PRALINE APPLE CAKE

Praline Apple Cake image

An extra-special apple cake; maybe the best I've ever had. Rich, though. I got it out of a fundraising cookbook put out by a Toronto school. I don't think I fiddled with it much; maybe I upped the apple content in my never-ending quest for truely apple-y apple cake. I haven't seen another apple cake with the praline topping.

Time 1h45m

Yield 12 serving(s)

Number Of Ingredients 12

1/2 cup butter
1 cup dark brown sugar (I use Sucanat)
2 eggs
1 3/4 cups soft unbleached flour
2 teaspoons baking powder
1 teaspoon vanilla
4 -6 large apples
1 tablespoon cinnamon
2 tablespoons sugar
2 tablespoons butter
1/2 cup sugar
1 egg

Steps:

  • Preheat the oven to 350°F Line the bottom of a 9" springform pan with parchment, and butter the pan.
  • Cream the sugar and beat in the eggs, one at a time, and the vanilla.
  • Sift the flour and baking powder into the butter and sugar.
  • Beat them in to form a smooth batter.
  • Scrape the batter into the prepared springform pan.
  • Wet your hands and pat it evenly into the pan.
  • Mix the cinnamon and sugar.
  • Peel the apples and cut them into thin slices.
  • Toss them in the cinnamon sugar and push them, on end, into the batter.
  • At first they will seem to be sticking very far out of the batter, but the apples will make the level rise as you go.
  • When all the apples are in- pack them in there- press them down slightly, so none stick out more than 1/2".
  • Sprinkle any remaining cinnamon sugar over the top.
  • Bake the cake for 45 minutes.
  • Meanwhile, cream the remaining butter and sugar, and beat in the remaining egg.
  • Spread this over the top of the cake and bake for 15 minutes more.

Time 1h55m

Number Of Ingredients 16

3 c all purpose flour
1 tsp baking soda
1 tsp salt
2 c sugar, granulated
1 tsp ground cinnamon
3 large eggs
1 1/2 c canola oil
2 tsp pure vanilla extract
4 c pared, cored and chopped apples
1 c coarsley chopped walnuts
PRALINE TOPPING
2 c firmly packed brown sugar
1 tsp pure vanilla extract
1 stick butter
1/4 c evaporated milk
1/2 c chopped walnuts

Steps:

  • 1. Preheat oven to 375 degrees. Grease bundt pan with shortening and coat with flour. Set aside.
  • 2. In a medium bowl, combine dry ingredients,(flour, salt, soda and sugar)Mix well and set aside.
  • 3. In a large bowl, beat eggs with an electric mixer until pale yellow and foamy. Add oil and vanilla and mix to blend. Add the flour mixture until all is used. The batter will be thick so if you don't have a heavy duty blender, you may want to stir the last of the flour in.
  • 4. Stir in the apples and nuts and pour into prepared bundt pan. Make sure it is equally distributed. Bake in preheated 375 oven for approximately one hour. Check to make sure it's done before taking out of the oven.
  • 5. Place on baking rack while preparing Praline Topping.
  • 6. PRALINE TOPPING
  • 7. In a medium sauce pan, add the brown sugar, stick of butter, tsp. of vanilla extract and the 1/4th cup of evaporated milk.
  • 8. Bring to a boil and cook for 5 minutes.
  • 9. While cake is still warm, place into a cake plate and top with the topping. I spread it all over the cake while keeping the remaining topping in the middle of the cake, in the hole and scoop it up. This takes a lot of patience. You want to make sure that the whole cake is covered. This helps to keep it nice and moist. Keep bringing it up from the bottom and sides until it begins to set, about 15 or 20 minutes. The end result is well worth it. Enjoy

FOR THE CREAM CHEESE FILLING:
8 oz cream cheese
1 egg
1/4 c butter, softened
1/2 c granulated sugar
2 Tbsp all-purpose flour
1 tsp vanilla
FOR THE CAKE:
1 c chopped pecans
1 1/2 lb apples, peeled and chopped (I used galas)
3 c all-purpose flour
1 c granulated sugar
1 c packed brown sugar
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp allspice
1 tsp salt
1 tsp baking soda
3 eggs, beaten
3/4 c canola oil
3/4 c unsweetened applesauce
1 tsp vanilla
FOR THE PRALINE FROSTING:
1/2 c packed brown sugar
1/4 c butter
3 Tbsp milk
1 c confectioners' sugar
1 tsp vanilla
additional pecans for garnish

Steps:

