AUTHENTIC YELLOW RICE - ARROZ AMARILLO

Authentic Yellow Rice - Arroz Amarillo image

It took me many, many years to really grasp the concept of making GOOD rice. Authentic Mexican and Cuban restaurant quality rice was something I always wanted to achieve, yet I never truly understood or figured it out until I had spoken with a woman of Mexican heritage who taught me the right way - and I've never looked back! If...

Time 40m

Number Of Ingredients 6

4 Tbsp evoo (extra virgin olive oil)
1 medium yellow onion, chopped finely
2 pkg powdered chicken boullion
2 pkg sazon goya with coriander & annatto
2 c white long grain rice
3 c fresh water

Steps:

  • 1. Rinse the rice in a mesh colander thoroughly to remove all of the surface starch. This step alone can improve your rice dramatically, no matter what type of rice dish you are choosing to make. Rinse the rice until the water runs clear. You may want to dig your hands through the rice, moving it around to really rinse it well. Drain the rice well.
  • 2. In a large pot with a tight fitting lid, heat 3 cups of water to a boil. Once boiling, turn heat down to about 4, or medium low. Meanwhile as the water is heating, in a frying pan, heat the olive oil over medium heat until very hot. Add in the onion and cook for about 1 minute, and then add in the rice to the frying pan. Frying the rice before boiling the rice is commonplace in Spanish and Latin kitchens, though many people are not aware of this ever important step. Fry the rice, stirring with a wooden spoon, for about 4-5 minutes.
  • 3. Add to the rice the chicken boullion packets and Sazon Goya packets, and stir well. Be sure all of the rice is evenly coated with the seasoning.
  • 4. Transfer the rice to the boiling water, stir once, and cover with the lid. DO NOT open the lid until the rice is done, which will be about 20 minutes. The rice relies on the steam to thoroughly cook through, and by removing the lid, you will allow the steam to escape. Once done, fluff with the back of a fork, and serve with black beans and chicken, pork chops, or anything you like.
  • 5. Optional: You can add 1/2 C of frozen mixed vegetables to the rice if you'd like to. Just add them when you are in the stage of frying the rice, to the rice, and transfer to the hot water together.

YELLOW RICE - ARROZ AMARILLO CON ACHIOTE

Yellow Rice - Arroz Amarillo Con Achiote image

Make as a side to black beans for a nice vegetarian meal. Annatto seeds are brick red, triangular in shape, 1/8" - 3/16". The seeds are available whole and can often be purchased in a block or paste form at Latin American section of your supermarkets. Annatto was once used to control fevers, dysentery and kidney diseases, though is now used mostly as a dye in medical preparations such as ointments and plasters. In India the pulp is used as an insect repellent.

YELLOW RICE (ARROZ AMARILLO)

Yellow Rice (Arroz Amarillo) image

Sofrito, a sautéed vegetable mixture that typically contains garlic, onion, and bell pepper, is used as a seasoning in much of Latin America and the Caribbean. Here, it flavors yellow rice. The color comes from annatto seeds-which have an astringent, slightly peppery flavor-heated in oil until bright red-orange.

YELLOW "RICE" WITH SERRANO HAM ("ARROZ" AMARILLO CON JAMON)

Yellow

Provided by Daisy Martinez

Categories     side-dish

Time 25m

Yield 6 servings

Number Of Ingredients 9

3 (8-ounce) bottles clam juice
3 tablespoons Achiote Oil, recipe follows
4 cloves garlic, sliced thin
1/3 cup finely diced Serrano or prosciutto ham
1 pound orzo (rice-shaped pasta)
Sea salt and freshly ground black pepper
Chopped parsley leaves, for garnish
1 cup olive oil
2 tablespoons achiote (annatto) seeds, see Cook's Note*

Steps:

  • Pour the clam juice into a small saucepan and heat to simmering. Keep hot over very low heat.
  • Heat the achiote oil over medium-high heat in a medium saucepan. Add the garlic, stirring to prevent sticking, and cook until lightly golden, about 2 minutes. Stir in the ham and cook until fragrant, 1 to 2 minutes. Add the orzo and stir until lightly toasted, about 2 minutes.
  • Pour enough hot clam juice into the skillet to cover the orzo by about 1/2-inch. Bring to a boil, then adjust the heat to medium-low. Continue cooking, adding small amounts of the hot clam juice to keep the orzo covered as necessary, until the pasta is tender but still firm, 6 to 8 minutes. Season with salt and pepper, to taste. The pasta should have a creamy consistency, but there should be little, if any, liquid left by the end of cooking. If a bit soupy, let stand for a minute or so. Transfer to a serving dish and garnish with the chopped parsley.
  • Heat the oil and annatto seeds in a small skillet over medium heat just until the seeds give off a lively, steady sizzle. Don't overheat the mixture or the seeds will turn black and the oil will turn a nasty green. Once they're sizzling, remove the pan from the heat and let stand until the sizzling stops. Strain and reserve in a jar with a tight-fitting lid at room temperature for up to 4 days.

