SWEET POTATO AND CARROT LATKES WITH SPICED APPLE-CRANBERRY RELISH

Sweet Potato and Carrot Latkes with Spiced Apple-Cranberry Relish image

While the flavor profile of these latkes is a complete departure from a classic potato latke recipe, they fry up just as crispy and lacey as ever. The spiced relish starts with a base of caramelized onions for depth and dimension. We found that the addition of one russet potato in the batter lends just enough potato starch to keep the latkes creamy on the inside without detracting from the sweet flavor of the carrots and sweet potatoes.

Provided by Food Network Kitchen

Time 2h45m

Yield about 2 dozen latkes

Number Of Ingredients 21

3 tablespoons unsalted butter
1 large yellow onion, finely chopped
Kosher salt
2 tablespoons apple cider vinegar
1 teaspoon chopped fresh thyme leaves (from 3 to 4 sprigs)
3 tablespoons light brown sugar
4 Granny Smith apples, peeled, cored and finely chopped
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon allspice
1/4 cup dried cranberries, chopped
2 large sweet potatoes
1 russet potato
3 large carrots
1 large yellow onion
2 cups all-purpose flour
1 teaspoon baking powder
2 large eggs, beaten
Kosher salt
Vegetable oil, for frying
1 cup sour cream

Steps:

  • For the spiced apple-cranberry relish: Melt the butter over medium-high in a medium pot. Add the onion, stir to coat and sprinkle with 2 teaspoons kosher salt. Reduce the heat to medium, cover the pot and cook, stirring occasionally, until the onions are translucent and just beginning to brown around the edges of the pot, about 20 minutes.
  • Add the vinegar, thyme and 1 tablespoon brown sugar and continue to cook, stirring frequently, until the onions are golden brown and very soft, about 20 minutes. Add the apples, cinnamon, ginger, allspice and remaining 2 tablespoons brown sugar and cook, stirring frequently, lower the heat if necessary, until the apples are tender, about 15 minutes. Remove from heat and stir in the cranberries. Keep warm while preparing the latkes.
  • For the latkes: Peel the sweet and Russet potatoes and shred them in a food process fitted with the shredding blade. Transfer the potatoes to a large mixing bowl as the food processor bowl fills up. Repeat with the carrots and onion. Toss the vegetables together with your hands, breaking up and evenly dispersing all the shredded vegetables throughout. Mix in the flour, baking powder and egg and sprinkle generously with salt.
  • Line a baking sheet with paper towels. Fill a large skillet with 1/2 inch of oil. Heat over medium-high heat until the oil is very hot but not smoking. To test if the oil is hot enough, drop a teaspoon of the vegetable mixture in the oil; if it sizzles steadily, the oil is ready.
  • Working in batches, scoop the vegetable mixture by 1/4 cupfuls add and them carefully to the skillet, flattening each latke slightly with a spatula. Fry until golden brown and cooked through, about 2 minutes per side. Drain on the prepared baking sheet.
  • Serve hot or keep warm in 200-degree F oven. Serve with the spiced apple-cranberry relish and sour cream.

APPLE-POTATO LATKES WITH CINNAMON SOUR CREAM

Apple-Potato Latkes With Cinnamon Sour Cream image

These latkes are golden, crunchy, salty-sweet and very satisfying, with applesauce and without. The secret here is squeezing the liquid out of the grated apple and potato mixture before frying; otherwise the latkes end up on the soft side rather than truly crisp. This is because apples are juicier than potatoes, so a firm squeeze in a clean dish towel brings down the moisture content considerably.

Categories     quick, appetizer, side dish

Time 30m

Yield About 1 1/2 dozen latkes

Number Of Ingredients 12

6 tablespoons sour cream or Greek yogurt
1/4 teaspoon ground cinnamon
1/2 teaspoon maple syrup
2 Golden Delicious apples, peeled and cored
1 large russet potato, peeled
1 medium yellow onion, peeled
2/3 cup all-purpose flour
3 large eggs
2 teaspoons kosher salt
1 1/4 teaspoons baking powder
1/2 teaspoon black pepper
Olive oil, for frying.

