2 pounds skinless, boneless chicken breast halves
1 cup barbeque sauce
2 tablespoons butter, divided
1 large onion, diced
2 cloves garlic, minced
1 large roasted red pepper, chopped
1 (6 ounce) can tomato paste
3 tablespoons chili powder
1 tablespoon ancho chile powder
1 tablespoon ground cumin
1 teaspoon ground ginger
1 tablespoon vanilla extract
½ teaspoon white sugar
1 (20 ounce) can pineapple chunks
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can black beans, drained
1 (28 ounce) can chopped tomatoes, drained
1 (24 ounce) jar chipotle salsa
salt and pepper to taste

Steps:

  • Place the chicken breasts and barbecue sauce in a gallon-sized zip top bag and allow to marinate for 30 minutes in the refrigerator.
  • Melt 1 tablespoon of butter in a large skillet placed over high heat, and add the chicken. Cook the chicken until it is browned and almost cooked through, about 5 minutes per side. Remove chicken from skillet, chop into 1 inch pieces, and place in the crock of a slow cooker.
  • Heat the remaining 1 tablespoon of butter in the skillet over medium-high heat, add the diced onion, garlic, and roasted red pepper, and cook and stir until the onion is softened, about 5 minutes. Stir in the tomato paste, chili powder, ancho chile powder, ground cumin, ground ginger, vanilla, and sugar. Cook, stirring, until blended, about 2 minutes. Transfer the mixture to the slow cooker.
  • Drain the canned pineapple and reserve the fruit. Stir the pineapple juice, kidney beans, black beans, tomatoes, and chipotle salsa into the ingredients in the slow cooker and set the heat to High. Allow the chili to cook on High until it begins to bubble, about 20 minutes. Turn the slow cooker to Low and cook for 1 additional hour.
  • Stir the reserved pineapple into the chili and continue to cook until the pineapple is warm, about 15 minutes. Salt and pepper the chili to taste and serve piping hot.

3 1/2 ounces dark chocolate bars, chopped or broken in small pieces
1 tablespoon butter
1/4 cup water, divided (2 tbsp for chocolate, 2 tbsp for egg mixture)
1 tablespoon white sugar
2 large egg yolks
1/8 teaspoon ground chipotle chile pepper
very tiny pinch salt
1/2 cup heavy whipping cream (as cold as possible)

Steps:

  • Melt chocolate, butter and 2tbsp water in a double-boiler. (I actually did this in a metal bowl over lightly simmering pan of water). Make sure the water isn't boiling hard - chocolate melts remarkably quickly and you don't want to rush this process or you'll lose the shiny texture. While melting it, continuously stir the chocolate.
  • Again, in a double-boiler, whisk the egg yolks and sugar. The eggs should get cooked just a tad. 2-3 minutes, maybe. Again, don't let the water get too hot. Make sure you don't scramble the eggs.
  • Add the egg mixture to the chocolate mixture and allow to cool slightly below room temperature (You can achieve this by setting it on top of a bowl of ice for a few minutes).
  • Whip the heavy cream so that you get soft peaks. Basically, you want the peaks to stay, but not too sharply (otherwise the texture isn't as "sexy").
  • Add ground chipotle and salt to the chocolate/egg mixture and fold in the whipped cream.
  • Fill into ramekins or similar container.
  • Chill overnight or at least 3-4 hours.

The spices are more guestimates, since I never measure - cook to your own taste.

2 1/4 lbs ground chuck
5 slices bacon, crumbled once cooked
1 tablespoon olive oil
1 green bell pepper, small dice
1 yellow bell pepper, small dice

5 garlic cloves, crushed
3 tablespoons chili powder
1 1/4 teaspoons dried chipotle powder
2 tablespoons ground cumin
1 teaspoon ground cinnamon
1 bay leaf
2 (28 ounce) bottles beer, Amber Bock
1 (28 ounce) can stewed tomatoes, chopped
1 (6 ounce) can tomato paste
2 teaspoons dark brown sugar
1 lime, juice of
1 (16 ounce) can red kidney beans
1 (16 ounce) can pinto beans
1 cup fresh cilantro, chopped
salt & pepper
1 cup cheddar cheese, shredded, for garnish
1 cup green onion, chopped, for garnish
1/2 cup fresh cilantro, chopped, for garnish

Steps:

  • Brown ground beef in a large saute pan, until cooked through. Drain well and set aside.
  • Wipe pan dry and brown bacon. Remove bacon, set aside, and drain out all but 1 tablespoon of bacon grease.
  • Add 1 tablespoon olive oil to pan. Saute onions, peppers and garlic until soft (about 10 min).
  • Heat a large pot over medium heat. Add onions, peppers, garlic, meat and spices. Stir to combine, cook for about 3 minutes.
  • Add bay leaf, tomatoes with liquid, tomato paste, beer, lime juice, and brown sugar, and crumbled bacon. Allow to cook until foam subsides, while stirring.
  • Cover pot and lower heat to a simmer. Simmer covered for 1 hour, stirring occasionally, until thickened slightly.
  • Drain and rinse beans. Add beans and 1 cup cilantro to pot. Check and adjust seasoning, if needed, with salt and pepper. Cook an additional 45 minutes to an hour, until thickened.
  • **If not thickened enough, a mixture of cornstarch and water can be added, increasing heat and stirring constantly until thickened.
  • Remove bay leaf, and serve with desired garnishes.

A very simple and tasty chili for the novice cook with patience and time. Just remember that taste is what really matters. Seasoning is a matter of personal preference so I never say how much you should use of dry spices. This is a recipe where you should taste it as you cook it.

