6 cups torn mixed salad greens
2 medium apples, chopped
1/2 cup raisins
1/2 cup green grapes, halved
2 tablespoons olive oil
4-1/2 teaspoons balsamic vinegar
1 tablespoon honey
1-1/2 teaspoons lemon juice
1 garlic clove, minced
3 tablespoons chopped walnuts, toasted
2 tablespoons crumbled goat cheese

Steps:

  • In a large bowl, combine the greens, apples, raisins and grapes. In a small bowl, whisk the oil, vinegar, honey, lemon juice and garlic. Pour over salad and toss to coat. Sprinkle with walnuts and goat cheese.

1 1/2 pounds red beets, tops removed and scrubbed
8 ounces baby Chioggia beets, tops removed and scrubbed
Coarse salt and freshly ground pepper
2 tablespoons grapeseed or safflower oil
3 tablespoons pure honey
5 tablespoons extra-virgin olive oil
1 lemon plus 3 tablespoons fresh lemon juice, divided
1 green apple
4 ounces fresh goat cheese, coarsely crumbled (about 3/4 cup)
2 cups sprouts or microgreens, for garnish

Steps:

  • Preheat oven to 350 degrees. Place red beets in a baking dish just large enough to hold them in a single layer and add enough water to come three quarters of the way up sides of beets. Sprinkle with 1 tablespoon salt and drizzle with grapeseed oil. Cover with foil and bake until tender and easily pierced with a knife, about 1 hour. Transfer beets to a cutting board. When just cool enough to handle, remove skins, cut into 1/4-inch slices, and transfer to a bowl.
  • Meanwhile, place baby beets in small saucepan and cover with 2 inches cold water. Add 1 teaspoon salt and bring to a boil. Reduce heat and simmer until tender and easily pierced with a knife, about 25 minutes. Drain beets; when just cool enough to handle, remove skins; cut into halves or wedges, depending on size; and transfer to another bowl.
  • Whisk together honey, olive oil, and 3 tablespoons lemon juice; add 1 teaspoon salt and season with pepper. Reserve 1/4 cup dressing; divide remaining dressing between bowls of warm beets; toss beets to coat.
  • Halve lemon and squeeze juice into a bowl of cold water; drop lemon halves in it. Peel apple, cut into small pieces (you should have about 1 cup), and submerge in lemon water. When ready to serve, drain apple and blot dry. Arrange beets on a serving platter and drizzle with reserved dressing. Top with apple, goat cheese, and sprouts and serve immediately.

1/2 cup pepitas (shelled pumpkin seeds)
1/2 teaspoon olive oil
1/4 teaspoon salt
1/3 cup dried cranberries, chopped if desired
1/4 cup extra virgin olive oil
1 tablespoon apple cider (or raspberry, pear or other fruity) vinegar
Finely grated zest of half an orange, optional
Salt and freshly ground black pepper
1 apple, cored and quartered
1 head lettuce, cored and torn into pieces, or mesclun mix
1 6-ounce log of goat cheese

Steps:

  • Preheat oven to 350 degrees. Toss pepitas with olive oil and salt in a bowl. Spread on baking sheet and toast in oven until golden and popped, 8 to 10 minutes. Remove and let cool. Place pepitas and cranberries in bottom of a salad bowl.
  • In another bowl, combine extra virgin olive oil, vinegar and zest, if using. Season to taste with salt and pepper. Whisk until emulsified.
  • Thinly slice each apple quarter crosswise, and add to salad bowl. Add lettuce and dressing, and toss to mix. Crumble cheese over salad and serve.

Extra-virgin olive oil, for drizzling

Steps:

  • Make the dressing: Whisk together vinegar, shallot, mustard, salt, and pepper in a bowl. Add oil in a slow, steady stream, whisking until emulsified.
  • Make the salad: Preheat oven to 350 degrees. Place baguette slices on a baking sheet, and toast until golden, 8 to 10 minutes.

2 medium fennel bulbs (2 1/4 pounds total)
2 stalks celery, trimmed, strung with a vegetable peeler
1 Fuji apple
2 lemons
3/4 cup dried apricots, torn into bite-size pieces
1/4 cup unsalted pistachios, coarsely chopped, plus 1 tablespoon for garnish
1 tablespoon extra-virgin olive oil
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
1 four-ounce log fresh goat cheese

Steps:

  • Trim tops and bottoms of fennels; peel outer layer. Slice lengthwise as thinly as possible. Transfer to large bowl. Cut celery on diagonal into very thin slices; add to bowl. Quarter and core unpeeled apple. Cut each quarter lengthwise into very thin slices. Place in small bowl; squeeze juice from one lemon over apples; toss. Add to fennel. Add apricots and 1/4 cup chopped nuts to fennel.