Steps:

  • In a small bowl, whisk together the sour cream or yogurt, cinnamon and syrup. Cover and chill until ready to use.
  • Coarsely grate the apples, potato and onion. Put the mixture in a clean dish towel and squeeze to wring out as much liquid as possible. For the crispiest pancakes, you want the least moisture.
  • Working quickly, put the mixture in a large bowl, add the flour, eggs, salt, baking powder and pepper, and mix until the flour is absorbed.
  • In a heavy-bottomed pan over medium-high heat, pour in about 1/4 inch of oil. Once the oil is hot (a drop of batter placed in the pan should sizzle), drop heaping tablespoons of batter into the pan, cooking 3 to 4 latkes at a time. Use a spatula to flatten the scoops into disks. When the edges of the latkes are brown and crispy, 2 to 3 minutes, flip them. Cook until the second side is deeply browned, another 2 to 3 minutes. Transfer the latkes to a plate lined with paper towels to drain. Repeat with the remaining batter. Serve with dollops of the cinnamon sour cream on top.

APPLE-POTATO LATKES

Apple-Potato Latkes image

A nontraditional approach to a potato latke. The shredding is done using a spiralizer, and the apple and maple syrup give you just enough sweetness to make these different. Good topped with sour cream or applesauce.

POTATO-APPLE LATKES

Potato-Apple Latkes image

These crisp potato pancakes come from the Brombergs' grandmother, Martha Finkelstein, who insisted that there is no flavor substitute for schmaltz (rendered chicken fat). Schmaltz is available at kosher delicatessens. MAKE AHEAD: The latkes can be fried early in the day and re-crisped on a baking sheet in a 350° oven. NOTES To make schmaltz, use the large clumps of fat from the neck, body cavity, and from under the skin. In a small, heavy saucepan, cook the fat over low heat until completely melted. Cool, then strain the clear fat into a glass jar and refrigerate for up to 1 week or freeze. Vanilla Applesauce makes 2 1/2 cups and can be refrigerated for up to 1 week.

Time 30m

Yield 40 2, 8-10 serving(s)

Number Of Ingredients 15

1 egg, lightly beaten
2 tablespoons all-purpose flour
1 tablespoon kosher salt
1/8 teaspoon fresh ground white pepper
4 baking potatoes, peeled and coarsely shredded (2 1/2 pounds)
1 medium onion, coarsely grated
1 granny smith apple (peeled, cored and coarsely shredded)
canola oil, for frying
schmaltz, for frying (see Note)
1 lb mcintosh apple
1 lb granny smith apple
1 cup water
1 vanilla bean, split lengthwise
1 tablespoon fresh lemon juice
sour cream, for serving

Steps:

  • In a large bowl, mix the egg with the flour, salt and white pepper. In a colander, toss the shredded potatoes with the onion and apple and squeeze dry. Add to the bowl and stir to combine. Set aside for 10 minutes.
  • In a large skillet, heat 1/2 cup of canola oil with 2 tablespoons of the schmaltz until shimmering. Spoon heaping tablespoons of the latke mixture into the oil about 2 inches apart and flatten slightly with a fork. Fry the latkes over moderately high heat until golden on the bottom, 2 to 3 minutes. Lower the heat to moderate, turn the latkes and fry until golden and crisp, about 2 minutes longer. Drain the latkes on paper towels set on a rack and transfer to a platter. Repeat with the remaining latke mixture, adding more oil and schmaltz to the skillet as needed. Serve hot with Vanilla Applesauce and sour cream.
  • Vanilla Applesauce: Peel, core and quarter the apples. In a medium saucepan, combine the apples, water, vanilla and lemon juice and bring to a boil. Cover and cook over moderately high heat, stirring occasionally, until the apples are tender, about 15 minutes. Let cool, then remove the vanilla bean and whisk until a chunky sauce forms.

