GREEN APPLE AND CELERY SALAD WITH WALNUT AND MUSTARD VINAIGRETTE

Green Apple and Celery Salad With Walnut and Mustard Vinaigrette image

This was a very crisp refreshing salad - I found it to be a perfect foil to the traditional heavy Thanksgiving spread. And it was so simple to make! I did all the prep ahead of time, and simply tossed the celery and apple peices into cold water with some lemon juice to prevent browning. I would definately put this on the menu for next year. 3 tablespoons good-quality yellow curry paste
2 tablespoons soy sauce
6 limes
Extra-virgin olive oil, for drizzling
Four 6-ounce wild-caught, skinless center-cut salmon fillets
Kosher salt and freshly ground black pepper
2 pounds celery root
4 cups whole milk
4 ounces (1 stick) unsalted butter
2 Granny Smith apples, julienned
1 cup fresh cilantro leaves

  • Sprinkle the salmon with salt and pepper, then pour the curry marinade over the top, coating the fish completely.
  • Meanwhile, peel and dice half the celery root. Add to a pot and cover with the milk. Bring to a simmer and season with salt. Cook until tender, about 15 minutes, then drain, discarding the milk. Add the celery root to a blender along with the butter and puree until smooth. Pour back into the pot and keep warm.

Add the salmon to the perforated pan and cover tightly with foil. Place the pan on top of two stovetop burners and heat until the chips start smoking. Transfer the pan to the oven and cook until the salmon reaches an internal temperature of 135 to 140 degrees F, 30 to 40 minutes.

CELERY, SUNCHOKE, AND GREEN APPLE SALAD WITH WALNUTS AND MUSTARD VINAIGRETTE

Celery, Sunchoke, and Green Apple Salad with Walnuts and Mustard Vinaigrette image

Peter Berley, author of "The Flexitarian Table," created this healthier version of a traditional family favorite. "The apple is tart; the celery has a saline minerality; and the sunchokes provide earthiness. Treble, alto, and bass. Walnuts add the sweetness and fat, which really ties the salad together."

  • Place sliced celery, fennel, sunchoke, and apple in a bowl of cold water. Stir in 1 tablespoon lemon juice and refrigerate.
  • In a small bowl, combine remaining lemon juice, mustard, garlic, honey, and salt. Whisk in oil and season with pepper.

PORK CHOP WITH APPLE AND CELERY ROOT SALAD

Pork Chop with Apple and Celery Root Salad image

For this pork chop recipe, the target temperature for the meat might be lower than what you're used to. That's because we believe that when you invest in delicious, humanely raised pork, you deserve to enjoy it at a juicy, tender medium-rare.

Provided by Claire Saffitz

Categories     Bon Appétit     Pork     Pork Chop     Apple     Fall     Winter     Dinner     Lettuce     Salad     Almond     Wheat/Gluten-Free

Yield 4 servings

Number Of Ingredients 21

Pork chop:
1 double-cut pork chop (1 1/2-2 pounds)
1 tablespoon Diamond Crystal or 1 1/2 teaspoons Morton kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon sugar
2 tablespoons olive oil
Salad and assembly:
1 large egg yolk
1 garlic clove, finely grated
1/4 cup red wine vinegar
1 tablespoon Dijon or horseradish mustard
1 teaspoon honey
1/2 cup olive oil, plus more for drizzling
Kosher salt, freshly ground pepper
8 cups torn red leaf lettuce (from about 1 head)
4 cups torn frisée (from about 1 head)
1/2 small celery root (celeriac), peeled, cut into matchsticks (about 2 cups)
1 apple, cut into matchsticks
2 ounces Pecorino, shaved
1/2 cup chopped smoked almonds
Flaky sea salt

Steps:

  • Pork chop:
  • Pat pork chop dry with paper towels. Mix salt, pepper, and sugar in a small bowl; sprinkle all over pork. Place pork on a wire rack set inside a rimmed baking sheet so it's resting on its side with bone sticking upright and chill, uncovered, at least 8 hours and up to 1 day.
  • Let pork chop sit at room temperature at least 1 hour for even roasting.
  • Preheat oven to 300°F. Heat a large skillet, preferably cast iron, over medium-high. Rub chop all over with oil and carefully place in skillet; reserve rack and baking sheet. Cook chop, turning every minute or so, until deeply browned on both sides, 5-8 minutes. Turn on its side and sear edges and fat cap until browned, about 3 minutes total. Transfer back to rack, place in oven, and roast until a thermometer inserted into the center of chop about 1" from bone registers 130°F, 25-35 minutes (use a probe thermometer if you've got one, or use an instant-read thermometer and check every few minutes after pork has been roasting 20 minutes). Transfer pork to a cutting board; let rest 15-20 minutes.
  • Salad and assembly:
  • While the pork is resting, whisk egg yolk, garlic, vinegar, mustard, and honey in a medium bowl. Gradually add 1/2 cup oil, whisking until dressing is emulsified (it should be the consistency of heavy cream). Season with kosher salt and pepper.
  • Toss lettuce, frisée, celery root, apple, Pecorino, and almonds in a large bowl; season with kosher salt and pepper. Add about three-quarters of dressing and toss to coat; add more dressing to taste and season with more kosher salt and pepper.
  • Use a thin-bladed knife to cut pork chop away from rib bone, then cut between bones to separate into 2 ribs (or don't, and greedily eat both bones in the kitchen before serving others, because you're the cook and you deserve it). Slice chop 1/2" thick, drizzle with oil, and sprinkle with sea salt. Serve with salad.

Apple and celery salad is a refreshing and healthy dish that can be enjoyed on its own or as a side dish to any meal. The combination of the crisp sweetness of apples with the crunch of celery creates a perfect blend of flavors and textures. In this article, we will explore valuable tips on how to make the perfect apple and celery salad, including ingredient selection, preparation techniques, and serving suggestions.

Choosing the Right Apples

Apples are the star ingredient of this salad, so it is essential to choose the right variety. Different types of apples offer different tastes, textures, and levels of sweetness. Some preferred apple varieties for this salad include:
Gala Apples
Gala apples are firm and crisp, with a mildly sweet flavor that makes them perfect for salads. They also add a beautiful red color to your salad.
Honeycrisp Apples
Honeycrisp apples are a bit more tart than Galas, but they still offer a sweet taste. The crisp texture adds a delightful crunch to your salad.
Granny Smith Apples
Granny Smith apples have a tart and tangy flavor and firm texture. They work well in salads as they do not become mushy easily. When selecting apples for your salad, ensure that they are fresh and free of bruises or soft spots. An apple that is too ripe or too soft will not hold up well in the salad.

Preparation Techniques

After selecting your apples, wash and dry them thoroughly before slicing. It is always best to slice the apples just before serving to prevent them from turning brown. To achieve the perfect slice, use a sharp knife or apple slicer to get even and uniform pieces. When it comes to celery, you can chop it finely or leave the pieces a bit larger for a crunchier texture. It is best to use the inner stalks of the celery, which are more tender and less stringy than the outer stalks. Rinse the celery stalks before slicing, and pat them dry with a paper towel. For added flavor and crunch, consider adding nuts such as walnuts or pecans to your apple and celery salad. A sprinkle of sesame seeds or pumpkin seeds also adds a nutty flavor and makes the salad more filling.

Dressing Your Salad

The dressing you choose will determine the overall taste of your apple and celery salad. Here are some dressing ideas to consider:
Apple Cider Vinaigrette
Apple cider vinegar is a perfect match for apple and celery salad. Mix the vinegar with olive oil, honey, salt, and pepper to make a tangy and sweet vinaigrette.
Yogurt Dressing
A yogurt-based dressing creates a creamy and flavorful salad. Mix plain yogurt with lemon juice, olive oil, salt, and pepper to make a refreshing and healthy dressing.
Balsamic Dressing
Balsamic vinegar is another great option for this salad. Mix it with olive oil, honey, mustard, salt, and pepper to create a sweet and tangy dressing. Regardless of the dressing you choose, remember to add it to your salad just before serving. Too much dressing can make the salad soggy, so start with a small amount and gradually add more as needed.

Serving Suggestions

Apple and celery salad is a versatile dish that can be served in numerous ways. Here are some serving suggestions:
