CLASSIC MEATLOAF

Good meatloaf is about as comforting as comfort food gets. Thankfully, meatloaf doesn't have to be complex to be good. It just needs to be tender (from breadcrumbs soaked in milk and gentle handling) and flavorful (from onion, garlic, and ketchup).

MARTHA STEWART'S ALL AMERICAN MEATLOAF

Martha Stewart's All American Meatloaf image

This is a great meatloaf. I'm surprised it hasn't already been posted yet. The only thing I like better than meat loaf is meatloaf sandwiches, and this meatloaf is even better the next day; sliced between whole wheat bread, topped with a slice of cheese, and lots of mayo. Note: I omitted the veal and adjusted the amount of beef and pork to compensate--it was still great.

ALL-AMERICAN MEATLOAF

All-American Meatloaf image

The only thing better than a hearty meatloaf dinner is the sandwich you can make with the leftovers.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes     Ground Beef Recipes

Number Of Ingredients 19

3 slices white bread
1 large carrot, cut into 1/4-inch-thick rounds
1 celery, strings peeled, cut into 1/2-inch pieces
1/2 medium yellow onion, roughly chopped
2 cloves garlic, smashed and peeled
1/2 cup fresh flat-leaf parsley, leaves, loosely packed
1/2 cup plus 3 tablespoons ketchup
4 1/2 teaspoons dry mustard
8 ounces ground pork
8 ounces ground veal
8 ounces ground round
2 large eggs, beaten
2 teaspoons salt
1 teaspoon freshly ground pepper
1 teaspoon Tabasco Sauce, or to taste
1/2 teaspoon chopped fresh rosemary, plus more needles for sprinkling
2 tablespoons dark-brown sugar
1 tablespoon olive oil
1 small red onion, cut into 1/4 inch-thick rings

Steps:

  • Preheat oven to 400 degrees. Remove crusts from bread, and place slices in the bowl of a food processor. Process until fine crumbs form, about 10 seconds. Transfer breadcrumbs to a large mixing bowl. Do not substitute dried breadcrumbs in this step, as they will make your meatloaf rubbery.
  • Place carrot, celery, yellow onion, garlic, and parsley in the bowl of the food processor. Process until vegetables have been minced, about 30 seconds, stopping to scrape down the sides of the bowl once or twice. (Chopping vegetables this way saves time and ensures that vegetables will be small enough to cook through and not be crunchy). Transfer vegetables to bowl with the breadcrumbs.
  • Add 1/2 cup ketchup, 2 teaspoons dry mustard, pork, veal, beef, eggs, salt, pepper, Tabasco, and rosemary. Using your hands, knead the ingredients until thoroughly combined, about 1 minute. The texture should be wet, but tight enough to hold a free-form shape.
  • Set a wire baking rack into an 11-by-17-inch baking pan. Cut a 5-by-11-inch piece of parchment paper, and place over center of rack to prevent meat loaf from falling through. Using your hands, form an elongated loaf covering the parchment.
  • Place the remaining 3 tablespoons ketchup, remaining 2 1/2 teaspoons mustard, and brown sugar in a bowl. Mix until smooth. Using a pastry brush, generously brush the glaze over loaf. Place oil in a medium saucepan set over high heat. When oil is smoking, add red onion. Cook, stirring occasionally, until onion is soft and golden in places. Add 3 tablespoons water, and cook, stirring, until most of the water has evaporated. Transfer onion to a bowl to cool slightly, then sprinkle onion over the meatloaf.
  • Bake 30 minutes, then sprinkle rosemary needles on top. Continue baking loaf until an instant-read thermometer inserted into the center of the loaf registers 160 degrees. about 25 minutes more. Let meatloaf cool on rack, 15 minutes.

Martha Stewart is a household name when it comes to cooking and homemaking. Her recipes have inspired many and have been the go-to for a lot of people. However, not everyone is a fan of her culinary creations, and some may even be looking for an alternative to her meatloaf recipe.

What is Anti-Martha Stewart Meatloaf?

Anti-Martha Stewart meatloaf is any recipe that deviates from Martha Stewart's traditional meatloaf recipe. This meatloaf may have different ingredients or cooking methods that are not typically associated with Stewart's recipe.
Ingredients
One aspect of an anti-Martha Stewart meatloaf recipe could be its ingredients. For example, it may contain different meats such as ground turkey, chicken or even lamb, instead of the traditional ground beef. This change in protein not only creates a different flavor but also provides a healthier alternative. Other variations of ingredients may include herbs and spices such as cumin, smoked paprika or chili powder, which can give the meatloaf a smoky, spicy or even southwestern twist. Anti-Martha Stewart meatloafs also often feature additional vegetables such as mushrooms, zucchini or carrots which can add additional flavor, nutrition and color.
Cooking Method
Another difference in anti-Martha Stewart meatloaf is the cooking method. While Stewart's recipe calls for baking the meatloaf, alternatives may involve smoking or grilling the meatloaf. This provides a unique flavor and texture to the dish, creating something altogether different from the traditional recipe. Moreover, some recipes opt to cook different layers of the meatloaf separately before combining them, rather than mixing and baking all the ingredients together. This technique creates a multi-layered, more complex flavor profile.
Specialty Meatloaves
Some anti-Martha Stewart meatloaves are recipes that are geared towards specific diets or lifestyles. For instance, there are meatloaf recipes that cater to vegetarians, using lentils or other meat substitutes instead. Also, some recipes have been designed to accommodate gluten-free, dairy-free, or even low-carb diets.

