LEG OF LAMB WITH AMAZING GRAVY JAMIE OLIVER

LEG OF LAMB WITH AMAZING GRAVY JAMIE OLIVER image

Categories     Lamb     Roast

Number Of Ingredients 20

2.5-3kg leg of lamb
4 unpeeled red onions, halved
2 garlic bulbs, cloves separated and bashed
Herby butter
100g unsalted butter, softened
½ bunch of thyme, leaves picked
½ bunch of rosemary, leaves picked
Gravy
3 tbsp plain flour
A good glug of port
1 litre hot organic chicken stock
Celeriac mash
• 1 celeriac, cut into 3cm chunks
1kg potatoes, cut into 2cm cubes
A glug of extra virgin olive oil
1 whole nutmeg, for grating
Mint sauce
1 big bunch of fresh mint, leaves picked and chopped
2 tbsp red wine vinegar
1 tbsp soft brown sugar

Steps:

  • 1. Preheat the oven to 220C/gas 6. Using a sharp knife or a clean Stanley knife, score the lamb all over, ½cm apart and 3mm deep - this gives it the most amazing, gnarly, crispy surface and a blushing centre. 2. Make the herby butter by putting the butter, thyme and rosemary into a blender, season well, then whizz to combine. Pop it into a bowl and set aside. 3. Arrange the red onions and garlic cloves in a large roasting tray. Smear the herby butter all over the lamb, then pop the meat on top of the veg. Roast in the oven for 10 minutes for every 450g, plus 20 minutes at the end, for blushing meat. 4. Meanwhile, boil the celeriac and potatoes in a pan of salted water for 15-20 minutes, or until soft. Drain, allow to steam dry, then mash with a good glug of extra virgin olive oil (or butter if you prefer) and season well with a little grated nutmeg and some salt and pepper. 5. When the lamb is cooked, allow it to rest for at least 10 minutes. While it's doing so, make the gravy. Set aside half a red onion to make the mint sauce, then squash the rest of the onions into the tray. Stir in the flour, a glug of port and the stock, and place over a high heat to allow the gravy to reduce, stirring continuously. Then pass through a sieve and keep hot. 6. Prepare the mint sauce by popping the reserved onion half out of its skin and finely chopping it with the mint, then mix them together in a bowl with the vinegar and sugar. 1 pound ground maple-flavored sausage
2 tablespoons butter
1 8-ounce block cream cheese, cubed
1/2 to 1 cup milk
Salt to taste

Time 2h15m

Number Of Ingredients 19

6 bone-in pork chops
1 c flour
1/4 tsp kosher salt
1/4 tsp pepper
12 oz egg noodles-cooked according to pkg. directions
WACKY SAUCE INGREDIENTS:
5 Tbsp ketchup
5 Tbsp grape jelly
3 Tbsp lite soy sauce
3 Tbsp yellow mustard
2 Tbsp worcestershire sauce
3 large cloves garlic-crushed
1/4 tsp oregano
1/4 tsp dried thyme
1/4 tsp pepper
1/2 c water
1/2 c dry red wine-not cooking wine
3 Tbsp olive oil, extra virgin
3 Tbsp butter

Steps:

  • 1. Place the flour, 1/4 tsp. kosher salt and 1/4 tsp. pepper into a freezer bag. Shake well to combine. Set aside.
  • 2. Sprinkle both sides of each pork chop with some salt and pepper. Set aside.
  • 3. In a medium size bowl combine the ketchup, grape jelly, lite soy sauce, worcestershire sauce, garlic, oregano, thyme, pepper and water. Mix til well blended. Don't worry if the jelly is lumpy. That will melt during cooking. Set aside.
  • 4. Place pork chops in the freezer bag with the seasoned flour. Coat the pork chops well with the flour mixture.
  • 5. Heat a very large skillet on med/high. Add 1/2 the olive oil and 1/2 the butter. When hot add 3 pork chops. Do not move them in the pan for about 5 mintues. This will give them a good sear. Then turn them and cook another 3 minutes.
  • 6. Remove pork chops and place in a large casserole dish.
  • 7. Repeat the frying process with the last three pork chops. And also place them in the casserole dish with the other pork chops.
  • 8. Lower the heat to med/low and deglaze the skillet with the wine. Then add all the sauce mixture to the skillet, stirring well for about 3 minutes til jelly melts and the sauce is heated through.
  • 9. Pour this mixture over the pork chops and bake covered at 350 degrees for 1 1/2 hours.
  • 10. Serve over cooked egg noodles.