SWEET POTATO-GREEN APPLE LATKES

SWEET POTATO-GREEN APPLE LATKES image

Categories     Potato     Side     Fry     Hanukkah     Vegetarian     Vegan     Kosher for Passover

Yield 20-25 latkes

Number Of Ingredients 9

2 lbs sweet potatoes, rinsed and peeled
1 lb parsnips, rinsed and peeled
1 lb green apples, rinsed
10 shallots, or 1 med onion, peeled
all-purpose flour - about a half cup
1 Tbls. coarse kosher salt
1 tsp. freshly ground black pepper
Peanut and/or Vegetable oil for frying
Serve with Sour Cream & Applesauce

Steps:

  • 1. Coarsely potatoes, parsnips, apples and shallots. If mixture is too wet, soak up some of the water with doubled paper towels or tea towel. (This step if more important when using regular potatoes to remove extra starch.) Toss together in a large bowl. 2. Add salt, and pepper to potato mixture and toss to mix well. Add enough flour to make ingredients "stick" together and form cakes 3. Pour 3/4 in. oil into a 10- to 12-in. frying pan (with sides at least 2 in. high) over medium-high heat. When oil reaches 350°, scoop 1/3 cup of potato mixture from bowl, then gently turn in hands and press into a patty about 1/3 in. thick, then gently slide pancake into hot oil. Cook 3 or 4 pancakes at a time (do not crowd pan) until edges are crispy and well browned and undersides are golden brown, 2 to 3 minutes. Gently turn and cook until other sides are golden brown, 2 to 3 minutes longer. 4. Transfer pancakes to paper bag to drain briefly, then keep warm in a 200° oven directly on wire rack while you cook remaining pancakes. Serve hot, with Sour Cream and Applesauce. Tips for Terrific Latkes: Keep oil between 300° and 350° while frying to prevent latkes from turning greasy. Check heat with a candy thermometer and adjust heat accordingly. If making latkes ahead, let cool on paper towels, then arrange in a single layer in a zip-lock plastic bag and refrigerate up to 3 days. Reheat in a 300° oven until crispy and hot, about 15 minutes.

Yield Makes 24 hors d'oeuvre servings

Number Of Ingredients 20

For the apple-horseradish mayonnaise:
1 (2-inch) piece fresh horseradish root, peeled and finely grated
1/2 cup unsweetened applesauce
2 teaspoons apple cider vinegar
1 tablespoon Pommery or Dijon mustard
1 cup mayonnaise
For the latkes:
3 pounds Yukon gold potatoes, peeled
1 pound Jerusalem artichokes, thoroughly washed
1 large yellow onion, peeled
3 large eggs, beaten
2 tablespoons minced fresh flat-leaf parsley
1/4 cup all-purpose flour, plus more as needed
About 1 1/2 cups vegetable oil for frying
To serve:
1 (14-ounce) jar taramasalata*
2 tablespoons minced fresh chives
*Taramasalata is Greek carp roe mayonnaise, and is available at Middle Eastern and Mediterranean markets. Chef Todd Aarons recommends Krinos brand.
Special Equipment
Large baking sheet

Steps:

  • Make the apple-horseradish mayonnaise:
  • In a medium bowl, stir together the horseradish, applesauce, vinegar, mustard, and mayonnaise. Season with salt and pepper. DO AHEAD: The sauce can be made and stored, in an airtight container in the refrigerator, up to 3 days.
  • Make the latkes:
  • Line a large bowl with a clean cloth napkin or lint-free kitchen towel.
  • Working in batches, use the larger side of a box grater or a food processor fitted with a grater attachment to coarsely grate the potatoes, Jerusalem artichokes, and onion. As they're grated, transfer the vegetables to the towel-lined bowl. Gather the corners of the towel and wring as much excess liquid as possible from the vegetables. Transfer the wrung vegetables to a dry mixing bowl. Add the egg and parsley and stir to combine. While stirring the mixture, gradually add the flour, stirring well to incorporate.
  • Line a large baking sheet with paper towels.
  • In a large sauté pan over moderately high heat, heat 1/4 inch of oil until hot but not smoking. Test the latke batter by frying a small amount of batter in the hot oil-it should hold together and not fall apart when flipped. If necessary, add additional flour, 1 tablespoon at a time, but try to add as little flour as possible to create light latkes.
  • Working in batches, drop 2-tablespoon-size dollops of batter into the hot oil and use the back of a spoon to press the batter into 1 1/2-inch diameter pancakes. Season with salt and pepper and fry until golden brown, about 2 minutes. Flip the latkes and continue frying until golden brown, about 2 minutes. As they finish cooking, transfer the latkes to the paper-towel-lined baking sheet.
  • To serve:
  • Arrange the latkes on a large plate or platter and top half with apple-horseradish mayonnaise and half with taramasalata. Sprinkle with minced chives and serve immediately.

