PORK CHOPS WITH APPLES AND RAISINS

Pork Chops With Apples and Raisins image

This is a recipe from Tyler Florence which I have had good success with. It is pretty easy, you just need to plan a little ahead of time as this needs a couple of hours for the pork chops to soak in the brine. I like to serve this with wild rice.

Time 2h55m

Yield 4 serving(s)

Number Of Ingredients 20

1 gallon water
1 cup brown sugar
1 cup sea salt
1 cup frozen apple juice concentrate, thawed
1 1/2 teaspoons whole black peppercorns
2 sprigs fresh thyme
4 thick cut pork chops
salt & freshly ground black pepper
3 tablespoons olive oil
2 tablespoons unsalted butter
3 granny smith apples, peeled & cored, and sliced into 1/2-inch-thick pieces
2 sprigs fresh thyme
1/4 cup raisins
3/4 cup frozen apple juice concentrate, thawed
3 tablespoons brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 pinch dry mustard
salt & freshly ground black pepper
1/2 lemon

Steps:

  • Mix the ingredients for the brine well to dissolve sugar and salt. Pour brine into a zip-lock bag and add the pork chops. Place in a bowl and set in refridgerator for 2 hours. Do not allow to brine longer than 2 hours.
  • Take chops of the the brine and dry. Season with salt and pepper. Put the 3 tbs olive oil in a large frying pan and heat. Add the pork chops and brown 4 minutes, turn over and brown 4 minutes on the other side.

  • While the pork chops are in the oven, put the 2 tbs butter in another frying pan and melt over medium heat. Add the apples and thyme to the pan and stir frequently until golden and softened. Add the raisins, the apple juice concentrate, brown sugar, cinnamon, cloves, mustard, salt, pepper and the juice of the 1/2 lemon. Allow everything to simmer until chops are done.

THICK PORK CHOPS WITH SPICED APPLES AND RAISINS

Thick Pork Chops with Spiced Apples and Raisins image

Provided by Tyler Florence

Categories     main-dish

Time 2h50m

Yield 4 servings

Number Of Ingredients 20

1 gallon water
1 cup brown sugar
1 cup sea salt
1 cup frozen apple juice concentrate, thawed
1 1/2 teaspoons whole black peppercorns
2 fresh thyme sprigs
4 double-cut bone-in loin pork chops, 1 pound each
Sea salt and freshly ground black pepper
Extra-virgin olive oil
2 tablespoons unsalted butter
3 Granny Smith apples, peeled, cored, and sliced in 1/2-inch-thick wedges
Leaves from 2 fresh thyme sprigs
1/4 cup raisins
3/4 cup frozen apple juice concentrate, thawed
3 tablespoons brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Pinch dry mustard
Sea salt and freshly ground black pepper
1/2 lemon

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixing bowl combine the water, brown sugar, sea salt, apple juice concentrate, peppercorns, and thyme. Give it a good stir to dissolve the sugar and salt. Transfer the mixture to an extra-large re-sealable plastic bag. Submerge the pork chops in the brine, seal up the bag, and put it in the refrigerator for 2 hours to tenderize the meat. Do not brine longer than that or the meat will break down too much and get mushy.
  • Remove the pork chops from the brine and pat them dry with paper towels. Sprinkle both sides of the meat with salt and pepper. Put a heavy skillet over medium-high heat. Add a 3-count drizzle of olive oil and get it hot. Lay 2 pork chops in the pan (most likely only 2 of these massive pork chops will fit comfortably) and brown 4 minutes per side. Remove the pork chops to a large baking pan; brown the remaining 2 chops and add them to the others in the pan. Put the baking pan in the oven and roast the chops for 30 minutes. The pork is done when the center is still rosy and the internal temperature reads 140 to 145 degrees F when tested with an instant-read thermometer.
  • While the chops cook, melt the butter in a clean skillet over medium-low heat. Add the apples and thyme and coat in the butter; cook and stir for 8 minutes to give them some color. Toss in the raisins and add the apple juice, stirring to scrape up the brown bits. Stir in the brown sugar, cinnamon, cloves, and dry mustard; season with salt and pepper. Squeeze in the juice from the lemon to wake up the flavor and simmer for 10 minutes or until the apples break down and soften. Spoon the spiced apples over the pork chops.

Cooking a delicious apple brandy pork chop dish with raisins is a wonderful way to add variety and excitement to your meal. This recipe is easy to make, and the results are sure to impress your guests. However, there are some important tips to take into consideration when it comes to getting the most out of your apple brandy pork chops with raisins recipe. In this article, we'll share the most valuable tips for preparing and serving this savory dish. Choosing the Right Cut of Pork: When it comes to choosing the right cut of pork for your apple brandy pork chops recipe, it is essential to go for the pork chops with the bone still in. The bone adds flavor to the dish and helps to retain moisture while cooking. You can go with bone-in center-cut pork chops or bone-in rib chops. Marinating the Pork Chops: Before cooking, it is essential to marinate the pork chops. This step helps to tenderize the meat, add flavor, and make the dish juicier. The marinade you choose is also vital, depending on your preference. You can use a store-bought marinade or make your marinade using your favorite ingredients. A good marinade should have acidic components such as vinegar or citrus that help to tenderize the meat. You can also add sweeteners, spices, and herbs to add flavor to the meat. Cooking the Pork Chops: When it comes to cooking the pork chops, there are several ways to do so. You can grill, bake, or pan-fry the pork chops. If you choose to pan-fry, it is crucial to start by heating up the pan to medium-high heat. Preheat the oven to 350 degrees if you choose to finish the dish in the oven. Sear the pork chops on both sides for about three minutes until they turn brown to lock in the flavor. After searing, transfer the pork chops to the oven for 10 - 15 minutes to finish cooking. Adding the Raisins: Raisins are a key ingredient in this dish as they help to add sweetness and flavor to the recipe. When adding raisins to your dish, it is essential to use the right type and amount. You can use golden raisins, black raisins, or a combination of the two. The quantity you use will depend on how sweet you prefer the dish to be. We recommend about a ½ cup of raisins for each 4 - 5 pork chops. Using Apple Brandy: The apple brandy is a crucial ingredient that gives the dish its unique flavor. When choosing the apple brandy, it is important to select a high-quality brandy that complements the dish's flavor. You can use Calvados, which is a famous apple brandy, or any other brandy infused with apple flavor. A good rule of thumb is to use about a ¼ cup of apple brandy for each pork chop. Serving the Dish: When serving, there are many options to consider. The most important factor is the side dishes that complement the pork chops. You can serve rice, mashed potatoes, or roasted potatoes as a side dish. You can also add vegetables such as carrots, green beans, or asparagus to add color and nutritional value to the meal. Conclusion: In summary, making an apple brandy pork chop with raisins recipe can be an exciting and delicious experience. To get the best results, you have to choose the right cut of pork, marinate the meat before cooking, prepare the raisins well, use high-quality apple brandy, and serve the dish with complementary side dishes. Follow these tips, and your dish will come out perfect every time. Enjoy!