Provided by Michelle Figueroa

Categories     Rice

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 11

1 (15 ounce) can pigeon peas
3 cups long-grain white rice
water (depends what type of rice if you use regular long grain rice it's 1 1/2 cups water per 1 cup rice, i)
1/4-1/2 lb pork, cut into little cubes like 1/2 inch big (like pork shoulder or boneless leg of pork, etc.)
1 small green bell pepper, finely minced
1 medium onion, finely minced
5 -6 garlic cloves, mashed to a paste (through a garlic press)
salt, to taste at least 2 teaspoons
1/2-1 teaspoon ground cumin (to taste don't over do it for this dish or it will over power it)
1 sazon goya con culantro y achiote
lard (my grandmother prefers bacon grease or lard leftover from making fried pork rinds to cook this dish,) or bacon grease (my grandmother prefers bacon grease or lard leftover from making fried pork rinds to cook this dish,)

Steps:

  • Wash rice really well until water runs clear, strain well, put in rice cooker and add water, set aside.
  • Heat pan on medium high heat, add olive oil or lard, let it heat up a bit like 5 minutes more or less. Be sure the oil is hot enough, you can test it by dipping a wooden spoon if it sizzles it's ready.
  • Season pork cubes with 1 teaspoon salt (trust me) and add to hot oil, let it fry in one layer underdisturbed until browned. About 5 minutes more or less. Add minced onion and bell pepper and cook down together with pork for about 5-7 minutes, add minced garlic afterwards and cook for 2 minutes or so until fragrant.
  • Turn off heat and dump this sautee into the rice cooker with the rice and water, mix well. Add drained can of pigeon peas, 1 teaspoon salt, 1 teaspoon "Bijol", and 1/2- 1 teaspoon cumin. Mix well. Taste the water in there, it should be salty like ocean water, if not add more salt carefully. Increasing by 1/2 teaspoons and so on but don't use more than 3 teaspoons.
  • Cover and turn on rice cooker and set to cook, when it beeps the rice is done. Fluff it and it's ready.
  • Serve with whatever you want, I like it with a simple salad, of sliced tomato, cucumber, and onion dressed in lime and salt along with a meat dish that's grilled or pan-fried.
  • NOTE:.
  • (1)You can adjust this to your stove top, fry the pork, and make the sofrito (sautee of onion, garlic, and bell pepper) add the cleaned drained rice stir well to coat with sofrito, add water, salt, cumin, bijol, and drained can of pigeon peas, bring to a boil, stir, then cover and lower heat to low to cook for about 30 minutes covered, then open to check if it's done if so turn off heat and fluff.

Arroz Amarillo Recipes: The Key to Delicious Yellow Rice

Arroz amarillo, or yellow rice, is a staple in Latin American cuisine. It gets its vibrant color from a spice blend that includes turmeric and annatto powder, giving it a unique flavor that is both savory and earthy. Arroz amarillo is an easy and versatile side dish that pairs well with a variety of dishes, including grilled meats, seafood, and vegetables.

The History of Arroz Amarillo

The origins of arroz amarillo can be traced back to Spain, where rice cultivation thrived during the medieval era. The Moors, who occupied Spain for centuries, had a great influence on Spanish cuisine, including the use of spices such as saffron, which was used to color and flavor rice dishes. When the Spanish colonized Latin America, they brought their culinary traditions with them, and arroz amarillo became a popular dish throughout the region.

Arroz Amarillo Variations

Arroz amarillo can be prepared in different ways depending on the country and the region. In the Caribbean, for example, it is often prepared with coconut milk, while in Peru, it is commonly served with seafood, including fish, shrimp, and mussels. In Colombia, it is often served with beans and ground meat in a dish called arroz con frijoles y carne molida.

Ingredients for Arroz Amarillo

The basic ingredients for arroz amarillo include rice, chicken broth or water, and the spice blend which includes turmeric and annatto powder. However, many recipes call for additional ingredients to add flavor and texture, such as diced onions, minced garlic, chopped bell peppers, and peas.

Preparation of Arroz Amarillo

To prepare arroz amarillo, you will need to sauté the onions and garlic in oil until they are softened. Then, add the rice and continue to cook until it is lightly toasted. Next, add the chicken broth or water, along with the spices, and bring it to a boil. Once it is boiling, reduce the heat to low and cover the pan with a lid. Cook the rice for 18-20 minutes, or until it is tender and all the liquid has been absorbed. Fluff the rice with a fork before serving.

