This is one of my newly adopted recipes. I tossed this together tonight while fixing dinner. Very quick and easy dessert. I used regular apple butter, but no added sugar apple butter could be used as well.

2 cups old fashioned oats
1 cup all-purpose flour
3/4 cup sugar
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup butter or 3/4 cup margarine, softened to room temperature
1 cup apple butter

Steps:

  • Heat oven to 350 degrees.
  • Grease 9-inch square baking pan with nonstick cooking spray.
  • In large bowl, combine oats, flour, sugar, salt and cinnamon.
  • Add butter and beat with electric mixer on low until mixture is crumbly.
  • Pat half of the mixture, about 2 cups into baking pan.
  • Spread apple butter evenly over crumb layer.
  • Sprinkle remaining crumbs over apple butter and press down gently.
  • Bake 30-35 minutes or until golden.
  • Transfer pan to wire rack and cool completely.
  • Cut into 16 bars.

1 teaspoon salt
2 ½ cups rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Mix flour, baking soda, and salt together in a large bowl; add oats and sugar. Stir in margarine until well incorporated. Press half the oat mixture into the prepared baking pan. Spread apple butter over oat mixture layer. Sprinkle remaining oat mixture over apple butter layer. Press top layer gently with a spoon.
  • Bake in the preheated oven until oat mixture is crisp and lightly browned, about 55 minutes.

I have had this recipe for years and recently started making it after not finding any other oatmeal bars that were a nice combination of good nutrition and good flavor. Not overly sweet and fattening like a cookie, but not so ultra healthy they aren't appealing to kids. You can adapt the recipe, adding any dried fruit you like, use part whole wheat, add some ground flax, my 3 year old likes adding some mini chocolate chips on top. Can't argue with that! Great for breakfast or a afternoon snack.

1/4 cup applesauce
1/2 cup peanut butter
1 cup brown sugar
1/3 cup granulated sugar

I rarely cook anything for breakfast. A typical breakfast for me consists of a whole wheat bagel thin with peanut butter and honey, some days I top it with sliced bananas. On the side I generally have a glass of V8-Fusion juice and a cup of tea. In the spirit of the Healthy Eats January Challenge, I thought I'd whip up a healthy, easy and quick (only 20 minutes cook time) breakfast that can be enjoyed by the whole family. Seeing as it is National Oatmeal Month, it seemed fitting that oatmeal be at the heart of today's breakfast. Feel free to substitute another fruit instead of the apple or used dry ingredients. Just make sure that your dried fruit isn't loaded with sugar or other artifical ingredients.

2 cups Quaker Oats
1/4 cup smooth peanut butter
1 tablespoon butter
2 tablespoons vegetable oil

Steps:

  • Preheat oven to 350 degrees F.
  • Grease an 11x7 inch baking pan. If you don't have one, you can use an 8x8, 9x9, or if neceessary an 11x13.
  • Place peanut butter and butter in a microwave safe dish. Heat in the microwave for 30-45 seconds or until butter is melted. Stir together.
  • Place all ingredients, except fruit, into a bowl. Using an electric beater or KitchenAid mixer, beat ingredients together for approximately 1 minutes.
  • Peel a whole apple and thinly chop into pieces, no larger than the size of your thumb nail.
  • Stir the apples into the oatmeal mixture.
  • Pour the mixture into greased pan and press entire mixture down firmly with your fingers.
  • Place pan into the oven and cook for 25 minutes or until edges are golden brown. If you are using an 11x13 pan, it will take a bit less time because the mixture will be much thinner.
  • Let cool for 10 minutes before slicing into strips. Let the remaining bars cool entirely before you place in tupperware or wrap them in foil.

