2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/16 teaspoon ground cloves
1/2 cup dried apricot, chopped
2 tablespoons pecans, chopped
1/2 cup orange juice
2 tablespoons vegetable oil
1/4 cup firmly packed brown sugar
2 egg whites
1/2 cup canned pumpkin
1 1/2 teaspoons vanilla extract

Steps:

  • Preheat oven to 400°F.
  • Lightly oil 8 muffin cups or spray with a nonstick cooking spray.

People who don't like apricots even ask for more of these.I Usually use my dehydrated apricots but fresh works great also.

1/2 cup butter, room temperature
1 cup sugar
2 eggs
2 teaspoons vanilla
2 teaspoons baking powder
1/4 teaspoon salt
2 cups flour
1/2 cup milk
1 cup chopped pecans
1 1/2 cups apricots, chopped

Steps:

  • Cream together butter and sugar.
  • Add vanilla.
  • Beat in eggs, one at a time.
  • Combine dry ingredients and add to creamed mixture alternately with milk.
  • Stir in nuts & apricots.
  • Spoon into paper lined or greased muffin pans.
