers on and tops of buns.
