Time 2h

Yield 12 bars

Number Of Ingredients 15

1 pound (4 sticks) unsalted butter, at room temperature
3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
4 cups all-purpose flour
1 1/2 teaspoons kosher salt
1/2 cup chopped walnuts
1 teaspoon ground cinnamon
1 1/2 pounds Granny Smith apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
1 1/2 pounds Golden Delicious apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
2 tablespoons freshly squeezed lemon juice
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • Preheat the oven to 375 degrees.
  • For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
  • Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
  • Reduce the oven to 350 degrees.
  • For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
  • Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.

  • Cool completely and cut into bars. Store in air-tight container to retain moisture.
  • Note: If you prefer sweeter, add 1/4 cup sugar to batter of bars, but remember the apple juice from the grated apples will provide some sweetness. We enjoy it as is because the carmel frosting is sweet. Also, we have had them with no frosting and just a sprinkling of powdered sugar on top. Enjoy!

Valuable Tips for Making Delicious Apple Cake Bars

Apple cake bars are a popular dessert that is enjoyed by many people across the globe. They are easy to make and are perfect for any occasion. Whether you are a beginner or an experienced baker, there are a few valuable tips that you need to keep in mind when making apple cake bars. Here are a few tips that will help you make delicious apple cake bars.

Tip 1 - Choosing the Right Apples

It is essential to choose the right apples when making apple cake bars. Not all apples are suitable for baking. Some types of apples break down too easily and create a mushy texture in the cake bars. To avoid this, it is advisable to use firmer apples such as Honeycrisp, Granny Smith, or Braeburn apples. These apples will hold their shape and keep the cake bars firm and moist.

Tip 2 - Preparing the Apples

Before adding the apples to the cake bar batter, it is important to prepare them correctly. First, you need to peel the apples and remove the core. Then, cut the apples into thin slices or small chunks. It is essential to cut the apples into small pieces to ensure that they cook evenly and are distributed evenly throughout the cake bars.

Tip 3 - Adding Spices

Adding spices to your apple cake bars will enhance the flavor and aroma of the dessert. Common spices used in apple cake bars include cinnamon, nutmeg, and allspice. You can mix these spices with the apple slices before adding them to the cake bar batter or sprinkle them on top of the batter before baking.

Tip 4 - Using the Right Pan

The type of pan you use when making apple cake bars is important. It can affect the texture and baking time of the dessert. Using a 9x13 inch baking pan is ideal for making apple cake bars. This size pan provides enough space for the cake bars to rise and cook evenly.

Tip 5 - Baking Time and Temperature

To ensure that your apple cake bars are perfectly baked, it is important to follow the baking time and temperature recommended in the recipe. Overcooking the cake bars can make them dry and hard, while undercooking can leave them soggy and uncooked. Typically, apple cake bars should be baked for 30-40 minutes at 350°F. However, this can vary depending on your oven and the altitude of your location.

Tip 6 - Cooling the Cake Bars

Once you have taken the apple cake bars out of the oven, you need to cool them before serving or adding any toppings. Cooling the cake bars allows them to firm up and develop a better texture. You can let them cool on the counter or in the refrigerator for a few minutes before cutting them into bars.

Tip 7 - Adding Toppings

Adding toppings to your apple cake bars can make them more flavorful and visually appealing. Some popular toppings include whipped cream, caramel sauce, powdered sugar, or a drizzle of icing. You can also top them with nuts or dried fruits for added texture and flavor.

Tip 8 - Storing and Serving

Apple cake bars can be stored in the refrigerator for up to five days. To keep them fresh, store them in an airtight container or cover them with plastic wrap. For best results, serve them at room temperature or slightly warmed up. You can also heat them up in the oven or microwave for a few seconds before serving.

Conclusion

Making apple cake bars is a fun and delicious way to enjoy the flavors of fall. By following these tips, you can ensure that your apple cake bars turn out moist, flavorful, and visually appealing. Whether you are making them for a special occasion or just for a treat, these tips will help you create a dessert that everyone will love.
