Shrimp Scampi image

My husband doesn't like shrimp, but even he really loves this dish. Its not a copy cat recipe, but to me it tastes just like Red Lobster shrimp scampi. The secret's the Parmesan topping!

Number Of Ingredients 8

1/2 c white wine
1 1/2 stick unsalted butter, melted
3 Tbsp garlic, minced
salt & pepper to taste
2 Tbsp fresh lemon juice
1/4 c parmesan topping
chopped fresh parsley
2 lb large, raw shrimp, peeled & deveined. leave tails on.

Steps:

  • 1. Combine the melted butter, wine, and garlic in a large liquid measuring cup. Place shrimp in individual oven proof dishes (2 lbs. of large shrimp divides about 12 into each of 4 dishes) or place all the shrimp into a glass baking dish. Pour liquid over shrimp.
  • 2. Bake in a 350 degree oven for 15 minutes. Sprinkle with parmesan topping and return to the oven for 5 more minutes or until shrimp turns completely pink. Be careful not to over-bake.
  • 3. Season with salt, pepper and fresh parsley to taste.