APPLE LATKES RECIPE - (4/5)

Apple Latkes Recipe - (4/5) image

Provided by Kitchenbee

Number Of Ingredients 10

1 large egg
1/3 cup plain yogurt, plus 1/3 cup low-fat milk or 2/3 cup natural plain yogurt
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
2 tablespoon superfine sugar
2 apples, about 1/2-pound, about 1 cup grated apples
vegetable oil, for frying
maple syrup or confectioners' sugar and ground cinnamon for serving

Steps:

  • Beat the egg with the yogurt and milk (or just the yogurt, if you're using the plain normal variety) and set aside. Combine the flour, baking powder, baking soda, cinnamon, and sugar in a bowl. Peel, quarter and core the apples, then grate them; a food processor works well for this, but a coarse grater would work as well. Pour the yogurt mixture into the flour bowl, add in the grated apples and fold it together. Pour enough oil to come to about ¼-inch up in a skillet and put on the stove to heat. Dollop spoonfuls of the apple batter into the sizzling oil; a rubber spatula will help you scrape the batter off the spoon and press down on the latkes in the pan. Fry for 1 or 2 minutes, until the latkes are golden brown on the undersides; you can see from the top as they start firming up underneath. Flip them with 2 metal spatulas and fry for another minute on the cooked side. Remove to a tray lined with paper towels to blot the excess oil and continue cooking until you've used up all the batter. Top with maple syrup.

Yield Serves 4

Number Of Ingredients 10

4 tart or sweet apples
2-3 tablespoons sugar
3 tablespoons brandy, dark rum, or fruit liqueur
2 eggs, separated
2 tablespoons light vegetable oil
a good pinch of salt
1 cup (150 g) flour
7/8 cup (200 ml) water
vegetable oil for frying, preferably sunflower
superfine sugar for sprinkling on after serving

Steps:

  • Core and peel the apples and cut each into 4 thick slices. [See how to peel and core on streaming video.] Put them in a shallow dish with the sugar and brandy, rum, or liqueur, and turn them so that they are well coated. Leave for at least 1 hour, turning the slices over occasionally, so that they absorb the spirit.
  • For the batter, beat the yolks with the oil and salt, then stir in the flour and mix well. Now beat in the water gradually and vigorously, squashing any lumps. Leave for an hour, then fold in the stiffly beaten egg whites.
  • Heat at least 3/4 inch (2 cm) of oil in a large frying pan. Dip the apple slices in the batter - about 5 at a time - making sure that they are well covered with batter. Lift each one out carefully and lower into the hot oil. The oil must be sizzling but not too hot or the fritters will brown before the apple is soft inside. Fry in batches, and turn the slices over to brown both sides. Lift out with a slotted spatula and drain on kitchen paper before serving. Pass the superfine sugar for everyone to sprinkle on.
  • Variations:
  • • You may use beer or milk instead of water for the batter. • Pass powdered cinnamon and sugar around for people to sprinkle on.

