GRAPE NUTS & BRAN MUFFINS
I adapted this recipe from the kraft website. I needed a high fiber, low fat muffin and this does the trick! Delicious. You'd never believe there were Grape Nuts in them!

Steps:
- Preheat oven to 400F and lightly spray muffin pans with cooking spray or line with cupcake papers.
- In a large bowl, combine first four ingredients.
- In another bowl, pour in milk and cereal and let set 3 minutes.
- Stir in the egg, applesauce, sugar and margarine.
- Add to flour mixture and stir in the cereal of your choice.
- Spoon batter into prepared muffin cups.
- Bake 20 minutes or until golden and done.

Steps:
- Preheat oven to 400 degrees.
- In small bowl, combine oil, egg, and milk; set aside.
- Cook the bacon, cool, crumble, set aside.
- In large bowl, combine flour, sugar and baking powder. Make a well in the center. Add egg mixture all at once to flour mixture, stirring just until moistened.
- Batter should be a little lumpy. Fold in bacon, cheese and cereal.
- Fill 2/3 full into greased muffin cups.
- Bake for 15-20 minutes or until golden brown. Makes 12 regular muffins.
- Serve warm.

I love the flavor of Grape Nut Flakes and I have found a few of my favorite recipes with this cereal off of the Kraft website. I forget about the low fat cooking when these come straight out of the oven -the ole butter gets smeared on! =) These are also perfect for those folks looking for low sugar muffins.

- Stir together the first 5 ingredients.
- Stir beaten egg into milk then add applesauce and stir well.
- Mix wet ingredients into dry stirring well.

- 1. Heat oven to 400^. Spray 12-16 regular size muffin wells--(cupcake pan);with no stick spray..set aside. In a medium bowl add the cereal and milk,mix slightly-then set aside.
- 2. In a large bowl combine the flour, baking powder,baking soda,cinnamon, brown sugar and salt.Mix with large spatula to combine and break up any sugar lumps. Set aside.
- 3. To the cereal /cream bowl add the egg and beat with a spoon. Stir in the peach butter,vanilla, melted butter and nuts..stir to combine well. Stir this mixture into the flour mixture and fold until flour is mixed in, only until moistened.
- 4. Spoon batter evenly into the prepared muffin cups, fill each cup to the top. Bake 22-25 minutes or until wooden toothpick inserted in centers comes out clean. Cool in pan 2 minutes. Remove to wire rack to cool.

- Chop apricots. In a bowl, stir together apricots and orange juice. Allow to soak, stirring occasionally for at least 10 minutes before using.
