1/2 cup whole natural almonds (about 3 ounces), toasted
1 cup drained roasted red peppers from jar
2 teaspoons red wine vinegar
1 large garlic clove, peeled
2 tablespoons extra-virgin olive oil

Steps:

  • Very finely chop almonds in processor. Add roasted peppers, vinegar, and garlic; process to coarse puree. With machine running, pour olive oil through feed tube and process until puree thickens slightly. Season dip to taste with salt and pepper. Transfer to small bowl. (Dip can be made 1 day ahead. Cover and refrigerate. Bring to room temperature before serving.)

1 cup drained canned garbanzo beans (chickpeas; from 15 1/2-ounce can)
3/4 cup extra-virgin olive oil plus more for chips
1/4 cup slivered almonds
5 garlic cloves, peeled
1 1/2 tablespoons (or more) red wine vinegar
6 7-inch-diameter pita breads

Steps:

  • Cook beet in medium saucepan of boiling salted water until tender, about 12 minutes. Drain; place in processor. Add garbanzo beans, 3/4 cup oil, almonds, and garlic. Blend until smooth. Add 1 1/2 tablespoons red wine vinegar and blend well. Season to taste with salt, pepper, and additional vinegar, if desired. Transfer dip to medium bowl. Can be made 1 day ahead. Cover and chill. Bring to room temperature before serving.
  • Preheat oven to 400°F. Brush pita breads on both sides with oil; sprinkle lightly with salt and pepper. Cut each bread into 8 wedges. Arrange wedges on rimmed baking sheets. Bake until lightly brown and crisp, about 12 minutes. Cool chips on sheets.
  • Place dip in center of platter. Surround with chips and serve.

4 slices bacon, crisply cooked and crumbled
Assorted raw vegetables or breadsticks, if desired

Steps:

  • Heat cream cheese, cheese spread, milk and garlic in 2-quart saucepan over medium heat, stirring frequently, until cheese is melted and smooth. Stir in onions and 1/4 cup of the almonds.
  • Spoon into 1-quart slow cooker to keep warm if desired or into serving bowl. Sprinkle with bacon and remaining 1/4 cup almonds. Serve with vegetables. Dip will hold in slow cooker on Low heat setting up to 2 hours; stir occasionally. 32 servings (2 tablespoons dip each).

5 ounces (about 5 slices) firm homemade-style bread
1/2 cup whole blanched almonds, coarsely chopped
2 or 3 large garlic cloves, put through a garlic press (about 1 teaspoon garlic puree)
1 small (about 3 ounces) all-purpose potato, peeled, boiled until soft, and drained
3 tablespoons lemon juice
3 tablespoons white-wine vinegar
2 tablespoons extra-virgin olive oil
3/4 teaspoon salt
1/2 teaspoon sugar

Steps:

  • Trim the crusts from the bread and spread the slices out on a tray to dry for about 24 hours.
  • In the container of a food processor, place the almonds, garlic, and cooled potato. Process until smooth.
  • Mix the lemon juice, vinegar, olive oil, salt, and sugar in a small bowl and set aside. Fill a large bowl with cool water. Drop the dried bread into the water, 1 slice at a time. When it is soaked, squeeze about half the water from the bread between the palms of your hands. Add the bread to the ingredients in the processor, alternating with the lemon-juice mixture, and process until smooth. Since the skordalia has a tendency to stiffen and become pasty as it chills, the mixture should be quite loose at this point. Taste and adjust the seasoning. Scrape the mixture into a bowl. Cover and refrigerate for several hours to allow the flavors to mellow and blend. If the mixture seems too stiff, beat in a little water before serving.

  • In a 6-qt. stockpot, bring water, 1/2 cup oil, 1/2 cup sherry, salt, bay leaf and pepper flakes to a boil. Add cauliflower. Reduce heat; simmer, uncovered, until a knife easily inserts into center, 15-20 minutes, turning halfway through cooking. Remove with a slotted spoon; drain well on paper towels., Preheat oven to 450°. Place cauliflower on a greased wire rack in a 15x10x1-in. baking pan. 4 artichokes
Pinch saffron
1 tablespoon boiling water
1/4 cup sliced almonds
2 tablespoons olive oil
1 small onion, chopped
2 garlic cloves, finely chopped
1 cup nonfat plain yogurt
1/4 cup flat-leaf parsley leaves
1 1/2 tablespoons lemon juice
Salt and freshly ground black pepper

Steps:

  • Arrange the artichokes in a steamer basket set over at least 3 cups of water and steam, covered, until the leaves can be easily removed, about 1 hour. Let cool. About halfway through cooking check the water level and add more, if necessary.
  • In a small bowl, stir together saffron and the tablespoon of boiling water. Toast the almonds in a small dry skillet over medium-high heat until beginning to brown, about 2 minutes. Remove the almonds and add 1 tablespoon of the oil to the pan. Add onion and cook until beginning to brown, 3 to 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Transfer to a bowl and let cool. In a food processor, grind the almonds until finely chopped. Add the saffron mixture, onion mixture, yogurt and parsley and puree until smooth. Transfer to a bowl and stir in the lemon juice and remaining 1 tablespoon olive oil. Season, to taste, with salt and pepper. Serve with the artichokes.

1/4 tsp fine Celtic sea salt
freshly ground pepper to taste

Steps:

  • 1. Put the almonds into your food processor until rustically chopped. 2. Mix in the remaining ingredients until you get a nice thick consistency. You might to add a bit more water. I keep it pretty chunky and rough. 3. Add in more lime juice, ginger and seasoning to taste. I like mine with quite a bit of kick so I tend to be a bit more heavy handed with the ginger, lime juice and sea salt. 4. Slather on crackers, serve with veggies chips, or top raw tacos. YUM!
