Time 1h20m

Yield Makes 24

Number Of Ingredients 10

18 graham crackers
1 cup plus 2 tablespoons sugar
Coarse salt
1/2 cup (1 stick) unsalted butter, melted
10 ounces apricots (about 4), halved, pitted, and cut into eighths
1 tablespoon fresh lemon juice
2 packages (8 ounces each) cream cheese, room temperature
1/2 cup sour cream, room temperature
1/2 teaspoon pure vanilla extract
2 large eggs, room temperature, lightly beaten

Steps:

  • Preheat oven to 350 degrees. In a food processor, process graham crackers, 2 tablespoons sugar, and 1/4 teaspoon salt until fine crumbs form. Transfer to a medium bowl and stir in melted butter until crumbs are moistened. Wipe processor bowl clean. With a flat-bottomed 1-cup measure or glass, press crumbs evenly into a 9-by-13-inch baking pan. Bake until crust is firm, 15 minutes. Let cool on a wire rack. Reduce heat to 325 degrees.
  • In a small saucepan, bring apricots, 1/4 cup sugar, and pinch of salt to a boil over medium-high, stirring, until sugar dissolves. Reduce heat and simmer, stirring frequently, until mixture is shiny, 10 minutes. In food processor, puree apricot mixture, lemon juice, and 1 tablespoon water.
  • In a large bowl, using an electric mixer, beat cream cheese and sour cream on medium until smooth. Add 3/4 cup sugar and beat until smooth. Add vanilla and pinch of salt and beat to combine. Add eggs and beat until smooth, scraping down bowl as needed. Pour cream-cheese mixture into cooled crust and smooth top.
  • Randomly drop small spoonfuls apricot puree on cream-cheese mixture. With a skewer or thin-bladed knife, gently swirl puree. Bake just until set, about 25 minutes. Let cool slightly in pan on rack, then refrigerate until chilled and firm before cutting into squares, 2 hours.

APRICOT STREUSEL BARS

Apricot Streusel Bars image

I clipped this from a magazine years ago, and just now came across it again. I was introduced to the wonders of apricot in baked goods by my grandmother, who made an apricot-filled pastry every Christmas. Ever since, I have a weakness for apricot in my holiday cookies, and so I'm always looking for new recipes to add to my collection. Though I haven't tried this one yet, I just know it's a winner -- with a walnut crust and a tangy apricot filling, how could these bars be anything but scrumptious? :)

Yield 48 bars, 48 serving(s)

Number Of Ingredients 12

1 (6 ounce) package dried apricots (about 1 cup)
1 cup water
4 eggs
3 tablespoons lemon juice
1 1/2 cups sugar
1/3 cup all-purpose flour
1/2 teaspoon salt
2 cups all-purpose flour
1 cup coarsely chopped walnuts
3/4 cup powdered sugar
1 cup unsalted butter, chilled, cut up
powdered sugar

Steps:

  • Heat oven to 350 degrees F. Spray a 13x9-inch pan with cooking spray. In medium saucepan, combine apricots and water; simmer, uncovered, over medium-high heat for 25 minutes or until water is absorbed, stirring occasionally. Cool.
  • While apricots are simmering, make the crust: Place 2 cups flour, walnuts, and and 3/4 cup powdered sugar in food processor; process until blended and nuts are finely chopped. Add butter; process until mixture resembles coarse crumbs (DO NOT process until mixture becomes smooth). Reserve 1 1/2 cups crumb mixture. Press remaining mixture in bottom of pan.
  • Bake for 12 to 15 minutes, or until lightly browned around edges.
  • While crust is baking, finish making the filling: Place cooked apricots in same food processor (you do NOT need to wash it first). Add eggs, lemon juice, sugar, 1/3 cup flour and salt; process until blended.
  • Pour filling over crust. Sprinkle reserved 1 1/2 cups crumb mixture over the top. Return to oven; bake an additional 25 to 30 minutes, or until filling is set and top is light brown. Cool in pan on wire rack. Cut into bars, and sprinkle with powdered sugar.

