Time 1h10m

Yield 4

Number Of Ingredients 17

2 tablespoons extra-virgin olive oil
½ cup diced red onion
½ cup diced red bell pepper
½ cup diced fresh mushrooms
1 teaspoon minced garlic
½ cup chopped fresh spinach
½ teaspoon dried Italian seasoning
1 pinch salt and ground black pepper to taste
½ cup crumbled feta cheese
4 boneless, skinless chicken breasts
4 slices prosciutto
12 toothpicks
¾ cup grated Parmesan cheese
¾ cup fine dry bread crumbs
1 teaspoon dried parsley
1 egg, beaten
1 serving avocado oil cooking spray

Steps:

  • Heat olive oil in a small skillet over medium heat until hot. Add onion; cook and stir until softened, about 3 minutes. Add red bell pepper and mushrooms, and cook, stirring occasionally, for an additional 3 minutes. Remove skillet from heat and stir in chopped spinach and garlic. Continue stirring until the spinach is slightly wilted. Season with Italian seasoning, salt, and pepper and allow to cool for 10 minutes.
  • Stir in feta cheese crumbles, breaking up any large pieces.
  • Pat chicken pieces dry and place on a secure cutting board. Cut a 'pocket' into each breast by inserting a knife in the thickest part of the breast and slicing parallel to the cutting board, leaving about 1 inch at each tip. Be careful not cut all the way through the thinnest edge of the breast.
  • Preheat the air fryer to 370 degrees F (190 degrees C) if preheating is recommended by the manufacturer.
  • Separate prosciutto slices and place on a clean prep surface. Place 2 tablespoons of vegetable-feta mixture on top and roll around the filling, creating an oblong bundle. Tuck 1 prosciutto-wrapped bundle into each sliced chicken breast, and close the opening with toothpicks.
  • Combine Parmesan cheese, breadcrumbs, parsley, salt, and pepper on a plate. Dip each stuffed chicken breast into beaten egg, then dredge in breadcrumb mixture. Spray with avocado oil spray.
  • Transfer to the air fryer basket and cook until browned, about 15 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Air fryers have become popular in recent years, thanks to their ability to cook food faster and more healthily than traditional frying methods. One of the most popular recipes to make in an air fryer is chicken pesto stuffed peppers. This dish is not only delicious but also packed with protein and nutrients. If you want to make the perfect air fryer chicken pesto stuffed peppers, here are some valuable tips to follow.

Tip 1: Choose the Right Peppers

When making stuffed peppers, it's important to choose the right kind of peppers. The best peppers for stuffing are those that are firm, have a bright color, and are about the same size. Bell peppers are a popular choice, but you can also use poblanos or sweet peppers. If you prefer a milder flavor, remove the seeds and membranes of the peppers before stuffing them.

Tip 2: Make the Filling Ahead of Time

To save time, you can make the filling for the stuffed peppers ahead of time. This is especially helpful if you're planning to serve the dish for a dinner party or gathering. The filling can be made up to 24 hours in advance and stored in an airtight container in the refrigerator.

Tip 3: Use Ground or Shredded Chicken

When it comes to the chicken in the filling, you can use either ground chicken or shredded chicken. Ground chicken cooks faster, but shredded chicken will give the filling a more tender texture. If you're using ground chicken, make sure to cook it before adding it to the filling. If using shredded chicken, you can cook it ahead of time or use pre-cooked chicken.

Tip 4: Add Vegetables to the Filling

To add more flavor and nutrients to the filling, you can add vegetables such as onions, garlic, mushrooms, or spinach. These will not only make the filling more delicious but also add more texture to the dish. Sautee the vegetables before adding them to the filling to enhance their flavor.

Tip 5: Use Fresh Pesto

To make the filling for the stuffed peppers, you will need pesto sauce. While you can use store-bought pesto, using fresh homemade pesto will take the dish to the next level. To make homemade pesto, you will need fresh basil, garlic, pine nuts, olive oil, and Parmesan cheese.

Tip 6: Preheat the Air Fryer

Before cooking the stuffed peppers in the air fryer, it's important to preheat it to the desired temperature. This will ensure that the peppers cook evenly and the filling is cooked through. Preheat the air fryer for at least 5 minutes before adding the stuffed peppers.

Tip 7: Spray the Peppers with Cooking Spray

To prevent the peppers from sticking to the air fryer basket, spray them with cooking spray before placing them in the basket. This will also give the peppers a crispy texture. You can use olive oil or vegetable oil cooking spray.

Tip 8: Cook the Peppers in Batches

If you're making a large batch of stuffed peppers, it's best to cook them in batches rather than overcrowding the air fryer basket. This will ensure that each pepper cooks evenly and gets crispy. If you overcrowd the basket, the peppers will steam rather than fry.

Tip 9: Check the Peppers Frequently

While cooking the stuffed peppers in the air fryer, it's important to check them frequently to ensure that they don't burn. Air fryers cook faster than traditional ovens, so keep an eye on the peppers and adjust the cooking time as needed.

Tip 10: Let the Peppers Rest Before Serving

After cooking the stuffed peppers, let them rest for a few minutes before serving. This will allow the filling to set and make it easier to serve. You can garnish the peppers with fresh basil or grated Parmesan cheese before serving.
Conclusion
Making air fryer chicken pesto stuffed peppers is easy and delicious. By following these valuable tips, you can make the perfect stuffed peppers every time. Remember to choose the right peppers, make the filling ahead of time, use fresh pesto, and cook the peppers in batches. With these tips, you'll have a healthy and flavorful dish that everyone will love.