1 tsp baking soda
1 tsp salt
2 1/2 c uncooked quick oats
1 1/2 c sugar
1 c butter/margarine, melted
1 1/2 c apple butter (or other jam/jelly/preserves/etc)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In large mixing bowl, combine the all-purpose flour, baking soda, and salt Add the oats and the sugar. Stir in the melted butter and mix well. Press half of the mixture into a greased 13x9x2 inch pan. Top with apple butter.
  • 3. Sprinkle rest of the crumb mixture on top; press gently with a spoon. Bake at 350 degrees 55 minutes or till lightly brown. Cool and cut into bars.

Tart apples dipped in peanut butter have always been one of my favorite snacks. These peanut butter apple bars are an ode to my childhood favorite granola bars and my never-ending craving for apples and PB!

Nonstick cooking spray
5 tablespoons unsalted butter
1 medium tart apple, such as Granny Smith or Gala, cored and cut into 1/4-inch cubes (no need to peel)
1/3 cup plus 1 tablespoon granulated sugar
1 1/2 cups rolled oats
1/4 cup all-purpose flour
3/4 teaspoon fine salt
3/4 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/3 cup lightly packed light brown sugar
1 tablespoon pure vanilla extract
1/2 cup your favorite peanut butter
1 large egg, at room temperature
1 cup dried baked apple chips, broken into small pieces
1/4 cup white chocolate chips or semisweet chocolate chips
1/3 cup dried baked apple chips, broken into small pieces

Steps:

  • Make the bars: Preheat your oven to 350 degrees F with a rack in the center. Spray an 8-inch square baking pan with nonstick spray, line the bottom with parchment paper, then spray the parchment.
  • Melt the butter in a medium skillet and then pour into a medium heatproof bowl, reserving about 1 tablespoon of the butter in the skillet. Add the apples and 1 tablespoon of the granulated sugar to the skillet, toss and cook over medium heat until the apples are softened and slightly shrunken and most of the juice has evaporated, 3 to 5 minutes.
  • While the apples cook, whisk together the oats, flour, salt, cinnamon, and baking soda in a medium bowl and set aside.
  • In the medium heatproof bowl, stir the brown sugar, remaining 1/3 cup granulated sugar, peanut butter and vanilla into the melted butter. Add the egg and mix well to combine. Stir in the dry ingredients, mixing well, and then stir in the cooked apples and apple chips. The dough will be stiff.
  • Spread the dough into the prepared baking pan and smooth the top. Bake for 40 to 45 minutes, until evenly deep golden brown and the center feels firm to the touch. Place the pan on a wire rack and cool completely.
  • Finish the bars: Remove the cooled bar from the pan. Melt the white chocolate chips in the microwave in a small microwaveable bowl in 8 second increments, stirring well after each until melted, about 30 seconds. Transfer to a sandwich bag, snip off a small opening at the tip and drizzle the white chocolate over the surface of the baked bar. Sprinkle with the apple chip pieces. Cut in half and then cut each half into 6 bars. Store covered at room temperature for up to 4 days.

Steps:

  • For the brown butter crumble topping: Put the butter in a small saucepan and cook over medium heat until amber brown, 3 to 4 minutes.
  • Whisk together the flour, granulated sugar, brown sugar, cinnamon, nutmeg and salt in a medium bowl. Stir in the butter. Refrigerate the mixture for 15 minutes, then squeeze it to make crumbles.
  • For the apple pancake bars: Preheat the oven to 375 degrees F. Line a 9-by-13-inch baking dish with a parchment paper overhang on the long ends and spray with nonstick baking spray.
  • Whisk together the flour, granulated sugar, baking powder, baking soda and salt in a large bowl. Whisk together the buttermilk, butter, vanilla and eggs in a medium bowl until smooth. Add the wet mixture to the dry along with the granola, lemon zest and juice and apples and mix until just combined. Lumps are ok. Transfer the batter to the prepared baking dish and let it rest for 15 minutes.
  • Sprinkle the crumble evenly over the batter and bake until lightly golden brown and the top springs back when touched, 15 to 20 minutes (see Cook's Note). Let cool for 10 minutes, then remove to a baking rack.
  • For the apple syrup: Meanwhile, combine the apple juice, granulated sugar and apples in a shallow skillet, bring to a boil and cook until the mixture is thickened and reduced by half. Add a splash of lemon juice, strain the syrup through a fine strainer and keep warm.
  • Dust the top of the apple pancake with the confectioners' sugar, cut into bars and transfer to a platter. Drizzle the warm apple syrup over the bars or pass it for dipping.

