I pinched this recipe from Odense Almond Paste and it came out delicious, so I am sharing it with you. I have been searching for an almond paste coffee cake recipe since I started cooking/baking (many years now). It's very close to an almond ring my mom bought from a neighborhood bakery, when I was very young.

Almond Danish coffee cake is a delicious baked good that is perfect for breakfast or brunch. Making this cake at home can be a time-consuming process, but the end result is a delicious treat that is worth the effort. Creating the perfect almond Danish coffee cake requires that certain tips are followed in order to ensure that the cake is well-baked and has the right texture, flavor, and aroma.

Tip 1: Get the Right Ingredients

The first step in making the perfect almond Danish coffee cake is to gather all the necessary ingredients. The ingredients include all-purpose flour, butter, sugar, almond paste, yeast, milk, eggs, salt, and sliced almonds. All these ingredients are essential to making the cake, so it is important to ensure that they are all of good quality. One of the key ingredients to getting the most flavor out of this cake is almond paste. You can buy almond paste at most grocery stores or online. However, some people prefer to make their own almond paste for added freshness and flavor. To make your own almond paste, grind skinned almonds into a fine powder and combine it with powdered sugar, egg whites, and almond extract.

Tip 2: Plan the Process

Making almond Danish coffee cake is a time-consuming process that requires a lot of patience and planning. The dough needs to rise, and there are several steps involved in building the layers of the cake. Therefore, it is important to plan ahead by setting aside enough time and scheduling the baking process accordingly. You should also ensure that you have all the necessary equipment and space to create this cake. You will need a stand mixer or hand mixer, a large mixing bowl, a rolling pin, and a baking sheet. Additionally, you should have enough counter space to roll out the dough and assemble the layers.

Tip 3: Follow the Recipe's Instructions Carefully

To get the best results, it is important to follow the recipe's instructions carefully. This means measuring the ingredients accurately and following the recipe's directions step by step. Additionally, be mindful of the ingredients' temperature requirements when adding them to the recipe. For example, the yeast needs to be dissolved in warm water before adding to the dough. If the water is too hot, the yeast will die, and the dough will not rise. Similarly, if the butter is too cold, it will be difficult to work with when creating the dough layers.

Tip 4: Prepare the Dough and Filling Ahead of Time

To save time, you can prepare the dough and filling ahead of time. Both the dough and the almond filling can be made up to two days in advance and stored in the refrigerator until ready to use. Preparing these elements ahead of time will also give them time to develop more flavor before baking. Additionally, it will allow you to focus on the assembly process rather than having to worry about preparing the dough and filling at the same time.

Tip 5: Use a Pastry Cutter or Pizza Cutter to Cut the Dough

When working with dough layers, it can be challenging to cut them evenly without squishing them down. To get clean and even cuts, use a pastry cutter or pizza cutter instead of a knife. This will allow you to cut through the dough without compressing it, ensuring that the cake layers are the right thickness.

Tip 6: Chill the Cake Before Baking

Before baking the almond Danish coffee cake, it is important to chill it for at least an hour. Chilling the cake will help it retain its shape during baking and prevent the layers from melting together. Additionally, chilling the cake will allow the yeast to continue working, which will result in a more flavorful and fluffy cake.

Tip 7: Brush the Cake with Egg Wash

To give the cake a beautiful golden color and shine, brush it with an egg wash before baking. An egg wash is simply a mixture of beaten egg and water or milk. Gently brush the egg wash over the cake using a pastry brush. Be careful not to apply too much pressure, as this can cause the layers to compress.

Conclusion

With these tips, you can make a delicious and perfectly baked almond Danish coffee cake. The key is to take your time and follow the recipe's instructions carefully. Plan ahead, use quality ingredients, and don't be intimidated by the process. With a little practice, you'll be able to create a beautiful and tasty cake that your family and friends will love.