Cheesecake bars are a delicious dessert that everyone loves. If you're a fan of apricots, you should try making apricot streusel cheesecake bars. With a creamy cheesecake filling, a flavorful apricot topping, and a crispy streusel crust, these bars are a perfect treat for any occasion. To help you create the perfect apricot streusel cheesecake bars, we've put together a list of valuable tips.

Tips for Making the Crust

The crust is the foundation of any good cheesecake bar recipe. Here are a few tips to help you make the perfect crust for your apricot streusel cheesecake bars.
Use Butter Instead of Margarine
When making the crust, it's important to use real butter instead of margarine. Margarine contains water, while butter doesn't. Using margarine can lead to a soggy crust, while using butter will give you a crispy and flavorful crust.
Chill the Crust Before Baking
After you've pressed the crust into the pan, make sure to chill it in the refrigerator for at least 30 minutes before baking. This will help the crust hold its shape and prevent it from sliding or crumbling when you cut the bars.
Blind Bake the Crust
Blind baking the crust means baking it without the filling. This step is important because it will help the crust stay crispy and prevent it from becoming soggy when you add the filling. Line the crust with aluminum foil and fill it with pie weights or dried beans before baking. Bake the crust for 10-12 minutes, or until it turns golden brown.

Tips for Making the Filling

The filling is what makes the cheesecake bars creamy and delicious. Here are a few tips to help you make the perfect filling for your apricot streusel cheesecake bars.
Use Room Temperature Ingredients
To ensure that your filling is smooth and creamy, make sure to use ingredients that are at room temperature. This includes the cream cheese, eggs, and sour cream. Room temperature ingredients will blend together more easily, resulting in a smoother and fluffier filling.
Don't Overmix the Filling
When mixing the filling ingredients together, be careful not to overmix. Overmixing can cause the cheesecake to crack and become lumpy. Mix the ingredients together until they are just combined, and then stop.
Add Flavors to the Filling
If you want to add some flavor to your filling, consider adding some vanilla extract, lemon zest, or almond extract. These flavors will add a delicious twist to the classic cheesecake flavor.

Tips for Making the Topping

The apricot topping is what gives these cheesecake bars their unique and flavorful taste. Here are a few tips to help you make the perfect topping for your apricot streusel cheesecake bars.
Use Fresh Apricots
Using fresh apricots will give you a richer and more flavorful topping than using canned apricots. If fresh apricots aren't available, you can also use frozen apricots.
Cook the Apricots First
Before adding the apricots to the bars, cook them in a saucepan with sugar, water, and lemon juice until they're soft and syrupy. This will create a delicious and flavorful topping that complements the cheesecake filling perfectly.
Add Spices to the Topping
If you want to add some extra flavor to your apricot topping, consider adding some cinnamon, nutmeg, or allspice. These spices will create a warm and cozy flavor that's perfect for fall.

Tips for Making the Streusel Topping

The streusel topping is what gives these cheesecake bars their crispy texture and buttery flavor. Here are a few tips to help you make the perfect streusel topping for your apricot streusel cheesecake bars.
Use Cold Butter
To create a crispy and buttery texture, make sure to use cold butter when making the streusel topping. This will create a crumbly texture that's perfect for cheesecake bars.
Use a Pastry Cutter
To make the streusel topping, use a pastry cutter to cut the butter into the flour mixture. This will create a uniform and crumbly texture that's perfect for the topping.
Add Flavor to the Streusel Topping
Consider adding some spices or nuts to the streusel topping to create a more complex flavor. Cinnamon, nutmeg, and chopped nuts are all great options.

Conclusion

Making apricot streusel cheesecake bars is a fun and rewarding experience. With these valuable tips, you can create the perfect crust, filling, topping, and streusel for your bars. Whether you're making these bars for a special occasion or just for fun, they're sure to be a hit with everyone who tries them.
