APPLE COLE SLAW

Categories     Fruit

Time 25m

Yield 6 serving(s)

Number Of Ingredients 9

3 cups chopped cabbage
1 unpeeled red apple, cored and chopped
1 unpeeled Granny Smith apples, cored and chopped
1 carrot, grated
1/2 cup finely chopped red bell pepper
2 green onions, finely chopped
1/3 cup mayonnaise
1/3 cup brown sugar
1 tablespoon lemon juice (to taste)

Steps:

  • 1. In a large bowl, combine cabbage, red apple, green apple, carrot, red bell pepper, and green onions. In a small bowl, mix together mayonnaise, brown sugar, and lemon juice. Pour dressing over salad.
  • My Note: You don't care for bell pepper and onions in our slaw, so I left them out and it was still scrumptious. Here is a little tip I heard about from a chef on the cable food network. As you know all veggies have quite a bit of water so if you but the cabbage in a colander and sprinkle a little salt over it. It will remove the excess water from the cabbage. This process takes about 30 minutes to an hour but it gives you a very crisp cabbage and the slaw is not watery. I did differently was to put a tablespoon of lemon juice on the apples while I chopped up the rest of the ingriedients, I did this the first time I made the salad, I didn't do it the second time and the apples turned brown after 2 days. I still added the lemon juice that the recipe calls for.
  • For a change of pace, I occasionally throw in pecans or sunflower seeds for a little something different -- This has joined a list of favorites in our household! I only used 1/4 cup of brown sugar and added a couple Tbl. of cider vinegar in addition to the lemon juice.
  • I always buy a pre-shredded cabbage/carrot mixture to make prep easier and also change up the apples from time to time (try Fuji or Gala, you must keep the granny smith though for the tartness). I skip the red pepper and sometimes add a little extra dressing. This is WONDERFUL and keeps for several days.

APPLE-RAISIN COLE SLAW WITH SOUR CREAM DRESSING

Apple-Raisin Cole Slaw with Sour Cream Dressing image

I usually use vinaigrette dressings on my cole slaws, but I needed one that was more conventional and less pickle-y to take to an office pot-luck. This one has a more familiar creamy dressing and nice sweet and tangy flavors.

Categories     Fruit Salads

Number Of Ingredients 9

1/3 cup(s) mayonnaise or miracle whip
1/3 cup(s) sour cream
1 tablespoon(s) brown sugar
1 tablespoon(s) apple cider vinegar
1/2 - green cabbage
2 - apples
2 - carrots
1 cup(s) raisins
1 cup(s) chopped pecans

Steps:

  • Combine the mayonnaise, sour cream, brown sugar, and vinegar. Whip with a fork and set aside while you prepare the salad.
  • Shred or finely slice the cabbage.
  • I used 1 sweet-tart Jonagold and 1 sour Granny Smith apple, but you can use any variety you like. Core and chop (I did not peel them).
  • Peel and coarsely grate the carrots.
  • I used half golden and half black raisins. I think dried cranberries would be even better. You can use more than 1 cup if you like.
  • Toss cabbage and fruits in a large bowl. Dress and toss again to coat everything in mayonnaise-sour cream mixture. Allow to marinate in the refrigerator for a few hours.
  • Garnish with nuts just before serving. (The nuts will get soggy if you add them at the same time as everything else.)

What is Apple Coleslaw?

Apple coleslaw is a side dish made with shredded cabbage, often mixed with other vegetables and fruits, and dressed with a light and flavorful dressing. Fruity Apple Coleslaw:
Add fresh strawberries, blueberries, and sliced kiwi to the coleslaw for a fruity twist. Use a honey or poppy seed mayonnaise dressing for extra sweetness.
Spicy Apple Coleslaw:
Add jalapenos or other hot peppers to the coleslaw for a spicy kick. Use a mayo-based dressing with chili powder and cumin for a southwestern flavor.

In general, you want to choose apples that are firm, crisp, and slightly tart. Some good apple varieties for cole slaw include Granny Smith, Honeycrisp, and Braeburn.

Tip #2: Grate the Apples Correctly

The way you grate the apples for your cole slaw can also affect the texture and flavor of your salad.
