1/4 teaspoon cinnamon
4 chicken breasts
1 egg white
1/2 cup dry breadcrumbs
1 1/2 teaspoons vegetable oil
1 tablespoon margarine
1 tablespoon flour
3/4 cup apple juice or 3/4 cup apple cider
1/4 cup chicken stock
1/4 teaspoon cinnamon
1 1/2 teaspoons brown sugar

Steps:

  • In skillet, melt margarine, saute apple, margarine, almonds, and cinnamon until apple is tender, around 5 minutes.
  • Flatten chicken breasts. Top with apple mixture, roll and secure with toothpicks.
  • Dip into egg white mixture, then into bread crumbs.

3/4 cup butter or 3/4 cup margarine, divided
1 large garlic clove, minced
1/4 cup fresh flat-leaf parsley, chopped
2 tablespoons fresh lemon juice
2/3 cup Fisher Chef's Naturals Slivered Almonds, finely ground
1/4 cup all-purpose flour
2 eggs, beaten
salt & fresh ground pepper, to taste

  • Preheat oven to 350°F Spread almonds in one layer on ungreased shallow baking pan. Bake for 10-15 minutes, stirring occasionally, until golden. Set aside.