1/2 teaspoon Dijon mustard
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup olive oil
1 tablespoon chopped fresh parsley leaves
3 Belgian endive, cored and separated into leaves
1 bunch watercress or 1 bunch spinach, washed
1 granny smith apple, sliced
4 ounces mild goat cheese (small log)
1/4 cup chopped walnuts (I like to toast them)

Steps:

  • Using a glass jar with a tight lid, combine the vinegar, mustard, garlic, salt, and pepper, and shake well to blend.
  • Add the oil and parsley and shake.
  • On 4 plates, arrange the endive leaves like spokes around each plate.
  • Arrange the watercress or spinach in the center.
  • Preheat the broiler, and arrange the sliced apples slightly overlapping in 4 fan shapes, place in broiler pan.
  • Cut the cheese into 4 slices and top each apple fan with slices of cheese.
  • Broil until golden for approximately 5 minutes.
  • Using a spatula, carefully place the apple slices and cheese on top of the endive.
  • Drizzle the dressing over the salads and sprinkle with walnuts.

salt & freshly ground black pepper
olive oil, for drizzling
1 lb granny smith apple
12 cups boston lettuce, washed, dried & torn into 1-inch pieces (6 heads)
4 shallots, minced (about 1/4 cup)
1/3 cup orange juice, freshly squeezed (juice of 1 medium orange)
2 tablespoons red wine vinegar
1 teaspoon granulated sugar
1/3 cup olive oil
6 ounces goat cheese, crumbled

Steps:

  • Preheat the oven to 400 degrees. Roast the beets by placing them on a sheet of aluminum foil. Season with salt and pepper and drizzle with olive oil. Wrap the foil around the beets and place onto a baking sheet. Bake for 60 minutes or until the beets are tender. Cool.
  • Peel the beets and slice into thin strips.
  • Cut the apples into thin slices.
  • Place the lettuce into a large salad bowl. Toss in the beets and apples.
  • Whisk together the shallots, orange juice, red wine vinegar and sugar in a small bowl. Slowly whisk in the olive oil. Season with salt and pepper to taste.
  • Drizzle the salad dressing over the salad and toss until the leaves are just moistened. Top with crumbled goat cheese and serve.

1 pound. roasted, small yellow beets
1 cup Granny Smith apple, matchstick-cut, or 16 ripe Black Mission figs cut in half, or 4 ripe peaches, peeled and cut in slices.
1 pound. roasted small red beets
4 tablespoon Extra Virgin Olive Oil
2 tablespoon Red Wine Vinegar
1 tablespoon Balsamic vinegar
6 ounces of slightly aged goat cheese in a block which you can crumble.

Steps:

  • Clean beets, remove root tip and cut off stem and leaves, reserving and blanching until soft. Poke the beets all over with a fork and roast in a 400° F oven until tender when poked with a paring knife, 45 minutes to 1-one half hours, depending on the beets. Let stand until cool enough to handle, then peel the beets. The beets are now ready to cut into six or eight slices depending on the size. Cut the stems into 1" pieces. Set all in a bowl. Whisk the oil and vinegar. Add the stems and fruit. Season with salt and pepper. Toss well. Set on a plate dividing the remaining juice. Sprinkle with the goat cheese and serve.

1 lb. chicken breast, coarsely sliced
Rosemary salt
1 lb. mixed greens
1/2 small red onion, thinly sliced
1 handful of almonds, sliced or slivered
1 Fiji apple, thinly sliced
1 Granny Smith apple, thinly sliced
1/2 lemon
1 round of Le Chevrot goat cheese
Dressing:
4 Tbsp. Cape Code oriental dressing
2 Tbsp. + 1 tsp. sugar free maple syrup
1 tsp. cumin

Steps:

  • Wash greens and place in a large bowl. Thinly slice the half red onion and the apples. Sprinkle the apples with the juice of half a lemon. Toss the onion, apple and the mixed greens in the large bowl. Slice the chicken breast. Sprikle with the rosemary salt. Cook in a skillet with Pam spray until lightly brown. While the chicken is cooking, mix together the dressing ingredients. When the chicken is done, place the warm chicken on top of the salad. Pour over the dressing and toss. At the table, serve the salad with the Le Chevrot. Sprinkle the goat cheese on top of the salad to taste.

1 cup quinoa
2 cups water or vegetable broth
2 apples, diced (you can use your favorite variety)
1/2 cup toasted pecans, roughly chopped
1/2 cup dried cranberries
2 cups fresh baby spinach, roughly chopped
6 oz crumbled goat cheese
1/4 cup olive oil
2 tbsp apple cider vinegar
1-2 tbsp maple syrup
1 tsp dijon mustard
1/4 tsp ground cinnamon
salt, to taste

Steps:

  • Bring water or vegetable broth to a boil in a small pot. Add quinoa, lower to a simmer and cover. Cook for 15-20 minutes, checking periodically, until all water/broth is absorbed and quinoa has cooked. While quinoa is cooking, prepare the other ingredients. Chop the apples, pecans, and spinach. Make the dressing by combining all ingredients in a mason jar with a lid and shaking to combine or in a bowl and whisking to mix. Once quinoa is finished cooking, combine quinoa with apples, pecans, cranberries, and spinach. Toss with dressing. Top with goat cheese and serve. Enjoy!

1/2 cup walnut halves
1 tablespoon butter
1 lb assorted mushroom, trimmed and coarsely chopped
1 (4 ounce) package arugula, thoroughly washed
1 large cameo apple, thinly sliced
3 ounces goat cheese, crumbled
honey-balsamic vinaigrette, divided to taste

Steps:

  • Place walnuts in a single layer on a baking sheet.
  • Bake at 350* for 8 to 10 minutes or until toasted.
  • Melt butter in a large skillet over medium-high heat; add mushrooms, and saute 6 minutes or until tender.
  • Stir in 2 tablespoons Honey-Balsamic Vinaigrette.
  • Remove from heat, and let cool 15 minutes.
  • Toss together arugula, apple, mushrooms, and desired amount of Honey-Balsamic Vinaigrette.
  • Transfer to a serving dish, and sprinkle with toasted walnuts and goat cheese.