APPLE LATKES

Apple Latkes image

Provided by Nigella Lawson : Food Network

Time 35m

Yield 20 latkes

Number Of Ingredients 11

1 large egg
1/3 cup plain Greek yogurt plus 1/3 cup low-fat milk, or 2/3 cup natural plain yogurt
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
2 tablespoons superfine sugar
2 apples (1/2 pound), to make
1 cup grated apples
Vegetable oil, for frying
Maple syrup (or confectioners' sugar and ground cinnamon), for serving

Steps:

  • Beat the egg with the yogurt and milk (or just the yogurt, if you're using the plain normal variety) and set aside. Combine the flour, baking powder, baking soda, cinnamon and sugar in a bowl. Peel, quarter and core the apples, then grate them; I use a food processor, but a coarse Microplane or other grater would work easily, I'd imagine.
  • Pour the yogurt mixture into the flour bowl, tip in the grated apples and fold it together.
  • Pour enough oil to come about 1/4 inch up in a skillet and put on the stove to heat. Dollop spoonfuls -- I use a round soup spoon -- of the apple batter into the sizzling oil; a rubber spatula (the one you used to fold the batter together) will help you scrape the batter off the spoon and press down on the little latkes in the pan. Don't worry about making perfect round pancakes; I like these a bit raggedy and skew-whiff. Fry for a minute or two, until the latkes are a golden brown on the undersides; you can see from the top as they start firming up underneath. Flip them with 2 metal spatulas and fry for another minute on the uncooked side.
  • Remove to a tray lined with paper towels to blot the excess oil and continue cooking until you've used up all the batter. Top with maple syrup.

SWEET POTATO AND APPLE LATKES WITH GINGER AND SWEET SPICES

Sweet Potato and Apple Latkes With Ginger and Sweet Spices image

I found that the best way to make these so they cook through without burning is to make small latkes, using about 2 tablespoons of the mixture for each one. You can also finish them in the oven.

Provided by Martha Rose Shulman

Categories     dinner, main course

Time 45m

Yield About 40 small latkes, serving 6 to 8

Number Of Ingredients 12

1 1/2 pound red-fleshed sweet potatoes (yams), peeled and grated - about 5 cups grated
1 cup grated apple, preferably a slightly tart variety such as Braeburn
2 teaspoons fresh lime juice
1 to 2 teaspoons grated fresh ginger (to taste)
2 teaspoons ground cinnamon
1/2 teaspoon freshly grated nutmeg
1 teaspoon baking powder
Salt to taste
3 tablespoons oat bran
3 tablespoon matzo meal or all-purpose flour
2 eggs, beaten
About 1/4 cup canola, grape seed or rice bran oil

Steps:

  • Begin heating a large heavy skillet over medium heat. Heat the oven to 350 degrees. Line a sheet pan with parchment and place a rack over another sheet pan.
  • Place the grated sweet potatoes in a large bowl. Toss the grated apple with the lime juice and add to the sweet potatoes, along with the ginger, spices, baking powder, salt, oat bran and matzo meal or flour. Taste and adjust salt. Add the beaten eggs and stir together.
  • Take a 1/4 cup measuring cup and fill with 2 tablespoons of the mixture. Reverse onto the parchment-lined baking sheet. Repeat with the remaining latke mix. You should have enough to make about 40 latkes.
  • Add the oil to the pan and when it is hot (hold your hand a few inches above - you should feel the heat), slide a spatula under one portion of the latke mixture and press down with the spatula to flatten. Repeat with more mounds. In my 10-inch pan I can cook four at a time without crowding; my 12-inch pan will accommodate five or six. Cook on one side until golden brown, about three minutes. Slide the spatula underneath and flip the latkes over. Cook on the other side until golden brown, another two to three minutes. Transfer to the rack set over a baking sheet. Try one latke and if it is still a bit chewy in the middle transfer them to the baking sheet and place in the oven for 10 minutes, until golden brown and soft in the center.
  • Serve hot topped with applesauce and low-fat sour cream, thick Greek yogurt or crème fraîche if desired.

APPLE LATKES FROM NIGELLA LAWSON

APPLE LATKES FROM NIGELLA LAWSON image

Number Of Ingredients 12

Ingredients
1 large egg
1/3 cup plain Greek yogurt plus 1/3 cup low-fat milk, or 2/3 cup natural plain yogurt
1 cup Gluten Free Flour blend or Sweet Rice Flour (bean flours or chickpea flour blends NOT recommended)
1/4 teaspoon xanthan gum
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
2 tablespoons superfine sugar
2 apples (1/2 pound), to make 1 cup grated apples
Vegetable oil, for frying
Maple syrup (or confectioners' sugar and ground cinnamon), for serving