PEANUT BUTTER -APPLE BARS

This a very old recipe, I remember eating when I was a young child at my Aunt Hattie's famous pantry cookie jar. Everything always tasted so good from her pantry! Did you know that is these old recipes the bakers did not pack the brown sugar in the cup -just spooned it in in cup or used their hand to toss it in the bowl?

3/4 c all purpose flour
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1 large egg
3/4 c light brown sugar, not packed
1/4 c milk
1 tsp vanilla
1/2 c peanut butter
1 c raw apples, peeled and chopped

Steps:

  • 1. Sift flour with baking powder, cinnamon and salt. Beat egg until light and gradually beat in sugar. Stir in milk, vanilla and peanut butter.
  • 2. Fold in flour mixture and apples. Spread in a foil lined and buttered 8-inch square pan or dish.
  • 3. Bake in 350^ oven for 30 to 35 minutes. Cool in pan for about 5 minutes. Lift out the foil and cut into 12 squares or into 24 sticks. If desired frost the bars. If cutting into sticks roll in sifted powdered sugar.
  • 4. Cut into sticks, if desired.

2 packets (0.74 ounce each) spiced cider drink mix, Alpine(R)
1 1/4 cups apple juice, Tree Top(R)
1 cup apple butter
1/2 cup vegetable oil, Crisco(R)
3 eggs
3/4 cup chopped walnuts, Diamond(R)
1/2 cup dried sliced apples, chopped, Mariani(R)
1 package (8-ounce) cream cheese, softened, Philadelphia(R)
1/4 cup packed brown sugar, C&H(R)
1/4 cup all-purpose flour

Steps:

  • Preheat oven to 375 degrees F. Spray a 9x13-inch baking pan with cooking spray.
  • In a large bowl, combine dry cake mix and 11?2 packets of the cider mix. Add apple juice, 1?4 cup of the apple butter, the oil, and eggs; beat with an electric mixer on low speed for 30 seconds. Scrape down sides of bowl; beat on medium speed for 2 minutes. Pour into prepared pan. Bake in preheated oven for 20 minutes.
  • Meanwhile, in a small bowl, toss walnuts and dried apples with the remaining 1?2 packet cider mix; set aside.
  • In a medium bowl, combine cream cheese, the remaining 3?4 cup apple butter, the brown sugar, and flour; beat with an electric mixer on medium speed until smooth.
  • Remove pan from oven. Pour cream cheese mixture over partially baked cake. Sprinkle walnut and apple mixture on top. Return to oven; bake for 20 to 25 minutes more. Cool in pan on a wire rack. Cut into bars.

  • Preheat oven to 350. In a large bowl, combine oats, flour, 1/2 tablespoon cinnamon, salt and baking powder and mix. To soften apples, mix them with 1/2 tablespoon of cinnamon and microwave for 2-3 minutes, or pan roast on medium heat for 10 minutes. Once apples are soft, mash them with a fork making sure to leave some large chunks. Add apples into oat mix. Melt peanut butter and stir vanilla into peanut butter. Add honey one tablespoon at a time, mixing until everything is combined. Mix with you hands before adding additional honey, but add it one tablespoon at a time if needed. You want the dough to be sticky, but not too wet. Spray a springform pan or pie plate with non-stick spray and pour in oat dough. Spread it evenly in the pan and give the top a quick spray with non-stick spray - it will help hold it together. Bake at 350 for 18-20 minutes. Let cool for 15 minutes before cutting. Slice into wedges and top with more melted peanut butter.
