BEEF ROLL-UPS
A recipe from one of my mom's friends...it's quick and easy, and the kids seem to like them. Since I originally started making these, there are several new varieties of the onion soup mix...I've tried it also with Beefy Onion, Golden Onion/mushroom, and it's good with either of those.

The Right Cut of Beef
For this recipe, it is important to use the right cut of beef. A tender cut of beef such as sirloin or flank steak works best because it is easy to roll up and won’t become tough after cooking. Make sure to trim any excess fat and slice the beef thinly, about 1/4 inch thick, against the grain.
Marinating the Beef
To enhance the flavor of the beef, it is essential to marinate it. A simple marinade of olive oil, garlic, and lemon juice is perfect for this recipe. Marinate the beef for at least 30 minutes or up to 24 hours in the refrigerator. This will allow the flavors to penetrate the meat, making it even more delicious.
Preparing the Vegetables
The vegetables used in this recipe should be thinly sliced and of equal size. Bell peppers, onions, and zucchini are commonly used in aioli beef roll ups. You can also add other vegetables such as mushrooms or carrots for additional flavor and nutrition. Making the Aioli

You can also add other flavorful ingredients such as herbs or spices to enhance the taste. When making aioli, it is important to slowly pour the olive oil into the blender while it is running to emulsify the ingredients properly.
Rolling Up the Beef
To make the roll ups, place a slice of marinated beef on a cutting board and add a spoonful of the sautéed vegetables on top. Spread a thin layer of aioli on the beef and roll it up starting from one end. Secure the roll up with toothpicks or kitchen twine.