  • 1. Pre-heat the oven to 350 degrees. Grease and flour a 14-cup bundt pan.
  • 2. Start by toasting your pecans in the oven for 8 - 10 minutes or until fragrant. Be sure to toss half way through cooking time. Set aside when they are done.
  • 3. Prepare filling: Beat butter, cream cheese, and sugar until light and fluffy. Stir in egg, vanilla, and flour and mix until smooth. Set aside.
  • 4. Prepare cake: In the bowl of an electric mixer, fitted with the paddle attachment, beat sugars, canola oil, and applesauce. Add in the eggs, one by one. Stir in vanilla.
  • 5. In a separate bowl, combine flour, spices, salt and baking soda.
  • 6. Working in batches, add this to your wet mixture.
  • 7. Remove bowl from mixer and fold in pecans and apples.
  • 8. Baking: Place 2/3 of the batter into the bundt pan. Spoon in the cream cheese mixture and, using a paring knife, swirl around to incorporate evenly. Be sure to leave about an inch border, so that the cream cheese does not leak out while baking.
  • 9. Place the remaining 1/3 of the batter on top.
  • 10. Bake for 60 - 75 minutes until a toothpick comes out clean.
  • 11. Cool completely on a wire rack.
  • 12. Frosting the cake: Bring brown sugar, butter, and milk to a boil in a small saucepan, whisking constantly. Remove from heat and stir in vanilla. Be careful, as mixture will bubble up violently!
  • 13. Gradually whisk in confectioners' sugar. Allow mixture to harden slightly and pour over completely cooled cake. Garnish with additional pecans, if desired.

Apple Praline Cupcakes

Simply prepare the cake batter as directed, but instead of baking in a cake pan, divide the batter evenly among 12 lined muffin cups. Top each cupcake with a few apple slices and bake at 350 degrees F for 20-25 minutes. Once the cupcakes are baked, top each one with a spoonful of praline mixture and let cool before serving.

Spiced Apple Praline Cake

If you want to add a little extra warmth to your cake, try adding some additional spices to the batter. In addition to the cinnamon and nutmeg, try adding a pinch of allspice, ginger, or cloves. The extra flavors will complement the apples and praline nicely, creating a deliciously spiced cake.

Pear Praline Cake

If you prefer pears over apples, try making a pear praline cake instead. Simply substitute thinly sliced pears for the apples, and prepare the cake and praline topping following the same directions as above. The end result will be a deliciously fruity cake that is perfect for fall.

Have you ever tried making an apple praline dessert cake? This delightful dessert is a perfect combination of tangy apples and sweet praline topping. It's an easy recipe that can be made at home and can be a showstopper at any dinner party or dessert table. In this article, we will provide valuable tips for making the perfect apple praline dessert cake.

Tips for choosing the right apples

Choosing the right apples is key to making a delicious apple praline dessert cake. Here are some tips to keep in mind:
1. Use firm apples
It's important to choose firm apples that won't break down during the baking process. Some good options include Granny Smith, Honeycrisp, and Braeburn.
2. Consider the sweetness
Depending on your personal preference, you may want to choose apples that are more or less sweet. Sweeter apples like Gala or Fuji will create a sweeter finished product, while tart apples like Granny Smith will provide a more tangy flavor.
3. Cut them evenly
When slicing the apples, it's important to cut them evenly to ensure that they cook evenly in the oven. Use a sharp knife or a mandoline slicer for uniform slices.

Praline Topping Tips

The praline topping is what sets this dessert apart from a regular apple cake. Here are some tips to make sure your praline topping turns out perfectly:
1. Don't overcook the praline
The key to a good praline is to cook it just until it reaches the right consistency. Overcooking can cause the mixture to harden and become grainy. Keep an eye on the temperature and remove it from the heat when it reaches the right consistency.
2. Use quality ingredients
The praline topping only requires a few ingredients, so it's important to use high-quality ingredients for the best flavor. Use real butter, fresh cream, and high-quality nuts for the best results.
3. Allow time to cool and harden
After making the praline topping, allow it to cool and harden before adding it to the cake. This will make it easier to spread evenly over the top of the cake and prevent it from melting.

Baking Tips

Here are some tips for baking the perfect apple praline dessert cake:
1. Prepare the pan properly
Make sure to grease and flour the cake pan to prevent the cake from sticking. You can also use parchment paper for easier removal.
2. Preheat the oven
Preheat the oven to the temperature specified in the recipe to ensure even baking.
3. Check for doneness
Check the cake for doneness by inserting a toothpick or cake tester into the center. If it comes out clean, the cake is done.

Serving Tips

Once your cake is baked and cooled, it's time to serve it! Here are some tips for serving the perfect apple praline dessert cake:
1. Slice and plate with care
Use a sharp knife to slice the cake into even portions. Slightly warm the praline topping in the microwave or on the stovetop and drizzle it over the top of each slice just before serving.
2. Serve with whipped cream or ice cream
To add a bit of extra sweetness to your dessert, serve it with a dollop of freshly whipped cream or a scoop of your favorite ice cream flavor.
3. Add a touch of cinnamon
A sprinkle of cinnamon over the top of each slice can complement the apple flavor well and add a bit of spice to the finished product.

Conclusion

There you have it! With these valuable tips for making an apple praline dessert cake, you'll be able to create a decadent, crowd-pleasing dessert that your friends and family will love. Remember to choose the right apples, make the praline topping carefully, bake the cake properly, and serve it with care. It's an easy recipe that's sure to impress!