Uses for Arroz Amarillo

Arroz amarillo is a great side dish for a variety of meals. It pairs well with grilled meats, such as chicken, beef, and pork, as well as seafood, including shrimp, fish, and mussels. It also works well as a base for stews and soups or as a filling for burritos and tacos. For vegetarians, arroz amarillo can be served with roasted vegetables, such as eggplant, zucchini, and bell peppers.

Health Benefits of Arroz Amarillo

Arroz amarillo has several health benefits. It is a good source of complex carbohydrates, which provide energy and aid in digestion. It is also high in fiber, which promotes healthy digestion and lowers cholesterol levels. Additionally, the turmeric and annatto powder used in the spice blend have anti-inflammatory properties, which can help reduce the risk of chronic diseases such as heart disease and cancer.

Conclusion

Arroz amarillo is a delicious and easy-to-prepare side dish that is a favorite in Latin American cuisine. Whether served alongside grilled meats, seafood, or roasted vegetables, arroz amarillo adds a pop of color and flavor to any meal. With its health benefits and versatility, it is no wonder that arroz amarillo has become a beloved staple in households and restaurants throughout the region.

Arroz amarillo is a delicious yellow rice dish that hails from Latin America. This dish is a staple in many Latin households and is often served as a side dish or as a main dish with some protein. The yellow color of the rice is obtained by using achiote, a natural coloring ingredient made from the seeds of the tropical annatto tree. In this article, we will discuss some valuable tips for making the perfect arroz amarillo dish.

Tip 1: Choose the right rice

The type of rice you use for making arroz amarillo is important. It is recommended to use medium or long grain rice that is not too starchy. Short-grain rice tends to be sticky and clumpy, which is not ideal for this dish. Basmati rice is a good option for arroz amarillo as it absorbs the flavors well and stays fluffy.

Tip 2: Prepare the achiote oil

Achiote oil is the key ingredient that gives arroz amarillo its distinct yellow color. To make achiote oil, you will need achiote seeds, oil, and some garlic cloves. Heat the oil in a pan, and add the achiote seeds and garlic cloves. Allow the mixture to simmer for a few minutes until the oil turns a deep red color. Strain the oil and discard the seeds and garlic.

Tip 3: Cut the vegetables uniformly

When making arroz amarillo, the vegetables should be cut in uniform size to ensure even cooking. Onions, peppers, and tomatoes are common vegetables used in this dish. Try to cut them in small, bite-sized pieces to add texture to the dish.

Tip 4: Toast the rice

Toasting the rice before cooking it is an essential step when making arroz amarillo. Toasting not only enhances the nutty flavor of the rice but also ensures that the grains stay separate and not sticky. Heat some oil in a pan, and add the rice. Toast the rice for a few minutes until it turns a light brown color.

Tip 5: Add the right amount of water

The amount of water you add when cooking the rice is crucial. Too much water will make the rice mushy, and too little water will result in undercooked rice. A general rule of thumb is to add two cups of water for every cup of rice. However, the amount of water may vary depending on the type of rice and altitude.

Tip 6: Don't stir the rice too much

When cooking the rice, resist the urge to stir it too much. Stirring the rice too much will release the starch and make the rice sticky. After adding the water, bring it to a boil, and then reduce the heat to low. Cover the pot with a tight-fitting lid and let it cook undisturbed.

Tip 7: Add the vegetables at the right time

Adding the vegetables at the right time is crucial when making arroz amarillo. Onions and peppers should be added at the beginning of cooking as they take longer to cook. Tomatoes should be added towards the end of cooking as they break down quickly and can make the rice too mushy.

Tip 8: Fluff the rice before serving

Once the rice is cooked, fluff it with a fork before serving. Fluffing the rice will ensure that the grains remain separate, and the dish has a light texture. You can also add some fresh herbs like cilantro or parsley for added flavor.

Tip 9: Store leftovers properly

Any leftover arroz amarillo should be stored in an airtight container in the refrigerator. Reheating the rice on the stove or in the microwave is easy, but you may need to add some water or broth to moisten it.
Conclusion
Arroz amarillo is a delicious and easy-to-make dish that is perfect for any meal. With these valuable tips, you can make the perfect arroz amarillo every time. Remember to choose the right rice, prepare the achiote oil, cut the vegetables uniformly, toast the rice, add the right amount of water, don't stir the rice too much, add the vegetables at the right time, fluff the rice before serving, and store leftovers properly. Happy cooking!
