Time 26m

Number Of Ingredients 9

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

Granola is a healthy and delicious snack that is packed with nutrients and energy. Annabel's homemade granola recipe offers a great way to start your day or treat yourself to something tasty and healthy. Making granola at home is easy, and it's a great way to save money and avoid the added sugar and preservatives found in store-bought varieties. In this article, we'll offer some valuable tips to help make Annabel's homemade granola even better.

Choose the Right Ingredients

One of the most important steps in making Annabel's homemade granola is choosing the right ingredients. Start with a base of rolled oats, and add in nuts, seeds, dried fruits, and other ingredients to create your desired flavor profile. Choose high-quality ingredients that are fresh and free from preservatives or artificial additives.
Oats
Rolled oats are the foundation of Annabel's homemade granola recipe. Look for old-fashioned or large-flaked oats, as they will provide a chewier texture than quick oats. Choose organic oats when possible, as they are free from the chemicals used in conventional farming.
Nuts and Seeds
Adding nuts or seeds to Annabel's homemade granola recipe adds healthy fats and protein, as well as a satisfying crunch. Choose raw, unsalted nuts and seeds, and chop them into small pieces for even distribution throughout the granola.
Dried Fruits
Dried fruits are a great way to add natural sweetness to Annabel's homemade granola without adding sugar. Look for unsweetened dried fruits, such as raisins, cranberries, or apricots, and chop them into small pieces to mix in with the other ingredients.
Sweeteners
While Annabel's homemade granola recipe calls for a small amount of maple syrup or honey, you can adjust the sweetness to your liking. Keep in mind that adding too much sweetener can make the granola sticky and clumpy.

Toast the Oats and Nuts

Toasting the oats and nuts before adding them to Annabel's homemade granola recipe enhances their flavor and provides a toasty, crunchy texture. Spread the oats and nuts in a single layer on a baking sheet and bake for 10-15 minutes at 350 degrees F, stirring occasionally, until they are lightly golden and fragrant.

Use the Right Cooking Oil

Choosing the right cooking oil for Annabel's homemade granola recipe is important to achieve the desired texture and flavor. Look for a neutral-tasting oil, such as canola or safflower oil, as they won't add any unwanted flavors to the granola.

Stir the Granola Frequently

To ensure that Annabel's homemade granola bakes evenly and doesn't burn, stir it frequently while it's in the oven. Use a spatula to flip the granola and mix it around every 10-15 minutes, making sure to break up any clumps that form.

Let the Granola Cool Completely

Allowing Annabel's homemade granola to cool completely before storing it is important to ensure that it stays crunchy and doesn't become chewy or sticky. Once the granola is out of the oven, let it cool completely before breaking it up and transferring it to an airtight container.

Store in an Airtight Container

Proper storage is important to keep Annabel's homemade granola fresh and crunchy. Transfer the cooled granola to an airtight container and keep it in a cool, dry place to prevent it from becoming stale. Homemade granola will keep for up to two weeks at room temperature, or up to a month in the freezer.

Conclusion

Making Annabel's homemade granola recipe is a great way to enjoy a healthy and delicious snack that is packed with nutrients and energy. By following these valuable tips, you can create granola that is even more delicious and satisfying. Choose the right ingredients, toast the oats and nuts, use the right cooking oil, stir frequently, let it cool completely, and store in an airtight container for the best results.
