SWEET POTATO PIE

Sweet Potato Pie image

Custardy and classic, this easy pie shows off the earthy richness of sweet potatoes with a little butter and a blend of warming spices. Be sure to start with good-looking spuds-firm and speckle-free. As they bake, they'll caramelize a bit. Because sweet potatoes vary in sweetness, I have you taste the filling before beating in the eggs to see if you want a touch more sugar.

Time 5h

Yield one 9-inch pie

Number Of Ingredients 15

2 pounds sweet potatoes
1 disk Carla's Classic Pie Dough, fitted into a deep-dish pie plate and frozen, recipe follows
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon salt
5 tablespoons unsalted butter, softened
1/2 cup packed light brown sugar, plus more if needed
1 cup evaporated milk
2 large eggs
1 tablespoon sugar
1/2 teaspoon table salt
2 1/4 cups all-purpose flour, plus more for rolling
1 cup (8 ounces) cold unsalted butter, cut into 1/2-inch cubes

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the sweet potatoes on a foil-lined half-sheet pan. Bake, turning once, until very tender, 1 1/2 to 2 hours. When cool enough to handle, take the sweet potatoes out of their jackets and scrape the flesh into a 1-quart measuring cup. You should have 2 1/2 cups packed sweet potato.
  • Raise the oven temperature to 425 degrees F.
  • Line the frozen dough with foil and fill with pie weights. Bake until dry and set, about 25 minutes. Remove the foil with the weights and bake the dough until golden brown, about 5 minutes longer. Let cool completely, then place on a half-sheet pan.
  • Transfer the sweet potato to a large bowl and add the cinnamon, ginger, allspice, nutmeg, salt, butter, brown sugar, and the evaporated milk. Beat with a heavy whisk until smooth. Taste and add more brown sugar if you'd like. The amount will depend on the sweetness of your spuds. Add the eggs and whisk until fully incorporated. Pour into the pie crust and spread evenly.
  • Bake for 15 minutes, then reduce the oven temperature to 350 degrees F. Bake until the top is golden brown and the filling has puffed and set, about 40 minutes. If the crust browns too quickly, cover it with foil and continue baking. Let cool completely on a wire rack.
  • Dissolve the sugar and salt in 1/3 cup water and chill until cold.
  • Pulse the flour and butter in a stand mixer until the mixture looks like coarse meal with some pea-size pieces. Add the water all at once and mix until the dough almost forms a ball. Divide the dough in half and flatten into two disks.
  • Wrap each disk tightly in plastic wrap and chill until firm, at least 30 minutes or up to 3 days. You can freeze the dough for up to 3 months. Thaw overnight in the refrigerator before rolling.

Sweet potato pie is a classic dessert that has been a mainstay on American tables for generations. It's a dish that is loved by many for its rich and creamy texture, and its irresistible aroma. The best part about making sweet potato pie is that it's so versatile, you can add any ingredient you like to create a unique and addictive dessert. In this article, we will discuss valuable tips for making addictive sweet potato pie recipes that will have your family and friends coming back for more. Tip #1: Choose the Right Type of Sweet Potato The type of sweet potato you use can greatly affect the taste and texture of your pie. Some sweet potatoes are creamier and sweeter than others, while some are denser and have a more earthy flavor. If you want to make a sweet potato pie that is rich and flavorful, you need to choose the right type of sweet potato. The two most common types of sweet potatoes are the orange-fleshed sweet potato and the white-fleshed sweet potato. The orange-fleshed sweet potato is sweeter and creamier than the white-fleshed sweet potato. This makes it the better choice for making a sweet potato pie that is rich and flavorful. Be sure to use fresh, high-quality sweet potatoes for the best flavor and texture in your pie. Tip #2: Add Spices One of the main reasons sweet potato pie is so addictive is its combination of sweet and spicy flavors. Adding spices such as cinnamon, nutmeg, ginger, and cloves to your sweet potato filling can elevate its flavor and make it even more addictive. These spices not only add depth to the flavor of the pie but also help to balance out the sweetness of the sweet potatoes. Be sure to experiment with varying amounts of spices to find the perfect balance for your palate. Tip #3: Use Your Creativity Sweet potato pie is a dish that is open to interpretation, and everyone has their own idea of what a perfect pie tastes like. To make your sweet potato pie recipe addictive, be creative and experiment with different flavors and ingredients. You can add a touch of bourbon, maple syrup, or honey to your pie filling to give it a unique flavor. You can also add toppings such as whipped cream, nuts, or caramel sauce to enhance the taste and texture of the pie. The key is to use your creativity and imagination to make a pie that is unique and addictive in its own way. Tip #4: Don't Be Afraid to Mess Up Baking a perfect sweet potato pie takes time and practice. Don't be afraid to mess up and experiment with different techniques until you find the perfect recipe. Trial and error is a crucial part of the baking process, and it's an essential step in creating an addictive sweet potato pie recipe. Be patient, and keep trying until you find a recipe that works for you. Tip #5: Pay Attention to the Crust The crust of a sweet potato pie is just as important as the filling. A crispy, flaky crust can make all the difference in the taste and texture of your pie. Be sure to use high-quality ingredients for the crust, such as butter, flour, and sugar, to ensure that it turns out perfectly. If you're short on time, you can use a premade crust, but if you have the time, making your own can add an extra layer of flavor to your pie. Tip #6: Maintain the Temperature Maintaining the temperature of your oven is crucial to the success of your sweet potato pie recipe. Baking your pie at the correct temperature ensures that it cooks evenly and turns out perfectly. Be sure to preheat your oven to the recommended temperature and use an oven thermometer to ensure that the temperature remains constant throughout the baking process. Tip #7: Let the Pie Cool Once your sweet potato pie is finished baking, it's essential to let it cool before serving. This allows the pie filling to set and gives the flavors time to meld together. If you cut the pie too soon, the filling may be runny, and the pie may fall apart. Be sure to let your pie cool for at least an hour before serving. You can even refrigerate it overnight to allow the flavors to intensify, making your pie even more addictive. Conclusion Creating an addictive sweet potato pie recipe is an art that requires patience, practice, and creativity. With these valuable tips, you can create a dessert that is not only delicious but also addictive. Remember to choose the right type of sweet potato, add spices, use your creativity, don't be afraid to mess up, pay attention to the crust, maintain the temperature, and let the pie cool.
