APPLE BAKED BEANS
Don't let the title or ingredients scare you away from this recipe. These are the greatest baked beans I have ever had. This recipe came from my oldest daughter's sister-in-law's father. Great for BBQs. I never have any leftovers. I hope you like them and leave your feedback.

- Preheat oven to 350 degrees F (175 degrees C).
- Stir pork and beans, bacon, apples, barbeque sauce, brown sugar, and raisins together in a 9x13-inch baking dish.

- Prepare campfire or grill for medium heat, using 32-36 charcoal briquettes or large wood chips., In a 10-in. Dutch oven, cook bacon over campfire until crisp. Remove; discard drippings. Return bacon to pan; stir in baked beans, pie filling, root beer and, if desired, ancho chili pepper, Cover Dutch oven. When briquettes or wood chips are covered with ash, place Dutch oven on top of 16-18 briquettes. Place 16-18 briquettes on pan cover., Cook 30-40 minutes to allow flavors to blend. If desired, sprinkle servings with cheese.

BAKED BEANS WITH APPLE
Steps:
- Preheat the oven to 375 degrees F.
- Put the bacon in a large, cold cast-iron skillet and cook over medium heat until the fat renders and the bacon is almost crisp, about 8 minutes.
- Add the apple and onion. Cook, stirring occasionally, until the apple is crisp-tender, about 6 minutes.
- Add 2 cans of beans with their liquid to the skillet.
- Rinse and drain the remaining can of beans, and add it to the skillet.
- Add the ketchup, molasses, sugar, mustard, vinegar, 1/2 teaspoon salt and pepper to taste, and stir to combine.
- Bring the beans and apples to a low simmer, then transfer the skillet to the preheated oven.
- Bake uncovered, until the apples are tender and jammy, about 30 minutes.
- Serve warm.
APPLE BAKED BEANS
Steps:
- Brown bacon, and sauté onion and green pepper in bacon grease. Mix in remaining ingredients. Bake in casserole dish at 325 for 1 hour, or simmer on stovetop in large pot for 30 minutes if you don't have time to do them in the oven. Serves 12.

- 1. Brown the sausage with the onions. Drain off grease.
- 2. Place the applesauce, apple chunks, mustard, brown sugar, and cayenne pepper into a bowl. Grate in fresh nutmeg (it only takes a little nutmeg too much will overpower the other flavors). Stir together until mixed well.
- 3. In a large bowl, mix the spicy apple mixture into the beans. Fold in sausage and onions.
- 4. Bake in a glass or stoneware dish at 350 degrees for 45 minutes.
MAPLE-APPLE BAKED BEANS

- Place beans in a soup kettle or Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. , Drain and rinse beans; discard liquid. Return beans to the pan; add 10 cups water. Bring to a boil Reduce heat; cover and simmer for 30 minutes. Drain, reserving 1/2 cup liquid., Line the bottom of a 4-qt. baking dish with bacon. In a large bowl, combine the beans, onion, salt and mustard. Spoon over bacon. Pour syrup over the top. Cover and bake at 350° for 3 hours, gently stirring occasionally and adding reserved bean liquid if needed., Arrange sliced apples over the top. In a small bowl, cream butter and brown sugar; spread over apples. Cover and bake 1 hour longer or until beans are tender.

SUGAR CURED SMITHFIELD LEAN PORK CHOP OVER HICKORY WITH RED'S APPLE BAKED BEANS AND GRILLED PINEAPPLE SLAW
Steps:
- Mix the brown sugar, salt and pepper together and rub vigorously into the pork. Refrigerate 4 to 6 hours. Place chops over medium hot coals for 5 minutes and turn 1/4 turn. Cook for 5 minutes and then flip the chop over. Cook for 5 minutes; turn 1/4 turn; cook another 5 minutes. Allow the chop to rest for 5 minutes on the cool side of the grill.
- Red's Apple Baked Beans: In a cast iron pot with a lid, cook the bacon over medium heat, stirring until browned. Add onion and garlic and cook until browned. Add ketchup, molasses, mustard, sugar, and jalapeno and bring to a boil. Add apples and baked beans and stir to combine thoroughly. Cook on stove top or side grill about 1 hour covered over medium low heat.
- Grilled Pineapple Slaw: Place pineapple slices over medium hot grill and brown for 3 to 5 minutes. Turn over and brown second side. Slice the pineapple on bias very thinly and toss in a bowl with cabbage and carrot. Mix the vinegar, sour cream and salt to make a dressing and mix in with the pineapple, carrots and cabbage. Place the pineapple slaw on a plate and spread it around to cover the entire plate. Place the baked beans in the center of the slaw, and place the pork on top.

- 1. Brown ground beef in medium frying pan add all freash vegetable, herbs and spices into pan with ground beef
- 2. In a medium size backing dish add your bushes bake bean and apple pie filling, along with the rest of the remaining ingedients. Then add ground beef mixture. mix all ingedients together add butter by placesing it all over the top off your bake beans. place it in your smoker for 2 1/2 hours

- Preheat the oven to 350°F Coat a 1 1/2-quart baking dish with nonstick cooking spray.
- In a large bowl, combine all the ingredients except the bacon and mix well.

A family favorite for summer cookoouts, you will be tempted to eat these beans as soon as they are cooked, TRUST ME!, Wait until the next day to eat them. My wife; who hates beans, will actually eat some of these. It only took me @20 years of testing to get her to eat baked beans regularly.

- Rinse beans and cook overnight on low in a slow cooker (crock pot). Rinse again and place in a large bowl.
- Open pineapple chunks and drain (reserving liquid), add to the beans.
- Mix tomato paste, molassas, soy sauce, cider vinegar, honey, pineapple juice, garlic powder, black pepper, cinnamon and ground ginger in a small bowl then add to beans. mix to coat completely.
- Divide the mixture between 2 baking dishes that will fit in your smoker (or in your oven).
- Cut the bacon strips into @3/4 inch pieces then layer the top of each baking dish. Place in your smoker with the wood chips of your choice(I prefer apple) at 200 degrees until the bacon is cooked, @6 hours. PLEASE NOTE, this time is based upon my electric smoker on medium with a full water pan. If you are using an oven either place a pan of water in the oven or reduce the cooking time, to when the bacon is cooked to a golden brown.
- Mix both batches of beans in a large covered bowl, refrigerate over night, then gently reheat and serve the next day.
