SIMPLE PUFF PASTRY APPLE DESSERT

Simple Puff Pastry Apple Dessert image

These are easy to make and really tasty. I just made another batch and found that I like them even better using brown sugar. I also had to add 2 tsp of flour as a thickener to this batch because the apples released a lot of juice.

Time 1h

Yield 9 turnovers, 9 serving(s)

Number Of Ingredients 8

9 puff pastry, squares (5x5)
5 apples, peeled, cored and sliced into wedges
1 teaspoon lemon juice
4 tablespoons butter
1 teaspoon cinnamon
1/3 cup brown sugar
4 tablespoons cream (you can use half and half)
3 tablespoons turbinado sugar

Steps:

  • 1. Prepare apples. I peel them and then use a corer/slicer that gives you 8 wedges. Cut each wedge into 3 pieces. Place cut apples in a bowl of water with the lemon or lime juice as you cut it so it won't discolor. When you are done cutting all apples, drain them well.
  • 2. In a very large skillet, melt the butter over a low/medium heat and toss in the apples.
  • 3. Sprinkle with cinnamon and sugar. I use golden delicious apples (NOT red delicious, which will turn to mush) Cortlands are really good too. If you use a tart apple, like granny smith, you will need to increase the sugar to 1/2-2/3 cups.
  • 4. Cook the apples until they are a little soft, but not cooked to mush. Cool for 5 minutes.
  • 5. Fill the 5x5 inch puff pastry squares & close in a triangular shape, pinching the edges well all around. Place on a baking sheet.
  • 6. Brush cream on each one & sprinkle with raw sugar.
  • 7. Place in preheated 400 degree oven until nicely browned. It usually takes about 20 minutes, but watch after 15 minutes, so that they don't burn. I have found that they bake best on the middle shelf. The tops burn on the top shelf and the bottoms burn on the bottom shelf, so bake in two batches if you have to.

PORK WELLINGTON

Pork Wellington image

Provided by Alton Brown

Categories     main-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 11

1 whole egg
1 tablespoon water
1-ounce dried apple rings
1 whole pork tenderloin, approximately 1 pound
4 1/2 ounces thinly slice prosciutto ham
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 teaspoon chopped fresh thyme leaves
1 teaspoon all-purpose flour
1 sheet puff pastry, thawed completely
1 tablespoon whole-grain mustard

Steps:

  • Place a rack in the upper third of the oven and heat to 400 degrees F.
  • Whisk the egg and water in a small bowl and set aside. Place the apple rings into the bowl of a mini food processor and process for 30 to 45 seconds or until they are the size of a medium dice. Set aside.
  • Trim the pork tenderloin of any excess fat and silver skin. Slice the tenderloin down the middle lengthwise, creating 2 separate pieces. Lay the tenderloin pieces next to each other head to tail, so when laid back together they are the same size at the ends.
  • Lay out a 12 by 16-inch piece of parchment paper on the counter and arrange the pieces of prosciutto in the center, overlapping them enough to create solid layer that is as long as the tenderloin. Top with a second piece of parchment, and using a rolling pin, roll over the prosciutto to help adhere the pieces to each other. Remove the parchment paper and sprinkle the prosciutto with the salt, pepper, and thyme. Set the tenderloin down the middle of the prosciutto. Spread the dried apples in between the 2 pieces of tenderloin and push back together so the apples are held between them. Using the parchment paper to assist, wrap the prosciutto around the tenderloin to completely enclose in a package.
  • Sprinkle the counter with flour and roll out the pastry to 12 by 14 inches. Spread the mustard thinly in the center of pastry and lay the prosciutto wrapped tenderloin in the center of the pastry on the mustard. Fold the puff pastry up and over the top of the tenderloin, then roll to completely enclose, brushing the edges of the pastry with the egg wash in order to seal. Turn the tenderloin over so the side of the tenderloin with the double thickness of pastry is underneath. Pinch the ends of the pastry to seal.
  • Brush the entire pastry with the egg wash. Place the tenderloin on a parchment lined half sheet pan and bake for 25 to 30 minutes or until the pork reaches an internal temperature of at least 140 degrees F.
  • Remove the tenderloin from the oven, transfer to a cooling rack and let rest for 10 minutes before slicing and serving.

Valuable Tips When Making Apples Wrapped in Puff Pastry Recipes

Apples wrapped in puff pastry is a delicious dessert that is perfect for any occasion. The combination of the crispness of the pastry and the sweetness of the apple makes for a heavenly dessert that can be enjoyed by everyone. To help you make the perfect apples wrapped in puff pastry, we have compiled some valuable tips.
Choose the Right Apples
When making apples wrapped in puff pastry, it is essential to choose the right apples. The best apples for this dessert are firm, crisp, and slightly tart. You want the apples to hold their shape when baked, and the sweetness should complement the pastry's buttery flavor.
Prepare the Apples
After selecting the right apples, the next step is to prepare them. You should wash the apples thoroughly and remove the cores. Cut the apples into thin slices for easier wrapping. If the apple slices are too thick, they might not cook through the pastry.
Roll the Puff Pastry
To ensure the pastry is the right thickness, you need to use a rolling pin. Roll the puff pastry out to the desired thickness. If you roll it too thin, it might break, and the apples might burst through the pastry. If it's too thick, the pastry might not cook through, leaving you with a raw center.
Season the Apples
Once the pastry is ready, place the apple slices on top of it. To add flavor to the apples, you can sprinkle them with cinnamon, nutmeg, or any other spice of your choice. You can also add sugar or honey for extra sweetness.
Wrap the Apples
The next step is to wrap the apples in the puff pastry. To do this, you need to fold the pastry over the apples and seal the edges. Seal the edges by pressing them down with a fork or your fingers. This will prevent the filling from leaking out during baking.
Egg Wash
To give the pastry a golden brown color and a shiny appearance, you need to use an egg wash. An egg wash is simply a mixture of egg and water that is brushed onto the tops of the pastry. This will give the pastry a nice brown color and a professional-looking finish.
Bake Time and Temperature
The baking time and temperature of the apples wrapped in puff pastry will depend on the recipe you are using. However, a general rule of thumb is to bake at 375°F for approximately 20-25 minutes or until the pastry is golden brown. You should also check the apples to ensure they are cooked through.
Serving Suggestions
Once your apples wrapped in puff pastry are baked, you can serve them. You can serve them warm or cold, with a dollop of whipped cream or ice cream. Garnish with fresh mint for added flavor and presentation.
Storage
If you have leftovers, you can store them in an airtight container in the refrigerator for up to three days. To reheat them, place them in a preheated oven at 350°F for about 5-10 minutes or until heated through.
Variations
You can customize your recipe by adding different ingredients to your apples wrapped in puff pastry. You can try adding chopped nuts, raisins, or other dried fruits. You can also experiment with different spices or flavored extracts to give your dessert a unique taste.
Conclusion
Making apples wrapped in puff pastry may seem intimidating, but with the right tips, anyone can make this delicious dessert. Selecting the right apples, preparing them properly, rolling out the puff pastry, adding seasoning, and egg washing are crucial steps in making the best apples wrapped in puff pastry. Enjoy your creation with your loved ones or serve it as a surprise dessert on your next dinner party!