Steps:

  • Directions Beat the egg with the yogurt and milk (or just the yogurt, if you're using the plain normal variety) and set aside. Combine the Gluten Free flour, xanthan gum, baking powder, baking soda, cinnamon and sugar in a bowl. Peel, quarter and core the apples, then grate them; I use a food processor, but a coarse Microplane or other grater would work easily, I'd imagine. Pour the yogurt mixture into the flour bowl, tip in the grated apples and fold it together. Pour enough oil to come about 1/4 inch up in a skillet and put on the stove to heat. Remove to a tray lined with paper towels to blot the excess oil and continue cooking until you've used up all the batter. Top with maple syrup.

APPLE LATKES

Apple Latkes image

Due to a craving (and a convenient epicurious e-recipe e-mail!), I found this recipe, which is seemingly just in time for a Jewish holiday, no? I like apples, and I like latkes, so how could they be bad? :)

Categories     Apple

Time 40m

Yield 16 latkes, 4 serving(s)

Number Of Ingredients 10

4 apples (tart or sweet)
2 -3 tablespoons sugar
3 tablespoons dark rum or 3 tablespoons fruit liqueur
2 eggs, separated
2 tablespoons light vegetable oil
1 teaspoon salt, to taste
1 cup flour
7/8 cup water
vegetable oil, preferably sunflower (for frying)
superfine sugar, for sprinkling on after serving

Steps:

  • Core and peel the apples and cut each into 4 thick slices.
  • Place in a shallow dish with the sugar and brandy, rum, or liqueur, and turn them so that they are well coated.
  • Marinate for at least one hour, so they can absorb the liqueur, liquor. Turn occasionally.
  • For the batter, beat the yolks with the oil and salt, then stir in the flour and mix well.
  • Beat in the water gradually and vigorously, mix until completely smooth.
  • Leave for an hour, then fold into stiffly beaten egg whites.
  • Heat at least 2 cm of oil in a large frying pan. Dip the apple slices in the batter - about 5 at a time - making sure that they are well covered with batter.
  • Lift each one out carefully and lower into the hot oil.
  • The oil must be sizzling but not too hot or the fritters will brown before the apple is soft inside.
  • Fry in batches, and turn the slices over to brown both sides.
  • Lift out with a slotted spatula and drain on paper towels before serving.
  • Pass the superfine sugar for everyone to sprinkle on.

Apple latkes refer to a traditional Jewish dish that is made of grated potatoes mixed with other ingredients and deep-fried to form crispy pancakes. The dish is commonly served during the Hanukkah holiday, and it has evolved over time with the addition of other ingredients, including apples. In this article, we will explore what apple latkes recipes are and the different variations available.

History:

The initial latkes recipe did not contain apples; it was a simple mixture of grated potatoes, onions, and eggs. The Ashkenazi Jews from Eastern Europe prepared this recipe during the Hanukkah festival to celebrate the miracle of the oil that burned for eight days. Over time, the latkes recipe has evolved, and Jews in different parts of the world have added their local ingredients to make the dish more flavorful.

Ingredients:

As mentioned earlier, traditional latkes recipes use grated potatoes and onions as the main ingredients. To make apple latkes, one needs to add grated apples to the mix. In addition to the potatoes, onions, and apples, other ingredients commonly used in apple latkes include eggs, flour, salt, and pepper.

Variations:

1. Sweet vs. savory apple latkes

Apple latkes can be either sweet or savory, depending on the recipe. For the sweet latkes, one can add cinnamon and sugar to the mixture, while for savory ones, garlic or chives can be incorporated.

2. Gluten-free apple latkes

For those with gluten intolerance, using gluten-free flour in apple latkes can make the dish more inclusive and enjoyable.

3. Vegan apple latkes

To make apple latkes vegan, one can use a flax egg instead of a regular egg. It involves mixing ground flaxseed with water and allowing it to sit for a few minutes to form a gel-like substance. This mixture can then be used to bind the ingredients together.

4. Different types of apples

The type of apples used can also create different flavors in apple latkes. Tart apples like Granny Smith can bring out a tangy taste, while sweet apples like Honeycrisp can make the latkes sweeter.