1 white onion, chopped fine
1/2-1 whole fresh garlic clove
1 (24 ounce) can whole stewed tomatoes
1 (12 ounce) can chopped tomatoes
1 (12 ounce) can great northern beans (undrained)
1 (12 ounce) can black beans (undrained)
1 (12 ounce) can dark red kidney beans, drained
1 (12 ounce) can light red kidney beans, drained
1 (12 ounce) can Mexican chili beans (undrained)
1 (12 ounce) can whole kernel corn
1 lb ground beef (optional)
1 (1 1/4 ounce) packet taco seasoning
2 tablespoons anchor bay buffalo wing sauce
1 tablespoon lemon juice
butter
garlic salt
chili powder
crushed red pepper flakes
cayenne

Steps:

  • Chop onion and crush and chop garlic and saute in butter until tender, browning and the smell is overwhelmingly garlicy, turn heat to low and let cool while you do step 2.
  • If you use meat cook down the beef in a separate pan and when its browned and crumbly add the taco seasoning as directed by the packet. Add to the chili along with beans.
  • Drain the appropriate items and add all beans, both drained and undrained along with the corn and the chopped tomatoes to the pot.
  • Add large can of whole tomatoes. Crush with your hands or cut into quarters with paring knife. I generally dump the tomatoes on top and then slice them up over the pot, just dropping them back. This is very messy (and fun) and you'll want to wear an apron. Whole Stewed Tomatoes never fail to squirt when you crush or cut them.
  • Stir all ingredients and turn heat back up to begin cooking.
  • Add seasoning while stirring and taste testing. I generally add the wing sauce and the lemon juice first. Chili powder makes the chili a nice dark red and tends to be hot in the back of the mouth for a nice kick after the flavor. I also use season pepper, and pepper flakes. Basically you season it with what you like until it tastes good to you. It will always be different. Note: You can use the taco seasoning directly to the beans as opposed to just using it on the beef.
  • Simmer on medium stirring occasionally. If it's too soupy you can add 1/2 cup of white rice which will also make your chili even more filling.
  • Eat some and let cool on the stove top. I find letting it sit sets the flavor before you put it away.
  • Note for Vegetarians: For Vegetarian omit the ground meat. Also not Apian Vegetarian due to honey in the Anchor bay Buffalo wing sauce.

2 c dry pinto beans or red beans
2 dried ancho chili peppers
1 Tbsp salt
1 lb maple smoked thick cut bacon
1 lb ground venison
1/3 c organic corn meal
2 Tbsp minced garlic
1 large onion, chopped
1 large green bell pepper, chopped
2 stick celery, chopped
1 can(s) organic fire roasted tomatoes
1 can(s) 7 ounce can diced green chilis
2 Tbsp chili powder
1 Tbsp cumin
1 tsp cayenne pepper
1 can(s) organic chicken broth
1/2 c white cooking wine

Steps:

  • 1. Soak dry beans and ancho chilis overnight (about 8 hrs) in cold salted water. Then cook over medium low heat about 3 hours, until the skins are loose. Remove ancho chilis from pot and set aside to cool.
  • 2. Chop raw bacon into one inch pieces, add to large hot cast iron skillet. Cook on medium heat and stir until bacon is almost done but not crisp.
  • 3. Meanwhile, slice ancho chilis in half length-wise. With clean bare hands remove stems and seeds, and anything that feels hard. Scrape the meat off the skins with a knife and return to the pot. Discard the stems, seeds, and skins. Chop onions, bell peppers, celery, and garlic.
  • 4. Break up ground venison, add to the bacon and fat raise temperature to med-high. Salt to taste. Chop and Stir as it cooks with a steel spatula.
  • 5. Add chopped onion, minced garlic, bell peppers, celery. Continue to chop and stir until the meat is browned and the onions are translucent.
  • 6. Sprinkle corn meal over the meat, add spices. At this point, transfer the meat mixture into the hot beans. Stir and add chicken broth, tomatoes and green chilis. Bring to a boil and then lower the heat.
  • 7. Simmer on low heat for at least an hour. The longer you let it simmer the better it will taste. When your nearly ready to eat add 1/2 cup white cooking wine and let cook another 5 minutes to cook off the alcohol.
  • 8. A Note about Gluten and Casein Free Ingredients: Since my family began this diet, we have discovered that you always have to read the labels on the foods you buy. This week when shopping I may buy something that is clearly gfcf and next week when I look for the same item I will notice they have changed the ingredient list adding dry milk, or maltodextrin, or some other questionable ingredient. I find that it's best to stick to unprocessed foods whenever possible- make it from scratch. My son is on the autism spectrum, its not the end of the world if he gets a little gluten or casein, while it may ruin his day, it isn't life threatening. I always watch him for symptoms and note the offending food. Please keep this in mind while selecting your ingredients for my GFCF recipes. Happy Careful Shopping! :)

1 teaspoon cumin
1 teaspoon italian seasoning
2 teaspoons garlic salt
1 teaspoon black pepper
3 garlic cloves, minced
1 large onion, diced
1 teaspoon honey
1 -2 tablespoon Tabasco sauce, to taste
1/2-1 cup salsa, to taste (I use medium)

Steps:

  • Brown meat with some of the onion and garlic salt. Drain grease. Add to crock pot.
  • Add all other ingredients to crock pot. Cook on low 6-8 hours.
  • Serves 6 hungry people.

Pat's notes: This is quite good. I added about 2 more cups of water, as it was appearing too thick when it was cooking.

Steps:

  • In Dutch oven, brown beef, breaking up with spoon. Add onions, garlic, celery, green pepper, chili powder, oregano, cumin, salt and red pepper flakes. Cook 5 mins. Stir in tomatoes with juice and stock. Bring to boil, reduce heat and summer, stirring occasionally, for 1 hour. Add beans and parsley, cover and simmer for 10 minutes more.
