SPICY GINGER APPLESAUCE CAKE WITH CREAM CHEESE FROSTING

Spicy Ginger Applesauce Cake With Cream Cheese Frosting image

This simple sheet cake is packed with three kinds of spicy ginger: fresh, ground and crystallized. The cake is delicious on its own, but cream cheese frosting and a sprinkle of crystallized ginger push it closer to dessert. The cake can be made a day in advance, covered and refrigerated and brought to room temperature before serving. The crystallized ginger should be sprinkled on just before serving as it will weep in the fridge.

Categories     cakes, dessert

Time 1h

Yield 12 servings

Number Of Ingredients 24

1 1/4 cups/275 grams light brown sugar
2 large eggs
2 cups/480 milliliters unsweetened applesauce
3/4 cup/180 grams neutral oil like canola or grapeseed
2 tablespoons fresh ginger, peeled and finely grated
1 tablespoon ground ginger
1 teaspoon finely grated orange zest
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/4 teaspoon ground allspice
1 teaspoon vanilla extract
3/4 teaspoon kosher salt
2 cups/255 grams all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup/85 grams finely chopped crystallized ginger
12 ounces/350 grams cream cheese, softened
1/2 cup/115 grams unsalted butter, softened
2 1/4 cups/226 grams confectioners' sugar, sifted
1 tablespoon fresh ginger, peeled and finely grated
1 teaspoon lemon zest
1 teaspoon vanilla extract
Pinch of kosher salt
1/2 cup/85 grams finely chopped crystallized ginger

Steps:

  • Heat oven to 350 degrees. Butter and flour a 9-by-13-inch glass or light-colored metal baking pan.
  • In a large bowl, whisk sugar and eggs until light, about 1 minute. Add applesauce, oil, fresh and ground ginger, orange zest, cinnamon, cardamom, allspice, vanilla extract and salt. Whisk to combine.
  • Add the flour, baking soda and baking powder, and whisk until just combined. Fold in 1/2 cup chopped candied ginger.
  • Pour the batter into the prepared pan, smooth the top and firmly tap the pan on a countertop to release air bubbles. Bake the cake until golden and puffed, and a tester inserted into the center comes out clean, 25 to 35 minutes. Cool the cake in the pan on a rack.
  • When the cake is cool, make the frosting: Add the cream cheese and butter to the bowl of a stand mixer fitted with the whisk attachment. Mix on medium-high until smooth, stopping the mixer occasionally to scrape the bottom and sides of the bowl. Turn the speed to low, and slowly add the confectioners' sugar. Mix until the sugar is moistened, then turn the mixer speed up to medium-high and whip until smooth. Scrape down the bottom and sides of the bowl. Add the ginger, lemon zest, vanilla and salt, and mix on low.
  • Spread the frosting over the cooled cake in dramatic swoops and swirls, then sprinkle the remaining 1/2 cup crystalized ginger on top. Serve at room temperature.

The History of Applesauce Cake

Applesauce cake has been around since the early 1900s. This simple cake was popular during the Depression era, when ingredients were scarce, and families had to be resourceful in the kitchen. Applesauce was used as a substitute for oil or butter, which made the cake moist and tender. As the years went by, applesauce cake became a staple in many households, especially during the fall season. It was often served with a dollop of whipped cream, caramel sauce, or a dusting of powdered sugar.

The Popularity of Applesauce Cake

Today, applesauce cake remains popular, and is enjoyed by people of all ages. The cake's popularity is due in part to its simplicity and versatility. It is easy to make, and can be adapted to suit different tastes and dietary requirements. Moreover, applesauce cake is a healthier alternative to other desserts. By using applesauce instead of oil or butter, the cake is lower in calories and fat. It is also a great way to sneak in some fruit into your diet. Many people are nostalgic for the comfort foods of their childhood, and applesauce cake is a perfect example of a classic dessert that has stood the test of time.

Variations of Applesauce Cake

There are many variations of applesauce cake, each with its own unique flavor profile. Some recipes call for the addition of spices like cinnamon, nutmeg, or allspice. Making applesauce cake recipes can be a delicious and healthy dessert option for your family or friends. Applesauce is a low-fat and low-calorie ingredient that can make your cakes moist and flavorful. However, there are some tips and tricks you should know before making an applesauce cake recipe to achieve the best results.

Tip #1: Choose the right type of applesauce

When making an applesauce cake, you should choose the right type of applesauce according to the recipe. There are two main types of applesauce: sweetened and unsweetened. If the recipe calls for sweetened applesauce, you can use store-bought applesauce that contains added sugar. However, if you want to reduce the sugar content of your cake, you can make your own unsweetened applesauce at home by blending apples with water and lemon juice.

Tip #2: Use the correct amount of applesauce

Using the correct amount of applesauce is crucial for the texture and flavor of your cake. The amount of applesauce you need to use depends on the recipe and the size of the cake. As a general rule, you can substitute half of the oil or butter in the recipe with applesauce. For instance, if the recipe requires one cup of oil, you can use half a cup of oil and half a cup of applesauce. This substitution will reduce the fat content of your cake while adding moisture and flavor.

Tip #3: Choose the right spices

The spices you use in your applesauce cake recipe will determine the flavor profile of your dessert. Cinnamon is a popular spice that goes well with applesauce and can add warmth and depth to your cake. However, you can also experiment with other spices such as nutmeg, allspice, or ginger to create a unique flavor that suits your taste. Remember to measure the spices correctly to avoid overpowering or underwhelming the other ingredients.

Tip #4: Adjust baking time and temperature

Applesauce can make your cakes more moist and tender, which means they may take longer to bake than traditional cakes. Therefore, you need to adjust the baking time and temperature to avoid undercooking or overcooking your cake. As a general guideline, you can reduce the baking temperature by 25 degrees Fahrenheit and increase the baking time by 5-10 minutes. However, you should check the cake regularly with a toothpick or a cake tester to make sure it's fully baked and not too dry or soggy.

Tip #5: Add mix-ins for texture and variety

Adding mix-ins to your applesauce cake recipe can enhance the texture and flavor of your dessert. Mix-ins can be anything from nuts, raisins, chocolate chips, or dried fruits, depending on your preferences. These ingredients can add crunchiness, chewiness, or sweetness to your cake and make it more interesting and delicious. Just make sure to chop or soak the mix-ins before adding them to the batter, so they distribute evenly.

Tip #6: Store the cake properly

Storing your applesauce cake properly can help it stay fresh and moist for longer. If you're not planning to serve the cake right away, you can wrap it tightly in plastic wrap or aluminum foil and store it in the fridge for up to a week. You can also freeze the cake for up to three months in an airtight container. However, make sure to thaw the cake at room temperature before serving to avoid sogginess.

Conclusion:

In conclusion, making applesauce cake recipes can be a healthy and delicious way to satisfy your sweet tooth. By following these tips and tricks, you can make your cakes moist, flavorful, and consistent every time. Remember to choose the right type and amount of applesauce, use the correct spices, adjust the baking time and temperature, add mix-ins for texture and variety, and store the cake properly. With these guidelines in mind, you can enjoy your applesauce cake recipe and impress your guests with your culinary skills.