Preparing and frying apple latkes:

To make apple latkes, one needs to first grate the potatoes, onions, and apples finely. Squeezing out excess moisture from the mixture using a cheesecloth or a clean kitchen towel is also necessary. The dry mixture is then mixed with eggs, flour, salt, and pepper to form a batter.

Having a well-heated skillet with oil is crucial for frying apple latkes. One can use a non-stick pan or a cast-iron skillet to fry the latkes until they are golden brown and crispy. Using a spatula to flip the latkes over helps avoid breaking them apart.

Serving apple latkes:

The crispy and delicious apple latkes can be served hot, topped with sour cream, apple sauce or sprinkled with powdered sugar. Some people prefer serving them as a side dish, while others enjoy them as a dessert.

Conclusion:

In summary, apple latkes recipes are a delicious variation of the traditional Jewish dish usually prepared during the Hanukkah festival. The addition of grated apples to the classic potato and onion mixture creates a unique and more flavorful pancake. There are different alternatives to the recipe, including gluten-free and vegan, which make the dish more inclusive. Depending on how one chooses to serve them, apple latkes can be either sweet or savory and are versatile in creating an enjoyable dish.

Apple latkes are a delicious variation to the traditional potato latkes. They are perfect for snack time, breakfast, brunch and even as a dessert with maple syrup. Making apple latkes can be a bit different from potato latkes, but with the right tips and techniques, you can make perfect apple latkes every time.

Choose the Right Apples

Choosing the right apples for apple latkes is essential. You want apples that are slightly tart and firm, such as Granny Smith or Honeycrisp apples. Avoid using soft and mushy apples as they won't hold up well when grated and fried.

Grate the Apples After Peeling

Once you have selected the right apples, it's time to prepare them for the latkes. Peel and core the apples, and then grate them using the large holes of a box grater or a food processor. Grating the apples after peeling them will ensure that the latkes are not too watery and have a firm texture.

Drain Excess Liquid from the Grated Apples

After grating the apples, place them in a colander and press them with a clean kitchen towel or paper towel to remove excess liquid. This step will ensure that the latkes don't become too soggy and are crispy on the outside.

Don't Overmix the Batter

When it comes to making latkes, it's important not to overmix the batter. Overmixing can lead to tough and chewy latkes. Simply mix the grated apples with some flour, egg, cinnamon, and sugar to form a batter that is thick enough to hold its shape on a spoon.

Use a Non-Stick Skillet or Griddle

When making apple latkes, it's best to use a non-stick skillet or griddle. This will ensure that the latkes don't stick to the surface and are evenly cooked. If you don't have a non-stick skillet or griddle, be sure to generously oil the surface before cooking the latkes.

Cook Over Medium Heat

Cooking the latkes over medium heat will ensure that they are cooked through without burning. If the heat is too high, the latkes will cook too quickly on the outside and remain raw on the inside. If the heat is too low, the latkes will take too long to cook, and become greasy and soggy.

Turn Only Once

It's important to turn the latkes only once while cooking. Flipping them too often can cause them to break apart and lose their shape. Allow the latkes to cook for 2-3 minutes on one side and then flip them over to cook for another 2-3 minutes on the other side.

Pat Dry on Paper Towel

After cooking, pat the latkes dry with a paper towel or a kitchen towel to remove excess oil. This step will ensure that the latkes are crispy on the outside and not too greasy.

Serve Hot with Toppings

Apple latkes are best served hot with toppings such as sour cream, applesauce, cinnamon sugar or maple syrup. You can also garnish them with chopped nuts or fresh fruit to add a pop of color and flavor.

Conclusion

Making apple latkes can seem like a daunting task, but with the right tips and techniques, you can make perfect apple latkes every time. Remember to choose the right apples, grate them after peeling, drain excess liquid, don't overmix the batter, use a non-stick skillet or griddle, cook over medium heat, turn only once, pat dry on paper towel and serve hot with toppings. Now you're ready to make delicious apple latkes that will be a hit with your family and friends!
