POTATO PANCAKES - QUICK image

Yield 8 pancakes

Number Of Ingredients 12

1 c instant mashed potato flakes
1/3 c sifted cake flour (sub w/ soy flour)
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 c skim milk
1/2 c green vegetables, minced
1/2 c minced onion
2-3 eggs, beaten
Dash each pepper and ground nutmeg
2 tbsp vegetable oil for frying
1 c applesauce (no sugar added)for topping

Steps:

  • 1. Combine potato flakes and flour. 2. Blend in remaining ingredients. Fry until browned; turn pancakes and brown other side. Serve with applesauce, sour cream, plain yogurt or even (the boys' idea) cranberry relish.
