- Whisk together the flour, 1 tablespoon salt and a few grinds of pepper in a pie plate or shallow dish. Coat both sides of the chicken breasts in the seasoned flour. Shake off any excess and set aside.
- Heat 3 tablespoons of oil in a large, heavy-bottomed skillet over medium-high heat. Add the chicken and cook, undisturbed, until deeply golden, about 4 minutes (do not turn). Remove the chicken to a plate. Add the remaining tablespoon oil to the skillet. Add the onion and cook, stirring occasionally, until it begins to soften, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Add the cream cheese and stir until melted. Pour in the half-and-half and use a wooden spoon to scrape up any brown bits from the bottom of the skillet. Season with salt and pepper. Add the chicken back to the skillet, seared-side up, reduce the heat to medium, cover and cook, turning about halfway through, until an instant-read thermometer inserted into the thickest part of the chicken reaches 165 degrees F, 12 to 14 minutes.
- Transfer the chicken to a serving platter. Add the spinach to the sauce in the skillet, cover and cook until wilted, about 5 minutes. Stir in the artichoke hearts and cook until heated through, about 1 minute. Season with salt and pepper. Pour the creamy sauce over the chicken. Serve with steamed rice.

Making artichoke and spinach skillet pizza is an excellent way to add variety to your pizza menu. The dish is delicious, healthy, and straightforward to prepare. Not to mention, it is an excellent choice for an easy, quick weeknight dinner. When making this recipe, you want to ensure that everything is done correctly to maximize its taste and health benefits. Here are some valuable tips to keep in mind when making artichoke and spinach skillet pizza.
1. Choose High-Quality Ingredients
The quality of the ingredients you use can make or break the recipe's final outcome. Therefore, you want to ensure that you utilize high-quality greens, artichokes, cheese, and flour when preparing your pizza. Using fresh spinach and canned or marinated artichokes is a great idea; these should be rinsed and drained before use. Additionally, getting high-quality flour is crucial to avoid a rubbery pizza crust.
2. Choose the Right Pan Size
The size of the skillet you use plays a crucial role in making the artichoke and spinach skillet pizza. Too small of a skillet and the crust won't cook right. On the other hand, the crust might burn before the pizza is thoroughly cooked if the skillet is over-sized. An 8-inch skillet should work for a medium-sized pizza, while a 10-inch skillet works better for a larger pizza.
3. Preheat Your Skillet
It's essential to preheat your skillet to get the crust cooked evenly. Preheat the skillet in the oven for about ten minutes before you spread the dough. Also, ensure that the dough can fit perfectly onto the skillet so that it is entirely cooked.
4. Use a Good Quality Pizza Dough
The dough is the foundation of an artichoke and spinach skillet pizza. You can either use a homemade pizza dough recipe or purchase one from the store. When purchasing, you should read the label to ensure that the dough is high-quality with no additives that can affect your health. Homemade dough is preferable since you can have control over the ingredients and the texture of the final crust product.
5. Opt for Greek Yogurt
When making the spinach-artichoke dip, opt for Greek yogurt instead of sour cream. This gives the dip a tangy taste that complements the flavors of the pizza. Additionally, using Greek yogurt over sour cream provides more health benefits such as high protein and low calorie.
6. Add Seasonings of Your Choice
One of the best things about homemade recipes is that you can customize them according to your taste. Similarly, when making the spinach-artichoke dip, you can add seasonings of your choice to enhance the flavors. For instance, you can add garlic, onion powder, or even chopped jalapeños. However, use any seasonings sparingly as you don't want to overpower the flavors of the other ingredients.
7. Pair with a Sauce of Your Choice
Artichoke and spinach skillet pizza is terrific on its own, but if you want to give it an extra boost of flavor, you can pair it with a dipping sauce of your choice. Marinara, ranch, or pesto sauce makes a great accompaniment.
8. Be Mindful of the Artichoke Pieces
Artichoke is a delicate vegetable that can burn quickly when cut too small, making your pizza taste bitter. Therefore, when cutting your artichokes, ensure that they are cut into small bite-size pieces. Also, remove any sharp or fibrous parts and the choke (the center) of the artichoke.
9. Cook at the Right Temperature
Ensure that you are cooking your artichoke and spinach skillet pizza at the right temperature. A temperature of 425- 450F is ideal for cooking the pizza evenly for about 12-15 minutes.
10. Add Cheese, But Not Too Much
Artichoke and spinach skillet pizza deserves cheese to bring out the flavors; however, don't overdo it. The cheese should be enough to cover the pizza without drowning out the other ingredients. Mozzarella cheese and grated parmesan cheese work particularly well for this recipe.
11. Drizzle Olive Oil
After the pizza comes out of the oven, drizzle some olive oil over it. This adds a layer of unctuousness, and the pizza looks shiny and appetizing. Additionally, olive oil enhances the health benefits of the artichoke and spinach skillet pizza.
Conclusion
Artichoke and spinach skillet pizza is a fantastic recipe to try if you want to bring a different kind of pizza to your menu. To get the best results, follow the above tips when preparing your pizza. Be mindful of the ingredients' quality, pan size, temperature, and cheese use to maximize the flavors and health benefits of this pizza. With these tips, you'll prepare a delicious and nutritious artichoke and spinach skillet pizza that your family and friends will love.
