APPLE-CRANBERRY BUNDT CAKE (EGG-FREE, FAT-FREE)

Apple-Cranberry Bundt Cake (Egg-Free, Fat-Free) image

This is a much healthier version of a classic bundt cake. For those with food allergies or who are looking to decrease fat/cholesterol intake, this recipe is egg-free and fat-free. This cake turns out moist with bits of apple and tart cranberry nestled within tender vanilla cake with warm autumnal spices. (Made for a dear relative, who has an egg allergy and was facing gall bladder attacks at the time this recipe was created).

Provided by MarthaStewartWanabe

Categories     Dessert

Time 45m

Yield 10-12 serving(s)

Number Of Ingredients 21

1 cup sugar
3/4 cup applesauce
2 tablespoons cornstarch
1 tablespoon water, warm
1 cup milk, non-fat
2 teaspoons vanilla extract
2 teaspoons cinnamon, ground
1/4 teaspoon nutmeg, ground
1/4 teaspoon ginger, ground
1/8 teaspoon clove, ground
2 cups flour
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup cranberries, whole (fresh or frozen)
1 cup apple, peeled and finely chopped

  • Cool on a wire rack for 30 minutes and turn out onto a cake pedestal or plate.
  • Glaze:.
  • Place powdered sugar and cinnamon in a small bowl. Add vanilla and stir in milk one tablespoon at a time until smooth. If a thinner or thicker consistency is desired, add less or more milk as you wish.
  • Spoon evenly over cake.
  • Garnish:.
  • If desired, place cranberries into the center of the cake and around the base of the cake plate mostly for festive presentation.

FRESH APPLE,CRANBERRY AND RAISIN CAKE

FRESH APPLE,CRANBERRY AND RAISIN CAKE image

Categories     Cake     Fruit     Dessert     Bake     Quick & Easy

Yield Serves about 10 mini-loafs.

Number Of Ingredients 12

2 eggs
1 cup of vegetable oil
1 tsp. vanilla
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. salt
3 cups of flour
2 cups of sugar
2 cups of chopped Gala Apples
3/4 cup of walnuts/pecans
1/2 dried sweetened cranberries
1/2 cup of raisin (golden or reg.)

Steps:

  • Combine eggs, oil, sugar, cinnamon and vanilla. Slowly mix flour, salt and soda into egg mixture. Mix apples, cranberries, walnuts and raisins. Combine well, mixture will be thick and difficult to mix throughly. Use muscle to do so. Don't worry about crushing the apples - they melt/smoother into the batter beautifully. Before pouring batter into a bunt cake pan (recipe works great also on mini-loafs, loafs, 9x11 bakinh dish, etc.) Coat bottom of pan with a generous helping of butter and evenly sprinkle light brown sugar on the base of the pan. Make sure batter is evenly spread so no disportion of baking occurs. Bake at 350 for 25-30 Minutes. Depending upon wish baking pan is desired, it may take 15-20 minutes longer if batter is cooked in a larger pan. Rule of thumb - check with clean knife and check center of cake and if you get any batter residue, cook for another 10 minutes. Let cool completely before removing from pan.

Apple cranberry cake is a delicious dessert that perfectly combines the tartness of cranberries with the sweetness of apples. This cake can be served with a dollop of whipped cream or a scoop of vanilla ice cream, making it the perfect dessert for any occasion. However, making this cake can be a bit of a challenge, especially if you are not an experienced baker. In this article, we will provide some valuable tips that you can use to make the perfect apple cranberry cake.

Tip #1: Use Fresh or Frozen Cranberries

The first tip for making a perfect apple cranberry cake is to use fresh or frozen cranberries. Dried cranberries may seem like a good option, but they can make the cake too sweet and chewy. Fresh or frozen cranberries, on the other hand, have a tangy flavor that complements the sweetness of the apples.

Tip #2: Use Firm Apples

The second tip is to use firm apples. When making an apple cranberry cake, you want apples that can hold their shape and texture during baking. If you use soft or mushy apples, they will not only affect the texture of the cake but also make it too sweet.

Tip #3: Preheat Your Oven

The third tip is to preheat your oven before you start baking. This step is important because it ensures that the cake will cook evenly and rise properly. When you put the cake in a cold oven, it will take longer to heat up, which can affect the texture of the cake.

Tip #4: Use Room Temperature Ingredients

The fourth tip is to use room temperature ingredients. This means that you should take your butter and eggs out of the refrigerator a few hours before you start baking. Room temperature ingredients will mix together more evenly, resulting in a smoother cake batter.

Tip #5: Don't Overmix the Batter

The fifth tip is to avoid overmixing the batter. Overmixing can lead to a tough and rubbery texture, which is not ideal for a cake. Mix the batter until it is just combined, and then stop. A few lumps in the batter are ok; they will disappear during baking.

Tip #6: Add a Binding Agent

The sixth tip is to add a binding agent to the cake batter. This can be an egg, yogurt, or even applesauce. A binding agent will help the cake hold together and prevent it from being too crumbly.

Tip #7: Use a Bundt Pan

The seventh tip is to use a bundt pan when baking your apple cranberry cake. Bundt pans have a unique shape that allows the cake to cook more evenly, resulting in a moist and tender cake. Plus, the shape of the bundt pan makes the cake look more impressive, perfect for serving at special occasions.

Tip #8: Add Some Spices

The eighth tip is to add some spices to the cake batter. Cinnamon, nutmeg, and allspice are popular options that work well with the flavors of apples and cranberries. Spices will add depth and complexity to the cake and make your taste buds dance.

Tip #9: Let the Cake Cool Before Serving

The ninth tip is to let the cake cool before serving. When you take the cake out of the oven, it will still be hot and fragile. If you try to remove it from the pan too soon, it could break or fall apart. Allow the cake to cool to room temperature before removing it from the pan and serving it.

Tip #10: Experiment with Toppings

The tenth and final tip is to experiment with toppings. While apple cranberry cake is delicious on its own, it can be even better with a little extra something on top. Whipped cream, caramel sauce, and powdered sugar are popular options that can take your cake to the next level.
Conclusion
Making a perfect apple cranberry cake is not an easy task, but with these valuable tips, you can create a delicious dessert that will impress your family and friends. Remember to use fresh or frozen cranberries, firm apples, room temperature ingredients, and a bundt pan to achieve the best results. Don't be afraid to experiment with spices and toppings to make the cake even more delicious. With these tips, you are sure to create a cake that will be the talk of the town.
