4 cups thinly sliced apples
¼ cup orange juice
¾ cup all-purpose flour
1 cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 pinch salt
½ cup butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9 inch pie plate.
  • Mound sliced apples in the pie plate. Sprinkle with orange juice.

2 tablespoons unsalted butter, melted
6 medium-size cooking apples, peeled, cored and cut in chunks
1 tablespoon lemon juice
3/4 cup granola
1/2 cup dark brown sugar, packed
1 teaspoon ground cinnamon
1/2 cup whole-wheat flour
2 tablespoons soft unsalted butter
Ice cream or whipped cream (optional)

Steps:

  • Preheat oven to 350 degrees. Grease an eight-inch square baking dish with some of the melted butter.
  • Toss the apple chunks in a bowl with the remaining melted butter, the lemon juice, three tablespoons of the granola, four tablespoons of the sugar and one-half teaspoon of the cinnamon. Spread the mixture in the baking dish.
  • Using a fork, lightly blend the whole-wheat flour and the remaining cinnamon with softened butter until it is crumbly. Mix in the remaining sugar and granola. Spread this mixture over the apples.
  • Bake about 40 minutes, until the top has browned and the filling is bubbly. Allow to cool until just warm, about an hour, then serve with ice cream or whipped cream if desired.

2 apples, pared and sliced
3 bananas, peeled and sliced
3 cups small bread cubes (Mom always used whole wheat)

Steps:

  • Preheat oven to 375 degrees.
  • Mix sugar, salt and cinnamon together; combine with sliced apples and bananas.
  • In a skillet, brown bread cubes in the butter.
  • Fill buttered baking dish with alternate layers of bread cubes and fruit using bread cubes as top and bottom layers.
  • Cover dish and bake 30 minutes.
