Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     main-dish

Time 1h25m

Yield 6 servings

Number Of Ingredients 12

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

This classic meatloaf recipe has been passed down through generations, and it never fails to delight with its flavorful spices and tender texture. In this article, we will share some valuable tips that will help you make the best angels Spanish meatloaf recipe.

Tip #1: Use high-quality ingredients

The key to making a delicious angels Spanish meatloaf recipe is to use high-quality ingredients. You should start with fresh, high-quality meat such as beef, veal, or pork. Make sure to choose a meat that has a good ratio of meat to fat. The fat content will help keep the meatloaf moist and tender. The vegetables should also be fresh and of good quality. Use fresh garlic, onion, and bell pepper to add flavor and texture to the meatloaf.

Tip #2: Mix the ingredients gently

When making angels Spanish meatloaf, it is important to mix the ingredients gently. Over-mixing the meatloaf ingredients can result in a tough and dry meatloaf. Mix the meat, spices, vegetables, and breadcrumbs just enough to combine the ingredients. Do not overwork the mixture or you will risk breaking down the meat and compromising its texture.

Tip #3: Add Spanish spices and flavorings

The Spanish spices and flavorings used in angels Spanish meatloaf are what give this dish its unique and delicious taste. To get the perfect balance of flavors, use a combination of spices such as cumin, smoked paprika, chili powder, and oregano. Don't be afraid to experiment with different spices to create your perfect blend. You can also add Spanish chorizo to the mix, which will give the meatloaf a rich, smoky flavor.

Tip #4: Cook the meatloaf at the right temperature

Cooking the meatloaf at the right temperature is crucial to ensure that it cooks evenly and stays moist. It is recommended that you cook the meatloaf at 375 degrees Fahrenheit for 1 hour and 20 minutes. This will result in a perfectly cooked meatloaf that is moist and tender on the inside and crispy on the outside.

Tip #5: Let the meatloaf rest before slicing

After cooking your angels Spanish meatloaf, it is important to let it rest for at least 10 minutes before slicing it. This will give the meat time to settle, which will make it easier to slice and more flavorful. If you cut into the meatloaf too soon, you risk losing those delicious juices and ending up with a dry, crumbly meatloaf.

Tip #6: Serve with a Spanish-inspired side dish

To complete your angels Spanish meatloaf meal, it is important to serve it with a Spanish-inspired side dish. You can serve it with Spanish rice, roasted vegetables, or a salad with Spanish-inspired dressing.