Benefits of Anti-Martha Stewart Meatloaf Recipes

The popularity of anti-Martha Stewart meatloaf recipes has increased, and for good reasons. One of the significant benefits is that these meatloaf recipes give humans a chance to experiment with various ingredients and cooking methods outside the traditional recipe. The incorporation of additional vegetables and alternative proteins provides extra nutritious value in the dish. For example, when using turkey or chicken, the fat content is lower, making the recipe more heart-healthy. Also, vegetables add color and an extra dose of vitamins, minerals and fiber. Using specialty ingredients for a meatloaf, such as lentils, creates an entirely new and creative flavor profile.

Conclusion

While Martha Stewart is known for her signature meatloaf recipe, there is nothing wrong with exploring different variations. Anti-Martha Stewart meatloaf recipes provide the freedom to experiment with different ingredients and cooking methods. Going outside the box can create a new twist on an old classic and possibly give you a new favorite recipe.

Meatloaf is an old-time favorite food item, but many of us tend to rely on the same traditional meatloaf recipe that our mothers or grandmothers used. However, there’s nothing wrong with modifying and changing things up to create a unique and personalized dish. In particular, if you’re looking to create an “anti-Martha Stewart” meatloaf recipe, you’re probably seeking a method that’s more relaxed and creative than traditional recipes.

Tip 1: Don’t be afraid to experiment with ingredients

The beauty of making an “anti-Martha Stewart” meatloaf recipe is that you have the freedom to include any ingredients that you like. Whether you love Mexican, Italian, or Asian flavors, there’s no reason you can’t incorporate them into your meatloaf recipe. Sure, some of these ingredients might seem non-traditional, but that’s the point of branching out and creating something new. Whether it’s adding jalapenos, kimchi, or red pepper flakes to your meatloaf, don’t be afraid to try something new that you think might be delicious!

Tip 2: Differentiate meat types and combine

If you’re looking for a juicy and flavorful meatloaf, then you might want to combine different types of meat. While beef might be the main focus of your recipe, don’t be afraid to experiment with other meats like pork and lamb to create a richer and more complex taste. Additionally, if you’re looking to create a healthier version of your meatloaf, you might consider substituting some of the meat with veggies, such as mushrooms or carrots.

Tip 3: Choose unconventional additives

There’s no doubt that traditional meatloaf recipes rely heavily on breadcrumbs and eggs as binding agents. However, this doesn’t mean that you can’t think outside the box when it comes to additives. Instead of using breadcrumbs, you might consider using crushed potato chips, tortilla chips, or crumbled crackers. Similarly, you can use yogurt or sour cream instead of eggs for a creamier texture.

Tip 4: Experiment with spices and sauces

The secret to creating an unforgettable meatloaf recipe is choosing the right spices and sauces. You might want to try adding a tablespoon of Worcestershire sauce or soy sauce to add a salty and savory flavor to your meatloaf. Additionally, spices like cumin, chili powder, and paprika can add a touch of spice and complexity to your recipe. However, don’t forget that less is often more when it comes to spices - try to strike a balance between flavor and subtlety.

Tip 5: Use a creative cooking method

If you’re looking to make an “anti-Martha Stewart” meatloaf recipe, you might want to consider using a different cooking method. Traditionally, meatloaf is baked in the oven, but you might want to cook it on the stove or even on a grill for a smokier and more unique flavor. You can also try baking individual meatloaf “muffins” or cooking your meatloaf in a skillet. Ultimately, the cooking method that you choose will depend on your preferences and the ingredients that you’re using.

Tip 6: Don’t skimp on the sauce

Lastly, don’t forget that the sauce is just as important as the meatloaf itself. Here, you have plenty of room for creativity as well. Whether you’re a fan of tangy BBQ sauce, sweet ketchup, or spicy salsa, there’s no reason you can’t incorporate your favorite sauce into your meatloaf recipe. You can also try experimenting with homemade sauces using a variety of ingredients like honey, mustard, and even fruit jams.

Conclusion

There’s no reason that making an “anti-Martha Stewart” meatloaf recipe can’t be just as delicious as a traditional recipe. By incorporating unconventional ingredients, spices, and sauces, experimenting with cooking methods, and being creative while adding your personal twist to the recipe, you can create a meatloaf that is delicious and unique. Just make sure to have fun with the process, as trying new things is all part of the fun in cooking. Who knows, your personalized meatloaf recipe might even become the talk of the table at your next family dinner!
