GRILLED ENTRECOTE image

Yield 6-8 people

Number Of Ingredients 10

2 garlic cloves, minced
2 shallots, minced
1 TBS finely chopped fresh thyme
1 TBS finely chopped chives
2 TBS finely chopped parsley
3 anchovy fillets, finely chopped
1 TBS finely chopped lemon zest
3/4 c. olive oil
salt & fresh ground black pepper
3 rib-eye steaks with rib attached, about 1.5 lbs each and 2" thick.

Steps:

  • Prepare marinade: combine all ingred and whisk to mix. Taste for seasoning. Arrange steaks in a large, shallow and NON aluminum dish and pour marinade evenly over meat. Cover and fridge for at least 4 hours or overnight, but turn several times. Remove meat from fridge 30 min before grilling. Prepare grill for med high heat grilling about 3" from fire. Grill turning once for 7-9 min on each side, or till med rare. The steaks should be almost charred on the outside and med rare on the inside. Put steaks on carving platter and let rest 10 min. Slice steaks against the grain into 1/2" thick slices and serve right away.
