APPLE-WALNUT SALAD WITH CRANBERRY VINAIGRETTE

Apple-Walnut Salad With Cranberry Vinaigrette image

From Bon Appetit 1995. My sister discovered this, and our entire family has loved it ever since. Try throwing in some crumbled bleu cheese or gorgonzola - tremendous!

Provided by duonyte

Categories     Salad Dressings

Time 30m

Yield 6 serving(s)

Number Of Ingredients 9

1/4 cup fresh cranberries or 1/4 cup frozen cranberries, thawed
1/4 cup balsamic vinegar
1 tablespoon chopped red onion
1 tablespoon sugar
1 teaspoon Dijon mustard
1 cup vegetable oil, see Note2
10 cups mixed baby greens
2 apples, cored, thinly sliced
1/2 cup chopped walnuts, toasted

Steps:

  • Puree cranberries in processor until smooth. Add vinegar, onion, sugar and mustard and process until well blended.
  • With processor running, gradually add oil and process until well blended.
  • Transfer to medium bowl. Season to taste with salt and pepper.
  • Dressing can be made one day ahead of time and refrigerated. Bring to room temperature and whisk before using.
  • Combine greens and apples in a large bowl. Toss with enough dressing to coat and sprinkle with walnuts.
  • Serve, passing remaining dressing separately.
  • Note1: I like Granny Smiths or Jonagold apples in this, although the original recipe calls for red delicious. I sometimes dice the apples, rather than slicing.
  • Note2: This is an older recipe, and I use much less oil in it these days - maybe 2/3 cup? I just pour it in and taste until it tastes right. I use about 2/3 grapeseed or other neutral oil and 1/3 olive oil.

Apple salad with cranberry vinaigrette is a delicious and nutritious dish, perfect for any occasion. The dish is simple to prepare, with basic ingredients that are easily available in your kitchen. The recipe is incredibly versatile, giving you the freedom to experiment with different flavors and textures. Here are some valuable tips that will help you perfect your apple salad with cranberry vinaigrette recipe.

Choosing the Right Apples

Apples are the star of the show in your apple salad with cranberry vinaigrette recipe. Therefore, it's crucial to choose the right apple variety that can hold its shape in the salad and yet provide the perfect balance of sweetness and tartness. The best apple varieties for your salad include Honeycrisp, Granny Smith, Braeburn, and Pink Lady. These varieties have a firm texture, which holds up well in a salad and complements the cranberry vinaigrette dressing.

Prepping Your Apples

Once you've chosen the apples for your recipe, it's time to prep them. Before slicing or dicing your apples, ensure that you wash them thoroughly with water to get rid of any dirt or residue. It's also essential to remove the core and seeds. When slicing your apples, ensure that each piece is uniform in size to achieve an evenly balanced salad. If you're not using the apples immediately, add a bit of lemon juice to prevent them from browning.

Slicing Techniques

The texture of the apples in the apple salad with cranberry vinaigrette recipe plays a critical role in enhancing the overall taste and visual appeal of the dish. Here are some slicing techniques you can use to enhance the texture of your apples.
Vertical Cuts
One way to slice your apples for your apple salad is by using vertical cuts. Start by cutting the apple in half from the top to bottom. Next, slice each half into thin vertical strips, ensuring that each cut is even. Alternatively, you could use a mandoline or a food processor to obtain thin and uniform apple slices.
Cubed Apples
Cubing your apples adds a unique texture to your apple salad. Begin by slicing the apple into thin vertical strips. Next, stack the slices, cut them into thin pieces, and then slice them into small cubes.

Adding Crunch and Texture

A salad is only as good as its ingredients, and adding different crunch elements can take your apple salad with cranberry vinaigrette recipe to a whole new level. Here are some ingredients you can add to give your salad the perfect crunch and textural balance.
Roasted Nuts
Roasted nuts add the perfect crunch and depth of flavor to your apple salad. Walnuts, pecans, or almonds are great choices to add a nutty flavor to your salad. To enhance the nutty flavor, roast them in the oven before adding them to your salad.
Dried Fruits
Dried fruits such as cranberries, apricots, or raisins are a great addition to your apple salad. They provide sweetness and texture, and the cranberries in particular add color that complements the dressing.
Juicy Fruits
Juicy fruits such as pears, grapes, and oranges add sweetness and texture to your apple salad. The fruits cut into small pieces add a refreshing flavor and moisture to your salad.

Making the Cranberry Vinaigrette

While the apples provide the foundation of your apple salad, the cranberry vinaigrette brings everything together. It's important to achieve the perfect balance of tartness and sweetness to complement the apples' sweetness. To make the cranberry vinaigrette, you'll need cranberry juice, olive oil, honey, Dijon mustard, and apple cider vinegar. Combine all the ingredients in a bowl or mason jar and whisk or shake them together to mix well.

Assembling the Salad

Now that you have all the elements of your apple salad with cranberry vinaigrette ready, it's time to assemble the salad. In a large bowl, combine the sliced apples, any additional ingredients you've chosen, and toss everything together. Drizzle the cranberry vinaigrette over the salad, ensuring that it's distributed evenly. Finally, garnish the salad with any additional toppings of your choice, such as roasted nuts or crumbled cheese.

Conclusion

An apple salad with cranberry vinaigrette recipe is a simple and versatile dish that's perfect for any occasion. By following these tips, you can create a delicious and nutritious salad that's visually appealing and full of texture and flavor.