This recipe is another Mollie Katzen master piece. The quality of ingredients is very important here so use the absolute best you can find for the broth. I use Better Than Bouillon Chicken flavor rather than a can of broth so I don't waste anything. I love using this gravy on everything.

The gravy is prepared by roasting garlic along with some onion and then adding it to the chicken broth or vegetable broth. The result is a smooth and creamy gravy that is perfect for a thanksgiving or holiday meal.

The recipe usually includes sautéing mushrooms with garlic and onions until they are soft and then adding some flour and seasoning. The result is a meaty and flavorful gravy.

Gravy is a classic sauce that can enhance the flavor of any dish. From roasted meats to mashed potatoes, gravy can bring a lot of depth and richness to your meal. However, making amazing gravy can be a bit tricky, especially for a beginner. In this article, we will share some valuable tips on how to make amazing gravy recipes that will elevate your dishes.

1. Use the Right Pan

The first tip to making amazing gravy is to use the right pan. A heavy-bottomed saucepan is ideal for making gravy. A non-stick pan is not recommended as it does not allow the fond (the browned bits of food stuck to the pan) to form. Fond is crucial for adding flavor and color to the gravy. A stainless steel or a cast-iron pan will be perfect for making gravy.

2. Don't Rush the Cooking Process

Gravy requires patience and attention to detail. It is essential to cook the flour and butter mixture for at least five minutes, stirring continuously, to cook out the raw taste of the flour. Rushing this process will result in a raw flour taste in your gravy. Ensure you are combining the flour and butter to form a smooth paste to avoid lumps in the gravy.

3. Use Good Quality Broth

The base of the gravy is the broth or stock. Using homemade stock is always the best choice, as it guarantees full flavor control. However, if you are using store-bought broth, be sure to use a good quality one that's low in sodium. High sodium broth can be overpowering and affect the taste of the gravy.

4. Add Herbs and Spices

To add more depth to your gravy, adding herbs and spices is essential. The type of herbs and spices you use depends entirely on your preference and the dish you are pairing the gravy with. Some classic herbs and spices to add to your gravy include thyme, rosemary, parsley, and bay leaves.

5. Adjust the Consistency

The consistency of the gravy can make or break it. If it's too thin, it will not coat the food well, and if it's too thick, it will be too heavy. The ideal consistency for gravy is smooth and creamy, but still pourable. If your gravy is too thick, add more broth or water. If it's too thin, simmer it for a few more minutes to reduce it.

6. Reduce the Fat Content

Gravy is traditionally made with a lot of butter, which means it's high in fat. However, you can reduce the fat content by using low-fat milk or vegetable broth instead of butter. You can also remove the fat from the pan drippings before making the gravy. Use a fat separator, a spoon or let it chill in the fridge, and the fat will solidify on top and can be easily removed.

7. Don't Overdo it with the Salt

The last tip to making amazing gravy is to be careful with the salt. The broth or stock already contains some salt, so it's essential to taste the gravy before adding more. It's better to add a little bit of salt at a time and keep tasting until you reach the desired flavor.

Conclusion

Gravy can be a delicious addition to any meal, but making amazing gravy requires some attention to detail. Remember to use a heavy-bottomed pan, don't rush the cooking process, use good quality broth, add herbs and spices, adjust the consistency, reduce the fat content and be careful with the salt. Follow these tips, and you'll be sure to make amazing gravy recipes every time.
