This is a great way to "fry" that chicken without all of the splatter on top of the stove. A good recipe, and I think it is good cold too.

1/3 cup vegetable oil
1/3 cup butter
1 cup all-purpose flour
1 teaspoon salt
2 teaspoons black pepper
2 teaspoons paprika
1 teaspoon garlic salt
1 teaspoon dried marjoram
10 chicken pieces

Steps:

  • Place oil and butter in a shallow cooking pan and place in 375ºF oven to melt butter, set aside.
  • In a large paper sack, combine dry ingredients.
  • Roll the chicken pieces, 3 at a time, in butter and oil then drop into a sack and shake to cover.
  • Place on a plate until all pieces are coated.
  • Leave any excess butter and oil in pan.
  • Place chicken in the pan skin side down (or its just as good if you remove all the skin first).
  • Bake at 375ºF for 45 minutes.
  • Turn chicken pieces over and bake 5 to 10 minutes longer or until crust begins to bubble.

Another wonderful and delicious recipe from one of my Amish cookbooks (the Amish are really great cooks). Besides bone-in chicken pieces, you can also use boneless, skinless chicken breasts; I've also used these and they turned out great!

1/3 c vegetable oil
1/3 c butter
1 c all-purpose flour
1 tsp salt
2 tsp pepper
2 tsp paprika
1 tsp garlic salt
1 tsp dried marjoram (optional)
8 to 9 chicken pieces (legs, thighs, breasts)

Steps:

  • 1. Preheat oven to 375 F.
  • 2. Place the oil and butter in a shallow cooking pan (such as a jellyroll pan) and place in preheated oven until butter is melted; remove and set aside.
  • 3. In a large resealable plastic bag, combne the flour and seasonings.
  • 4. Roll the chicken pieces, 3 at a time, in the melted oil-butter mixture; drop them in the bag and shake to cover; place on a dish or wax paper.
  • 5. Place chicken in the pan, skin side down; bake in the preheated oven for 45 minutes.
  • 6. With a spatula, turn over and bake 5 to 10 minutes longer, or until the top crust begins to bubble; serve hot or cold (crust texture is better if it is not refrigerated before eating).

Steps:

  • Place oil and butter in a big jellyroll pan. Put in preheated 375 degree oven. Mix flour and seasonings in a big paper bag or mixing bowl. Remove pan with oil and butter in it as soon as the butter is completely melted. Roll chicken pieces in the butter mixture and then dredge in the flour mixture. Once all of the chicken pieces are coated, place them skin-down on the jellyroll pan. Bake at 375 degrees F. for 45-50 minutes. Turn chicken pieces over and bake for another 10 minutes, or until chicken is browned well, crispy and bubbly. Use pan drippings to make gravy for mashed potatoes, fries or biscuits. Serve chicken hot or cold. Perfect for a picnic!
