Summer Squash & Pepper Saute image

2 yellow summer squash, halved lengthwise and cut into 1/4-inch slices
1 medium sweet orange pepper, cut into thin strips
2 tablespoons butter
3 green onions, chopped
2 teaspoons brown sugar
2 teaspoons lemon juice
1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Saute squash and orange pepper in butter in a large skillet until crisp-tender. Add remaining ingredients; cook 4-5 minutes longer or until sugar is dissolved and vegetables are tender.
