Crock Pot Chicken a La Criolla image

This wonderful Spanish chicken dish that's very easy to make, and it tastes wonderful. It's great with plain white rice (though I have served it with Spanish Rice, too).

2 lb boneless skinless chicken (thighs or breasts), about 10 pieces
1 small onion, diced
1 clove garlic, crushed
1 bell pepper, chopped (green, red, yellow or orange)
4 large plum tomatoes
2 Tbsp alcaparrado or pitted spanish olives
1/2 c water
8 oz tomato sauce
1/4 tsp dried oregano leaves
1/4 tsp ground cumin
1/2 tsp salt
1-2 bay leaves
1/4 c cilantro, chopped
5 sprig(s) fresh cilantro, for garnish

Steps:

  • 1. Place chicken, onion, garlic, pepper, and tomatoes in the crock pot. Season with oregano, cumin and salt. Mix well, so everything is well seasoned.
  • 2. Add the tomato sauce and olives, about 1 tablespoon of the olive brine, water, bay leaf, and chopped cilantro. Mix well, and set crock pot to High for 4 hours or on Low for 6 hours.
  • 3. When done, taste and adjust seasonings as needed.
  • 4. Garnish each serving with fresh cilantro.
