APPLE-PEAR CRUMBLE PIE

Apple-Pear Crumble Pie image

I found this easy, delicious dessert in Kraft Food & Family magazine when searching for something to take to a Thanksgiving-themed potluck dinner. Everyone raved about it, and there was a lot of happiness that I had been out of pumpkin at the time, forcing me to look for something else! You can change the amount of fruit you add depending on the size of the fruit and the size of your crust- the original called for 2 apples, but I could only get 1 in my crust.

APPLE PEAR PIE

Apple Pear Pie image

This is a terrifically delicious apple pear pie. The tartness of the Granny Smith apples combines wonderfully with the pears. The apples and pears are cooked down with sugars and seasonings to a nice consistency and flavor. Cinnamon butter brushed on the crust gives it a nice color. This pie holds its shape well when sliced.

NOTE: THE MEASUREMENT FOR THE APPLES AND PEARS COULD CHANGE DEPENDING ON SIZE OF FRUIT. YOU WANT TO FILL YOUR PIE PLATE WITH FRUIT, SO YOU MAY NEED MORE OR YOU COULD USE LESS. I WOULD SAY THE FRUIT I USED WAS LARGE. SOMEONE ELSE MAY NOT AGREE.
2 - pie crust (i used pilsbury)
3 - firm but ripe pears, peeled, cored and sliced thin
2 - baking apples, peeled, cored and sliced thin
1 - lemon
3 tablespoon(s) sugar
3 tablespoon(s) brown sugar
2 tablespoon(s) all purpose flour
1/2 teaspoon(s) cinnamon
1/2 teaspoon(s) cardamom
2 tablespoon(s) butter, cubed

Steps:

  • Preheat oven to 400 degrees.
  • Place one pie crust in pie plate; set aside.
  • Squeeze juice of one lemon over fruit to prevent fruit from turning brown; set aside.
  • Combine sugars, flour, cinnamon and cardamon. Drain lemon juice off fruit; sprinkle sugar/flour mixture over fruit; toss to combine.
  • Place fruit in pie plate on top of pie crust; dab butter over fruit. Place 2nd crust on top of fruit and pierce top several time with knife of fork.
  • Bake 45 minutes. After 20 minutes of baking, loosely place a sheet of foil on top of pie to prevent crust from over browning.
  • Once pie is done, remove from oven and cool for about 20 minutes before serving.
  • Serve with a scoop of vanilla ice cream and drizzle with a caramel sauce, if desired.

Categories     dessert

Time 3h

Yield 8 to 10 servings

Number Of Ingredients 13

2 3/4 pounds Golden Delicious apples (about 6)
1 1/2 pounds Anjou pears (about 3)
6 tablespoons unsalted butter
1/3 cup granulated sugar
1/4 cup packed light brown sugar
2 teaspoons grated peeled fresh ginger
1/4 teaspoon kosher salt
1 tablespoon fresh lemon juice
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1 14-ounce package refrigerated pie dough (2 rounds)
1 large egg, lightly beaten
Turbinado sugar, for sprinkling

Steps:

  • Peel the apples and pears; slice 1/2 inch thick. Melt the butter in a large skillet over medium-high heat. Add the apples, pears, granulated sugar, brown sugar, ginger and salt. Cook, stirring occasionally, until mostly tender, 20 to 25 minutes (reduce the heat if the skillet looks dry). Remove from the heat and stir in the lemon juice, flour and cinnamon. Let cool to room temperature.
  • Meanwhile, place a baking sheet in the lower third of the oven; preheat to 450 degrees F. Cut 1 dough round into nine 1/4-inch-wide strips; cut the rest of that round into strips of varying thickness. Weave the 1/4-inch strips into 3 thin braids, 3 strips per braid (these will be for the edges). Make braids with some of the remaining strips; leave some as is. Refrigerate the braids and strips until firm, 30 minutes.
  • Line a 9-inch pie plate with the other dough round; add the filling. Arrange the dough strips and braids (except for the 3 for the edges) parallel to one another on top of the filling. Trim any excess dough around the edges. Brush the edges with beaten egg and line with the 3 thin braids; trim the excess. Brush all of the dough with egg and sprinkle with turbinado sugar.
  • Bake the pie on the hot baking sheet, 20 minutes. Reduce the oven temperature to 375 degrees F and bake until the filling is bubbling and the crust is browned, about 1 more hour. (Cover the crust with foil if it darkens too quickly.) Transfer to a rack to cool completely.

If you're a fan of fruity desserts with a boozy twist, you'll love the apple pear white wine pie. This dessert combines crisp apples and juicy pears with a touch of white wine to create a deliciously aromatic dessert. However, to make the perfect pie, there are certain tips you must follow. In this article, we will share some valuable tips for making a heavenly apple pear white wine pie recipe.

Pick the Right Apples and Pears

The first step to making a great apple pear white wine pie is to pick the right apples and pears. You want your apples and pears to be firm, fresh, and ripe to ensure they hold their shape when baked. For this reason, it is recommended to use firm-fleshed apples like Granny Smith, Honeycrisp, or Braeburn. As for pears, Bosc, Anjou, or Bartlett are ideal. These types of pears have a firm texture and can withstand baking without becoming mushy.

Tip:

Before using, make sure to wash your apples and pears. Remove any blemishes and cut them into even slices or cubes. This will ensure that they cook evenly in the pie.

Precook Fillings

To make sure your pie filling is evenly cooked and not mushy, it is best to precook the filling. Cooking the apples and pears before baking the pie will ensure they are cooked through without becoming soggy.

Tip:

Sauté your apple and pear slices in a pan with butter, sugar, and spices like cinnamon, nutmeg, or cardamom until they are tender, but not falling apart. This will add a deeper flavor and aroma to the filling. Then, stir in some white wine and cook for an additional 2 to 3 minutes until the alcohol has evaporated.

Use the Right Pie Crust

The secret to a perfect apple pear white wine pie is the crust. The crust should be crispy on the outside and flaky on the inside. You can make your pie crust from scratch by mixing flour, butter, salt, and ice water. Alternatively, you can buy ready-made pie crusts from your local grocery store.

Tip:

Brush the pie crust with an egg wash before baking to give it a deep golden brown color. Also, make sure to chill the crust for at least 30 minutes before rolling it out. This will prevent the dough from shrinking during baking.

Bake at the Right Temperature

The temperature and time of baking are crucial in making a delicious apple pear white wine pie. If the oven temperature is too high, the pie crust will burn or become over-browned, while if it is too low, the pie will be undercooked.

Tip:

Preheat your oven to 375°F and bake the pie for 45 to 50 minutes, or until the crust is golden brown and the filling is bubbling. If the crust starts to brown too much, cover it with a foil tent.

Let it Cool

It is essential to let your apple pear white wine pie cool before serving. The filling of the pie will continue to cook even after it's out of the oven. Cooling allows the filling to set and the flavors to meld together, resulting in a better texture and taste.

Tip:

After baking, let your pie cool for at least an hour at room temperature before cutting into it. This will make it easier to slice and prevent the filling from oozing out.

Conclusion

A perfect apple pear white wine pie recipe is a great addition to any meal, especially during the holidays. Follow the tips above, and you'll have a delicious, boozy dessert that will impress your friends and family.
