Time 1h15m

Yield about 1 1/2 dozen

Number Of Ingredients 12

1 1/4 cups apple cider
1 1/2 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/2 cup unsalted butter, at room temperature
1/2 cup granulated sugar, plus 3 tablespoons for rolling
1/4 cup packed light brown sugar
1 large egg
1/4 cup plus 2 tablespoons finely chopped red and green crispy apple chips, plus whole chips for garnish
2 teaspoons apple pie spice

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the cider in a medium skillet over medium-high heat until it comes to a boil. Continue to cook until syrupy and reduced to about 2 tablespoons, 12 to 14 minutes. Set aside to cool slightly.
  • Whisk the flour, cream of tartar, baking soda, cinnamon and salt in a medium bowl until smooth. Beat the butter with 1/2 cup of the granulated sugar and the light brown sugar in a separate bowl on medium-high speed until fluffy and smooth, 2 to 3 minutes. Beat in the reduced cider and the egg (the mixture may look slightly curdled). Stir in the flour mixture and 1/4 cup of the chopped apple chips until combined.
  • Stir together the remaining 3 tablespoons of granulated sugar, 2 tablespoons of chopped apple chips and the apple pie spice in a small bowl. Roll heaping tablespoons of dough into balls, using lightly moistened hands if the dough is too sticky, and then roll in the spiced sugar mixture. Place the dough balls 3 inches apart on ungreased baking sheets and top with a few pieces of whole apple chips. Bake until the edges are just set but centers are still soft, 11 to 13 minutes, rotating pans halfway through the baking time. Cool 2 to 3 minutes on the baking sheet, and then transfer to a wire rack to cool completely.

Apple Snickerdoodles are a delightful twist on the classic snickerdoodle cookie. The addition of applesauce to the dough creates a moist and flavorful cookie that is perfect for fall. Here are some valuable tips to keep in mind when making Apple Snickerdoodles.

Ingredients

Before starting the baking process, it is important to gather all the necessary ingredients. For Apple Snickerdoodles, you will need:
  • All-purpose flour
  • Baking soda
  • Cream of tartar
  • Salt
  • Unsalted butter
  • Granulated sugar
  • Light brown sugar
  • Eggs
  • Vanilla extract
  • Applesauce
  • Cinnamon

Measure Accurately

When baking, measuring ingredients accurately is crucial. Use measuring cups and spoons to ensure that you are using the correct amount of each ingredient. Over or under-measuring ingredients can greatly affect the texture and taste of the final product.

Room Temperature Ingredients

It is important to use ingredients that are at room temperature when making Apple Snickerdoodles. When butter is too cold, it won't cream properly with the sugars, and the dough will be hard to mix. If the eggs are too cold, they won't blend properly with the other ingredients.

Creaming the Butter and Sugar

One important technique to mastering Apple Snickerdoodles is to cream the butter and sugar together properly. It is important to use a mixer to ensure that the butter is whipped until it is light and fluffy. Once the sugar is added, continue to beat the mixture until it is light in color and creamy in texture. This step is crucial for the texture and flavor of the final product.

Do Not Overmix the Dough

When adding the dry ingredients to the butter-sugar mixture, be careful not to overmix the dough. Once the flour is added, mix it just enough to combine the ingredients. Overmixing can lead to tough cookies.

Use Applesauce in Place of Part of the Butter

One unique ingredient in Apple Snickerdoodles is applesauce. The applesauce provides a moist texture and flavor to the cookie while also reducing the amount of butter that is needed in the recipe. Using applesauce in place of some of the butter can reduce the overall fat content of the cookie.

Chill the Dough

Chilling the dough is essential to make the perfect Apple Snickerdoodles. Cover the dough with plastic wrap and chill it in the refrigerator for at least an hour. Chilling the dough will help the cookies maintain their shape while they are baking.

Use High-Quality Spices

Using high-quality spices can make a huge difference in the flavor of the final product. It is important to use fresh ground cinnamon for the coating on the cookies. Freshly ground cinnamon will have a stronger flavor than pre-ground cinnamon, giving the cookies a more intense cinnamon flavor.

Baking Time and Temperature

Bake the cookies at 375°F for 10-12 minutes on a parchment-lined baking sheet. Be careful not to overbake the cookies as they will continue to cook while they cool on the baking sheet.

Cooling the Cookies

When the cookies are removed from the oven, allow them to cool for about 5 minutes on the baking sheet before transferring them to a wire rack to cool completely. Cooling the cookies on the baking sheet will allow them to firm up and prevent them from falling apart.

Storage

Store Apple Snickerdoodles in an airtight container at room temperature for up to 5 days. They can also be frozen for up to 3 months. To freeze the cookies, place them in an airtight container or freezer bag and store them in the freezer. To thaw, remove the cookies from the freezer and allow them to come to room temperature before serving.

Conclusion

By following the valuable tips provided above, you can make delicious and moist Apple Snickerdoodles. Remember to measure ingredients accurately, use room temperature ingredients, cream the butter and sugar properly, and chill the dough before baking. With these tips, you'll be able to make perfect Apple Snickerdoodles every time.
